  • If you're looking for something sweet and savory, you should give pork belly burnt ends a shot.  The fat in the pork belly renders down significantly over the course of the cook to leave you with a bunch of meaty, smokey, sweet, juicy and tender morsels that are perfect to serve at any party or tailgate.

Recipe:
- Cut pork belly (skin removed) into one inch cubes
- Season generously with your favorite pork rub.  Make sure to get an even coating of rub on all sides. - Preheat your smoker to ~250F
- Place pork belly cubes on the smoker with the fat side down
- Spritz with diluted apple juice every 30 minutes to maintain moisture and tenderness
- Remove pork belly from the grill after ~2 hours
- Place cubes in a foil tray and add honey, brown sugar and BBQ sauce to taste. Mix to create an even coating. - Cover tray with foil and place back in the smoker for another hour
- Remove foil from the top of tray, mix burnt ends around and place the tray back in the smoker for 15 minutes to allow the burnt ends to glaze up
- Remove from smoker and allow the burnt ends to cool slightly before serving. .
