  • Great to see that there were no bags or plates of nuts handed out as snacks on our @qantas flight to Sydney today! Imagine if every flight was like this. Airborne allergens are a particular concern when flying due to the enclosed cabin space and the air conditioning systems used.

  • I was doing some reading on global warming and dietary restrictions and came upon a paper published in Nature at the end of 2014. As a pretty ignorant person, I was completely shocked by the published results. 
Switching to the pescetarian diet would reduce the CO2 emission by ~45% while vegetarian diet would reduce it by ~55% compared to predictions for income-dependent no restrictions diet at 2050. 
In the paper, predictions for needed cropland size at 2050 is compared to the cropland size at 2009. On average, the alternative diets would require 540 MILLION hectares less cropland than income-dependent no restrictions diet.
The picture in this post is from the mentioned Nature paper as well (link below). All diets with reduced or zero meat consumption reduces the relative risk of type II diabetes, cancer, coronary heart disease mortality and of all-cause mortality (except for all-cause mortality in case of vegetarian diet)  by 8% - 41%. The authors conclude:
"Current dietary trajectories are greatly increasing global incidences of type II diabetes, cancer and coronary heart disease. These dietary changes are causing globally significant increases in GHG emissions and contributing to land clearing. Although this pattern does not mean that healthier diets are necessarily more environmentally beneficial, nor that more environmentally beneficial diets are necessarily healthier, there are many alternative dietary options that should substantially improve both human and environmental health." And as you can see from their analysis, the current change in diet is kind of opposite.

  • Seared salmon with a flavorful chickpea salad--a satisfying dish that provides you with a healthy dose of good fats and lean proteins.  Everything comes together in minimal time so make this asap!  The recipe serves 2-ish. (The photo only shows one serving!)

Chickpea salad: Drain and rinse a 15 oz. can of chickpeas.  Drain again and place into a large bowl.  Add in juice from about Β½ a lemon (more or less to taste), salt + pepper, chili pepper flakes and a healthy pour of olive oil.  Toss to combine, taste, and adjust seasoning.  Add in a few pitted and roughly chopped kalamata olives, thinly sliced super small red onion or shallot (optional), a handful of sliced grape tomatoes, some minced parsley and lemon zest.  Toss again and set aside.

Cut 1 lb. of salmon into Β½ inch slices.  You should have about 6-8 pieces.  In a hot cast iron pan (or nonstick pan), add some neutral oil and sear the salmon slices (in batches if necessary as you don’t want to crowd the pan), about 2-3 min on one side, flip and cook for about 30 sec-1 min on the other side.  Spoon some chickpea salad on a serving plate, place the salmon on top.  Top everything with more lemon juice and/or olive oil if you’d like!
