Simmered beef and onions in a soy-based sauce that is perfect over steaming hot rice.

Ingredients:
1/4 lb sliced beef
1/2 onion thinly sliced
2 T mirin
2 T sake 
2 T sugar
Onion leaves for garnish(optional)
Pickled ginger as sides (optional)
Sesame seeds for garnish (optional)

Instructions:
1. In a pan pour soy sauce, mirin, sake and  sugar. Let it boil.
2. Lower heat then add beef strips and onions, simmer for 10 mins.
3. Best Served over steaming hot rice
4. (Optional) garnish with onion leaves, sesame seeds and pickled ginger.

  • Kimchi Jjigae

Ingredients
Meat
180 g skinless pork belly (0.4 pounds), cut into bite size pieces
1 Tbsp rice wine (mirin)
3 sprinkles ground black pepper

Kimchi & Others
3/4 cup aged Kimchi (at least 2 to 3 weeks old), cut into bite size pieces if not already
1/4 small brown onion (30 g / 1 ounce), thinly sliced
1/2 stalk small green onion (5 g / 0.2 ounce), thinly sliced
2 small shiitake mushrooms (50 g / 1.4 ounces), stems removed, thinly sliced
150 g firm tofu (5.3 ounces), sliced into 1cm thickness rectangles, or other shapes you may prefer
1 cup water

Jjigae base (mix these in a bowl)
1 Tbsp Korean chili flakes (gochugaru)
1 Tbsp soy sauce
1 tsp Korean chili paste (gochujang)
1/4 tsp minced garlic
3 sprinkles ground black pepper 
Instructions
Marinate the pork belly with the rice wine and the ground black pepper for about 15 mins.
Cook the Kimchi in a skillet until soft. (You could do this in the pot where you will make this jjigae. Do this only if the pot is big enough to mix all around.)
Put the marinated meat into the bottom of the pot. Add all the other ingredients (kimchi, onion, mushrooms, tofu, water and the base sauce) except for green onion into the pot.
Boil the pot on medium high heat initially then reduce the heat to medium once it starts boiling. Cook further until the meat is cooked. (It takes 10 to 15 mins from the beginning of step 4.) Make sure the sauce is well blended into the rest of the ingredients. (This can be done by gently mixing the sauce around the soup with a small teaspoon and splashing the soup over other ingredients every now then). When the meat is cooked, add the green onion and turn the heat off.
Serve with rice (and other side dishes).

✔️3 cups warm water⁠
✔️2 teaspoons baking powder ⁠
✔️1 3/4 cups fine semolina ⁠
✔️1/3 cup all-purpose flour ⁠
✔️2 teaspoons active dry yeast ⁠
✔️1 teaspoon sugar ⁠
✔️1 teaspoon salt ⁠
✔️Vegetable oil, for cooking ⁠
✔️1/3 cup honey, warmed ⁠
✔️6 tablespoons unsalted butter, melted⁠

Directions⁠

✔️In a bowl, combine 1/4 cup of the warm water with the baking powder.⁠
✔️In a food processor, combine the semolina with the flour, yeast, sugar and the remaining 2 3/4 cups of warm water; process for 30 seconds, until smooth. ⁠
✔️Add the salt and baking powder mixture and process for 30 seconds longer. ⁠
✔️Pour the batter into a large bowl, cover with a kitchen towel and let rise at room temperature until doubled in bulk, about 1 hour.⁠
✔️Heat a 10-inch nonstick skillet and coat it with a thin layer of vegetable oil. ⁠
✔️In a small bowl, blend the honey with the melted butter. ✔️Whisk the batter until creamy. ⁠
✔️Ladle 1/3 cup of the batter into the skillet, tilting the skillet to distribute it evenly. ⁠

Art of substitution on ingredients is another skill I'm getting better. Almond flour instead of AF flour, and sugar with substitute. 
We used to have bakery years ago and cheese cupcakes is one of best seller. I wonder where is the recipe....🤔🤔 Maybe pandesal next time.

  • Dahil mag-iisang buwan na tayong naka-lockdown, ano ang pagkaing miss na miss mo na? Ako kasi marami eh. HAHAHA! Parang ‘di ata kasya sa isang post kung ililista ko lahat😂 Pero, isa sa mga yun yung masabaw na noodles- parang itong Batchoy. Huwag mong nila-lang lang yang Batchoy na ‘yan coz it has EVERYTHING ON IT! May liver, egg, chicken, chicharon etc. Kaya lang sa Bacolod pa ‘to. Saan ba may pinaka mesherep na Batchoy dito sa Manila?
