Meet John Rivera. San Pellegrino Young Chef 2018 - Pacific (5th overall globally), where we was awarded for his sinigang dish - a reinterpretation of the traditional hot and sour Filipino soup, with a flavour profile complemented with smoked tamarind and created with incredible Australian produce. As @j_hnrivera laments: This competition means a lot for young chefs and Filipinos in my generation, who are looking for their heritage and ways to show it in their food. We need to go out there and fly our flag  the world is ready for us. There are many South East Asian nations that have recognition, and the Philippines is the final frontier. This opportunity wouldnt have come to me in the Philippines. That is the great thing about Australia: they have given us all the platform.

Being born in Cabanatuan City, Nueva Ecija, PH, John and his family migrated to Auckland, NZ as a young child, before crossing the Tasman to settle in the western suburbs of Melbourne during his adolescent years. During these life movements, John has seen the value of BARRIO (neighbourhood), where family, friends, colleagues become the foundation of ones identity in their adopted homes. John shares that in the culinary and hospitality world, having a strong and supportive community is so important for Filipino cuisine. Only with the support and encouragement of each other can we be inspired and motivated to champion the Filipino. Lets have each others backs.   • Good morning! Lunchtime! Ginataang Kalabasa with Dilis and Malunggay. Served with Fried Bangus.

It's still raining, cold and breezy where I am. Last night we didn't even need to use the AC and we all slept like a teenager!
