  • Semolina gnocchetti with Dungeness crab and lots of caviar.  @sorrelrestaurant 
Although a huge dollop of caviar and creme fraiche are great I think I like caviar best when it plays second fiddle. As a part of the sauce here it was fantastic.

2. Hard shaken vodka as a pairing. 
3. Miyagi oyster “Rockefeller”

5. Vaca Rosa tartlets. 
6. Raw fishes.

I got to be honest, this dish as a whole is amazing and fresh for the summer,just not 100% happy with the texture of the ice-cream. Flavour wise it is spot on. That's why I love being a chef,always room to improve.
