  • Pickled me some jalape簽os & Thai Red Chillis yesterday, plus the lime pickle is ready to go. 中中. Basic pickling liquor:

2 cloves garlic
1/2 Shallot peeled
1 Tbsp dill seeds
1 Tsp caraway seeds
1 Tsp Mustard seeds
1 Tsp Coriander seeds
1/2 Tsp Chipotle Flakes
1/2 Tsp Black peppercorns 
3/4 Cup Distilled white vinegar 
1/4 Cup Water
1 Tsp Sugar 
1 Tsp Sea Salt 
Add all the ingredients to a saucepan, bring to the boil & stir making sure the salt / sugar has dissolved.
Fill your jar with your desired veg or even hard boiled eggs & pour over your liquor. Screw the lid on tight, allow to cool put in the fridge for at least 12 hours before serving. Your pickled goods should keep for 2 weeks but they will be even better if left for longer.

What do you put in these incredible soft, fluffy buns? I went with sticky pork belly and pickles. All homemade, of course.

If youve seen my previous posts, you know Ive stocked up on rams. So in they went, too, together with a few coriander leaves.

Im not big on braggingkarmas gonna get you eventuallybut these gua bao were insanely tasty: sweet, sour, salty, and umami turned all the way up to 11.

Definitely one of the best dishes Ive cooked in a while. I just wish I had made more

The real ploughmans lunch is simply Bread, some cheese, and a pickle, and the concept goes far back into antiquity. You dont need much more! (  however the name of the dish was also born from marketing cheese, not actually from the fields )

I'm a 14yo Italian 氣 Greyhound and frankly I'm super spoiled. I love to burrow into blankets, go for rides, sleep, and get treats! My favorite treat is dill pickle slices. My mommy @assistantbecky didn't even know I liked pickles until after she named me!! I of course live the good life of 7 blankets (fluffy of course), 4 beds, 9 sweaters, and I even get served pickles and ice cream in bed. Get this my mom actually wakes me up really early in the morning to go to this thing she calls work!! Whatever work is I HATE it! She is seriously gone FURever. She says she goes and works on teeth, but when she tries to brush mine I BITE her and she gets angry. 朵 Now I have to go to this place I hate so much@romainecreekvet to get it done. I know all these humans hate the coronavirus, but I actually LOVE it! My mommy is home ALL day long now. I used to get rides just on the weekends for puppachinos, but I would trade all of the puppachinos in the world to have mommy stay withme all day everyday!!! PS. I'm the only dog that can pull of fishnet tights so don't hate just congratulate or flaunt it!!

Ici, c'est une petite quiche aux poireaux, moutarde de Meaux et Cantal... Avec en toppings, du ch癡vre frais, des pickles d'oignons et des graines germ矇es. 

Un vrai r矇gal avec de la roquette... Et comme on a toujours 1,5 kg de poireaux au cong矇lo, ca va devenir r矇current  mon avis 

D'ailleurs, j'ai enfin (!) 矇t矇 faire des courses ... Un peu  reculons je l'avoue... Mais j' etais motiv矇e par l'achat de fleurs ! En effet, le secteur souffre beaucoup du contexte actuel alors autant joindre l'utile (a notre 矇chelle) et l'agr矇able...  !

  • My partner in crime and myself were traveling in New-York last summer.
I love looking at photos from that trip, it reminds me of better times and they amazing food NYC offers. 
Delicious southern comfort food!
Food portions are really generous and absolutely mouthwatering!
We had an excellent experience and we are definitely coming back.

  • Ive considered myself a pickle purists for many years. (What the heck is a pickle purist?!) Ive preferred to reserve that word pickle for vegetables acidified through the lactic-acid fermentation-process, rather than marinated in vinegar (usually pasteurized). I detest those dead cheep jars that line super market shelves, of what once was food now marinated in cheap dead vinegar and even cheaper sweetener being associated with the real pickles that nature intended. I think my aversion to the term is rooted more in my distain for modern industrial foods and the places that provide them, than actual veggies marinated in vinegar. I was asked to write a recipe for pickles not too long ago, and when I heard that word pickles, I knew they werent talking about half sour kosher dills. They meant marinated in vinegar. I was too embarrassed to announce my crazy position on the semantics associated with acidified vegetables, but my feathers were ruffled none the less. I never submitted that recipe, and after some thought on the matter Ive decided to let go... forget about teaching the world about lactic-acid pickle purity, its time to embrace living vinegar marinated vegetables and heck, callem PICKLES! Cauliflower Pickles 500g cauliflower trimmed and cut in to bit size pieces  1 yellow onion sliced  1 large carrot sliced *toss in 1 Tbs salt (or less) set aside for about 45 minutes while they give up their water. 
In a separate bowl mix brine:
 2 cups of homemade scrap vinegar (or any unpasteurized vinegar)  1/2-3/4 cup maple syrup or honey (or sweetener of choice)
 Pinch or 2 of red chili flakes
 1 1/2 tsp dried mustard  tsp turmeric  2 tsp yellow or brown mustard seeds  1/2 tsp cumin * pat the veggies dry and stuff them in to a large clean jar and pour the brine mixture over, seal the lid and store in the fridge. The pickles are best if you can wait at least 24 hours before tucking in. #picklesnob #rawvinegar #whenyoureanutcase #inseason #fermentationenthusiast #rawpickles #livingvinegar #unpasturized #localfood #irishfoodsystem #pickles

Crispy bacon wrapped dill pickles and ranch dressing!予 Sometimes I make them in the air fryer. I made these in the oven. Drain excess liquid off pickles and wrap them in bacon. 425 degrees for 25-30 minutes depending on how crispy you want them.

肇aites en des pickles ! Voici la MTHODE : coupez les l矇gumes crus choisis en morceaux de taille moyenne et mettez-les dans un bocal en verre propre ; faites bouillir dans une casserole un m矇lange de 150ml de vinaigre de cidre + 300 ml deau + 2cc de sel + 2cc de sucre. Versez le liquide encore bouillant sur les l矇gumes. Refermez de suite le bocal, laissez refroidir. Ces l矇gumes se conservent ainsi plusieurs semaines au frigo et vous pouvez les d矇guster quand bon vous chante {id矇al avec des carottes, des navets, du chou-fleur, etc...}

  • Now is the PERFECT time to start exploring some healthy kitchen hobbies like fermenting veggies!

The main idea of fermenting is to create an environment that is inhospitable to the microbes and enzymes that would normally cause food to decay and make you sick while increasing the nutrient quality of the food and levels of good bacteria. 

The bacteria carry out processes that make the minerals in cultured foods more readily available to our bodies. The bacteria also produce enzymes that are beneficial for digestion.

Fermenting veggies can be as easy as this:

Step 1: gather your fermentation equipment like wide mouth mason jars and plastic lids.

Step 2: prep your veggies by slicing/chopping them into manageable pieces. Then fill your jars with them right up to the neck.

Step 3: stir 1 1/2 tablespoon coarse sea salt with 2 cups super clean water (I love @Hallsteinwater) until salt is dissolved.

Step 4: Fill the jars with the brine (saltwater solution) until the veggies are submerged.

Step 5: Close the lid on the jar tightly and place the jars out of sunlight in a moderate temperature (68-75 degrees F). 
The veggies will be ready anywhere from 4 to 10 days after jarring. The longer they sit, the tangier they will be.  Add your veggies to salads or simply eat them right out of the jar!

  • Ive considered myself a pickle purists for many years. (What the heck is a pickle purist?!) Ive preferred to reserve that word pickle for vegetables acidified through the lactic-acid fermentation-process, rather than marinated in vinegar (usually pasteurized). I detest those dead cheep jars that line super market shelves, of what once was food now marinated in cheap dead vinegar and even cheaper sweetener being associated with the real pickles that nature intended. I think my aversion to the term is rooted more in my distain for modern industrial foods and the places that provide them, than actual veggies marinated in vinegar. I was asked to write a recipe for pickles not too long ago, and when I heard that word pickles, I knew they werent talking about half sour kosher dills. They meant marinated in vinegar. I was too embarrassed to announce my crazy position on the semantics associated with acidified vegetables, but my feathers were ruffled none the less. I never submitted that recipe, and after some thought on the matter Ive decided to let go... forget about teaching the world about lactic-acid pickle purity, its time to embrace living vinegar marinated vegetables and heck, callem PICKLES! Cauliflower Pickles 500g cauliflower trimmed and cut in to bit size pieces  1 yellow onion sliced  1 large carrot sliced *toss in 1 Tbs salt (or less) set aside for about 45 minutes while they give up their water. 
In a separate bowl mix brine:
 2 cups of homemade scrap vinegar (or any unpasteurized vinegar)  1/2-3/4 cup maple syrup or honey (or sweetener of choice)
 Pinch or 2 of red chili flakes
 1 1/2 tsp dried mustard  tsp turmeric  2 tsp yellow or brown mustard seeds  1/2 tsp cumin * pat the veggies dry and stuff them in to a large clean jar and pour the brine mixture over, seal the lid and store in the fridge.
