  • Hoje para o almoço: esparguete com molho de tomate caseiro com pimentos (que já publiquei aqui) ao qual juntei azeitonas e óregãos. Simples, rápido e sempre  muito apreciado pelo Vasco 😋🍅🍝

  • CHEESECAKE DE FRUTILLA|| PKU/ Vegano/ Sin gluten/ Aproteico 
Ingredientes:
• Galletas de cacao amargo Aproten
• Mantequilla (puede ser vegana)
• Queso Philadelphia @violife_foods • 1 taza de frutillas
• 30 gotitas de stevia

Comencé cubriendo un molde con alusa plast. Luego en un bowl incorpore las galletas y comencé a molerlas para agregarle la mantequilla. Cuando estén bien molidas y unidas a la mantequilla incorporar al molde (cubriendo toda la parte inferior del molde).
El Queso Philadelphia lo derretí en el microondas y le fui incorporando las frutillas más el endulzante. Con ayuda de un batidor eléctrico fui moliendo e integrando las frutillas en la pasta de queso.
Último paso verter la mezcla en el molde y llevar al freezer por 1 hora aprox.

  • Lanche fácil e rápido que pode ser adaptado ao gosto, fome e tolerância de cada um: base puré de maçã caseiro (pode ser um puré de fruta qualquer ou iogurte de coco), rodelas de morango e banana (fruta a gosto), cereais hipoproteicos da milupa e uma colher de chá de creme de speculoos (é opcional e pode ser substituído por uma colher de chá de mel, ou de "Nutella" ou compota...) só para compor 😋

  • This morning I made PKU-friendly French Toast 😋it was my first time ever having French toast, and it tasted delicious! It was so much fun to make and turned out perfectly! 😊The recipe is from CookForLove ❤️ According to the recipe one slice has approximately 31 mg of phe, but with the bread I used the French toast has a very little amount of phe. I am definitely making it again and would totally recommend it! Para todos salada de couve roxa, cenoura e rabanetes ralados com passas e couve flor frita, para mim uma fatia de quiche e para o Vasco 2 crepes de folha de arroz recheados e arroz hipo.

  • Н/б торт "Красный бархат"🍰🎂✌
За основу взят все тот же любимый бисквит на кипятке✌🤗 Яйцо переп. - 6 шт
заменит . яйца - 20 гр + 80 мл воды
сахар - 200 гр
ванильный сахар
мука н/ б - 170 гр
разрыхлитель - 2 ч . л
какао - 30 гр
кипяток( вода) -8 ст.л
растит. масло - 4 ст.л 
красный пищевой красттель( у меня гелевый)

Взбиваете яйцо с восст.яйцом минут 5, добавляем сахар + ваниль и еще взбиваем минут 7 до пышной пены. Добавляете муку, какао, разрыхлитель;аккуратно перемешивание лопаткой снизу вверх.Вливаете кипяток и масло.
Добавляем краситель.

Выпекаем при t - 160*  40-50 минут.Готовность проверяем сухой шпажкой.

  • O segredo para uma boa salada é sem dúvida o molho. O Vasco explica nas stories!
Molho basico para uma taça média de salada:
Misturar 2 colheres de sopa de azeite com 1 colher de sopa de vinagre de sidra, 1 colher de chá de flor de sal e 1 colher de chá de mostarda num frasco. Fechar o frasco, agitar bem e deitar sobre a salada envolvendo bem.
Sugestões para variar os sabores: juntar chalota picada e ervas de provence ou juntar 1 colher de chá de mel para um molho de mostarda e mel ou  usar vinagre balsâmico e ervas italianas.

  • Domingo é dia de bolo e hoje temos bolo de mandioca e coco, sem ovos, sem lacticínios e sem farinha. A receita original está no canal do YouTube da Mussinha, que tem receitas vegan fantásticas. Vamos ao bolo 🍰
Triture na liquificadora ou com a varinha cerca de 400g de mandioca ralada no ralo mais grosso, 100ml de óleo e 200ml de leite de coco. Coloque esta mistura numa tigela grande e junte 230g de açúcar, 100g de coco e 1 colher de sopa de fermento Royal. Misture e coloque numa forma untada e enfarinhada. Leve ao forno pré aquecido por cerca de 45m. Deixe arrefecer na forma e desenforme frio. Polvilhe com coco e sirva 🥥

  • Had the most amazing experience at @1251_twelve_fifty_one by James Cochran last night! My friend and I have been dying to go and I emailed them to see if they would be able to accommodate my #PKUdiet and not only did they provide me with my own #PKU menu but the food was SO good!! Pictured here was the star of the show: roasted leeks with an apple purée and truffle oil with a tiny bit of granola and edible flowers 🌸 it was so unusual and suuupet tasty - I ate the whole thing so quickly! Other things on the menu included jerk cauliflower with puffed rice (my other favorite dish!), hispi cabbage salad and red apple sorbet! It was so delicious, so #pkufriendly and I was amazed and how creative they got with vegetables!   • Yesterday was my birthday.  It was an exciting day because it marked THREE official years of low levels and life on diet. 
Returning to my PKU diet after many years completely off was the best thing I've ever done for myself.  Taking care of my health has absolutely changed my life. 
Just over three years ago I was depressed, anxious and oftnen had panic attacks.  My thoughts were disorganized, I couldnt focus or retain information and I was becoming quite a pessimist.  It got so bad that my personal relationships were suffering greatly. I was afraid to take risks and had very low self esteem. 
Now I'm happy to say that I've learned to love myself through taking care of myself. I've improved my mental health substantially,  grown to love new food, and started taking risks.  I even started college this year- something I truly believed was IMPOSSIBLE for me before. 
Going back on diet was difficult at first, but with discipline it got so much easier, especially as I started to feel SO MUCH BETTER!

To those struggling to get back on track- I see you and I know your struggle.  I believe you can do it.  Your health is worth the effort. YOU are worth the effort.

  • Hoje, para o lanche da manhã e da tarde, temos os habituais aminoácidos, wafle caseira (descongelada na torradeira), pêra, 1 pacote com 2 bolachinhas speculoos (0,8g de proteína no total) pão de cenoura com queijo Violife.
A única regra é que os aminoácidos são para beber à tarde, o resto é o Vasco que decide 😉

  • In honor of #PKU awareness month, I'm sharing a special project I just finished!

I created this for my best friend's last project of her grad program in School Psychology. She needed a presentation slide explaining PKU, and came to me because...I have PKU!

I have hyperphenylalaninemia, which is a milder form of classical phenylketonuria. It's a genetic metabolic disorder affecting the PAH enzyme, causing a buildup of phenylalanine in the blood. Basically, PKU patients have to follow a strict low or no protein diet of mainly fruits and vegetables in order to keep their PHE levels low. I've been lucky enough to be off diet for years with low levels because I have Hyper-PHE. There are new medications in clinical trials now that may eliminate the need for the diet all together, and there is a potential for cure with gene editing and gene therapy! Exciting times for PKU!

За основу взят все тот же любимый бисквит на кипятке✌🤗 Яйцо переп. - 6 шт
заменит . яйца - 20 гр + 80 мл воды
сахар - 200 гр
ванильный сахар
мука н/ б - 170 гр
разрыхлитель - 2 ч . л
какао - 30 гр
кипяток( вода) -8 ст.л
растит. масло - 4 ст.л 
красный пищевой красттель( у меня гелевый)

Взбиваете яйцо с восст.яйцом минут 5, добавляем сахар + ваниль и еще взбиваем минут 7 до пышной пены. Добавляете муку, какао, разрыхлитель;аккуратно перемешивание лопаткой снизу вверх.Вливаете кипяток и масло.
Добавляем краситель.

Выпекаем при t - 160*  40-50 минут.Готовность проверяем сухой шпажкой.

  • My sister helped me make a low protein quesadilla!! Made the bread out of low protein baking mix! Inside is: sautéed mushrooms/spinach/peppers, and @daiyafoods mozzarella! We then put it in the George Forman grill. It was delic 😋

When I was 5 days old, my parents got a phone call after the routine hospital newborn screening tests.  They were told that they needed to bring me back to the hospital immediately.  On that day, I was diagnosed with Phenylketonuria, or PKU.  PKU is a metabolic genetic disorder that prevents my body from breaking down protein like other people. When I consume protein, it becomes toxic to my brain and body. I obviously don't remember the day I was diagnosed, but I do remember growing up eating food that was low in protein (& in taste), drinking formulas full of amino acids that weren’t any better, and leaving school early to make the long drive to the nearest specialist.  When my "phe levels" are high, or there's too much protein in my bloodstream, anything the brain controls is affected...so, every part of my body.  These high levels can lead to intense mood swings, memory loss, migraines, fatigue, muscle spasms, and more.  But through a strict diet, a pill regimen of 134 capsules each day, and blood monitoring, I'm able to avoid some of these symptoms daily.  Today, my health is good, but not perfect.  I'm so thankful that God has given me my family, friends, doctors, and dietitians to help me along this journey. I’ve learned that life isn’t always going to be fair or easy and it's often out of our control, as PKU is for me. But it doesn’t have to define our lives. While I have to battle with it every day, PKU is part of who I am but that’s only scratching the surface.
