  • I've been a bit quiet this week. I'm currently trying to use up all of the meat and dairy products I still have in the fridge/freezer that my boyfriend won't eat. I have been eating plant based for the most part of the week with one or two meals having meat or dairy incorporated so I didn't want to post them. However this one was completely plant based! 🌱

Its bbq Jackfruit with broccoli🥦 and cauliflower with vegan cream cheese and tomato couscous with extra bbq sauce on top! 😋 
So easy and simple to make especially on a work night when I dont have time to stand around making everything from scratch!

I have so many new recipes I want to try. Vegan salted caramel cheesecake is top of the list!😍 I have such a sweet tooth and love making desserts so I'm glad I found a recipe that seems relatively easy to do.   • Ummm super awesome deliciousness at the Avocado Vegan Cafe today! We ordered the BLTA (the B was made from tempeh) and the meatball sub, who's cheese was from cashews.... We split them so we  could each try each sandwich, and they were amazing!

Also amazing were the black bean brownie and the vanilla cupcake, yummm!
.
But the true stars of the lunch were the fried plantains with guacamole, words cannot even begin to describe how delicious these are!

Big thank you to @travelsnacks_  Allison for wanting to try out a vegan restaurant!.

And if you live in the Atlanta area or are visiting you must get over to @avocado_vegan_cafe ! You will not regret it and on case your wondering the service is as  awesome as the food! .

  • I sure did bake a thannnng! 🍎🍏 Sebian Apple pie + berries ... yeah the resident baker is my daughter ... I’m the stoptop chef 🍳 but I was craving me some warm apple pie!!! Baking for me is usually a disaster bc it’s either undercooked or burnt crisp, no in between. Luckily it turned out this time 😰 
My daughter said The crust was too thick and the filling needed more “gooeyness” so she’s gonna help me get it riiiight next time 💚✅ Anyhow I love me some crust and I could eat it just plain no filling and be happy 🤣🤣 .

  • Low carb, high protein crispy peanut tofu bowl!!
This bowl is so easy to make and so delicious and healthy. The tofu is perfectly crispy and the flavor of this sauce is to die for! I could literally put it on anything! I used @traderjoes super firm tofu and it turned out perfectly 😋🌱 Ingredients: 
1. 1 package high protein tofu 
2. 2 heads of bok choy 🥬 
3. 15-20 string beans
4. 2 handfuls of cabbage 
5. 2 tablespoons peanut butter 
6. 1 tablespoon maple syrup (I actually used agave)
7. 1 teaspoon sriracha
8. 2 tablespoons non dairy milk of choice 
9. 1 tablespoon sesame oil
10. 2 teaspoons soy sauce
11. 1 teaspoon garlic powder 
12. Green onion for garnish 
Instructions!!
1. Cut tofu into cubes (I like Trader Joe’s tofu because you don’t have to press the tofu as long)
2. Add tofu to a skillet with sesame oil and on medium low heat. The secret to getting the tofu nice and crispy is to let it sit for 4-5 minutes UNTOUCHED. Let it do it’s thing and then flip the tofu and cook for another 4-5 minutes 
3. In a separate pan add some sesame oil, bok choy, string beans and cabbage. I added a little water to help soften up the veggies. Let it cook for 6-7 minutes and add the soy sauce and garlic powder. 
4. For the sauce, add the peanut butter, syrup, non dairy milk, and sriracha to a bowl and whisk until nice and smooth
5. Remove tofu and veggies from heat and add about 1/3 of the sauce to both the tofu and the veggies. The heat of the skillet will thin the sauce and coat everything nicely. 
6. Add veggies to a bowl and tofu on top and drizzle with more sauce and garnish with green onions and enjoy that shit! Yummmmmm

Oh dear oh dear.... Recipe by the way is very simple. 1 cup flour,

  • My husband used all the mushrooms I was planning on putting on my pizza so my mushroom and red pepper pizza turned into a red pepper pizza. Darn him! Anyone else love the cauliflower crusts from @traderjoes though?? The only downfall is that it's not very big so we have to make multiple pizzas for our family of 4!

  • ICYMI: Yesterday I tried a new dirty rice recipe using the #vegan shrimp, black pepper steak, and lobster from @verisoy ☺️☺️it was so yummy!! I would definitely wait to add the subs into the rice a little later because it cooks differently than regular meat, but overall I was really happy with the way that it turned out! I can’t wait to see what else I can do with these substitutes 🤩🌱

Caramelized Carrots ⠀
Makes apx. 26 pieces⠀
⠀
Ingredients:⠀
2 pounds carrots, peeled and sliced into 4-6 inch pieces ⠀
2 tablespoons  olive, grape seed or avocado oil ⠀
(2 tablespoons brown sugar) or NOT
1 teaspoon salt ⠀
1 teaspoon cinnamon⠀
Optional accessories:⠀
Freebie; orange or lemon zest, and fresh thyme to garnish ⠀
Decadent; chopped pecans and/or chopped raisins or dates ⠀
Directions:⠀
Place carrots into a steamer for about 10-12 minutes or until fork tender. ⠀
Meanwhile, preheat the oven to 400 degrees. ⠀
In a small bowl, mix together salt, brown sugar and cinnamon. Add the oil and turn into a paste. ⠀
Let the steamed carrots sit to cool, then place on a parchment- or tinfoil- lined baking sheet. ⠀
Using well washed or gloved hands, rub the brown paste all over the carrots. ⠀
Bake for 7 minutes. Garnish right before serving, and enjoy!⠀
