  • I posted Hungarian goulash last year after I came to Budapest, but it deserved another post because it is such a delicious soup. Goulash (or 'Gulyás') refers to Hungarian cattle herders back in the day, and it is thought that they were the first to make this soup. My goulash uses 2 types of paprika (aren't I becoming a local here!): mostly regular (sweet) paprika and a little smoked paprika because I like that flavor (also good to get a meaty taste if that's your thing). With kidney beans, onion, carrot, potato and red pepper, it's pretty simple to make. Vegan sour cream goes perfectly with this.   • During this pandemic, we often buy groceries in bulk and are left with random ingredients in the fridge. This versatile recipe lets you use them up in a quick, delicious way. The ingredients we have listed below are only suggested and can be substituted with most things you have available. Stay home and be creative!😃

REACTANTS:
▫️Cooked rice of your choice (microwaved leftover rice works well too!)
▫️1/2 bunch of cilantro, finely chopped
▫️ 1-2 wedges of lime
▫️TJ's smoked paprika
▫️TJ's Everything but the Elote seasoning
▫️TJ's cayenne pepper
▫️TJ's grilled chicken strips (For vegetarian options, substitute with cubed and sautéed TJ's organic sprouted tofu, and/or sliced mushrooms)
▫️TJ's organic pinto beans (can also use other bean of your choice)
▫️TJ's roasted corn
▫️Cherry tomatoes
▫️Half of avocado
▫️Optional toppings: TJ's Creme Fraiche, TJ's fancy shredded Mexican-style blend cheese, TJ's ghost pepper salsa.

FORMULA:
1. To make the cilantro rice, gently toss cooked rice with chopped cilantro, salt, pepper, olive oil or melted butter, and lime juice in a serving bowl. 
2. For the beans, drain most of the liquid from the can. In a small pot, heat up the beans until warm and place on top of cilantro rice. 
3. In a small frying pan, heat chicken and corn in olive oil. Season with the 3 spices. Remove from heat and place in same bowl. 
4. Top with halved cherry tomatoes and sliced avocado with a wedge of lime. Add optional toppings to desired taste. 
TIP: If you're craving some crunch, the bowl pairs well with TJ's roasted veggie flaxseed tortilla chips and TJ's extra hot habanero ghost pepper salsa.

  • Saturday night roasted leftovers, simple recipe, cut up your leftovers and crank your oven up, 30-35 minutes on top heat covered in salt, pepper, olive oil, chilli oil and some paprika for flavour will make your veg taste amazing!   • I’m going to go out on a limb and say this is the best red lentil soup recipe on the planet, with rich fragrant North African spices (cumin, cinnamon, ginger, coriander, and cayenne) and topped with swirl of lightly browned butter with paprika and dried mint! 4  tablespoons unsalted butter
1  large onion, chopped fine
Salt and pepper
¾  teaspoon ground coriander
½  teaspoon ground cumin
¼  teaspoon ground ginger
⅛  teaspoon ground cinnamon
Pinch cayenne
1  tablespoon tomato paste
1  garlic clove, minced
4  cups chicken broth
2  cups water
10 ½  ounces (1 1/2 cups) red lentils, picked over and rinsed
2  tablespoons lemon juice, plus extra for seasoning
1 ½ teaspoons dried mint, crumbled
1  teaspoon paprika
¼  cup chopped fresh cilantro

🍽 Instructions (serves 4-6)

1. Melt 2 tablespoons butter in large saucepan over medium heat. Add onion and 1 teaspoon salt and cook, stirring occasionally, until softened but not browned, about 5 minutes. Add coriander, cumin, ginger, cinnamon, cayenne, and 1/4 teaspoon pepper and cook until fragrant, about 2 minutes. Stir in tomato paste and garlic and cook for 1 minute. Stir in broth, water, and lentils and bring to simmer. Simmer vigorously, stirring occasionally, until lentils are soft and about half are broken down, about 15 minutes.

2. Whisk soup vigorously until it is coarsely pureed, about 30 seconds. Stir in lemon juice and season with salt and extra lemon juice to taste. Cover and keep warm. (Soup can be refrigerated for up to 3 days. Thin soup with water, if desired, when reheating.) 3. Melt remaining 2 tablespoons butter in small skillet. Remove from heat and stir in mint and paprika. Ladle soup into individual bowls, drizzle each portion with 1 teaspoon spiced butter, sprinkle with cilantro, and serve.

  • Made two different style kebabs on Thursday! One with bell peppers, onions, and garlic butter and the other with turmeric, paprika, and a few other spices. Both kinds tasted great but if I had the option I would cook them on a grill next time.

🧡Sweet Potato and Beans is the answer🧡⠀

Did I just use an infomercial segway to introduce this recipe, yes. ⠀
⠀
The recipe is as follows:⠀
⠀
Preheat oven at 350 F ⠀
Cut the sweet potatoes in half and fork then, brush them with oil ⠀
Put them in the oven skin side down for 45 mins ⠀
⠀
Gran your favourite beans and if you use chickpeas in a can, cook them in the aquafaba (the liquid inside the can)⠀
Sautée the beans on medium heat for 15 mins, turning occasionally⠀
Around the 10 minute mark, toss in two (2) massive handfuls of your favourite greens and cover them⠀
Cook them until they are wilted, stirring occasionally⠀
1 teaspoon of onion powder and garlic powder right after you throw in the spinach ⠀
Salt and pepper to taste ⠀
⠀
The aquafaba and spices add great flavour to the beans and spinach in my opinion but sometimes I want a little extra flavour. If you do too, add these on top of the spices aforementioned! ⠀

1/2 teaspoon of Chili powder⠀
1/2 teaspoon of paprika ⠀
⠀

🍽 Instructions (serves 4-6)

1. Melt 2 tablespoons butter in large saucepan over medium heat. Add onion and 1 teaspoon salt and cook, stirring occasionally, until softened but not browned, about 5 minutes. Add coriander, cumin, ginger, cinnamon, cayenne, and 1/4 teaspoon pepper and cook until fragrant, about 2 minutes. Stir in tomato paste and garlic and cook for 1 minute. Stir in broth, water, and lentils and bring to simmer. Simmer vigorously, stirring occasionally, until lentils are soft and about half are broken down, about 15 minutes.

2. Whisk soup vigorously until it is coarsely pureed, about 30 seconds. Stir in lemon juice and season with salt and extra lemon juice to taste. Cover and keep warm. (Soup can be refrigerated for up to 3 days. Thin soup with water, if desired, when reheating.) 3. Melt remaining 2 tablespoons butter in small skillet. Remove from heat and stir in mint and paprika. Ladle soup into individual bowls, drizzle each portion with 1 teaspoon spiced butter, sprinkle with cilantro, and serve.

  • Update von der Fensterbank! Die Paprikapflanzen haben jetzt alle ihre zweiten Blätter und werden wohl in ein bis zwei Wochen mehr Platz benötigen.  Wenn ich bis dahin alle Erbsen und vorgekeimten Kartoffeln nach draußen umgezogen sind, ist auch wieder Platz für größere Töpfe! 😂 Spielt ihr auch ständig Tetris auf der Fensterbank? 😊Die Paprika stehen immer noch im unbeheizten Schlafzimmer, in dem es maximal 17 Grad wird. Nachts stehen sie am offenen Fenster. Sie werden von mir auch immer noch jeden Tag mehrfach gestreichelt, was die Wurzelbildung anregt, denn durch die Bewegung versucht die Pflanze sich zu stabilisieren und bildet zusätzliche Seitenwurzeln aus. Wenn es draußen wärmer als 10 Grad sind, dann macht die ganze Bande auch Ausflüge nach draußen auf dem Balkon 😊

  • PACCHERI DI GRAGNANO SEMI-RISOTTATI AL PECORINO E PAPRIKA CON CRUMBLE DI GUANCIALE E CIPOLLA DI TROPEA CROCCANTI  E MENTUCCIA. Le foglioline di mentuccia per dare un tocco di freschezza al palato 😋 #IORESTOACASA
🔶️RICETTA/RECIPE🔶️
➡️ Ingredienti per 5 persone.
500g di paccheri
Una cipolla di Tropea
100g di guanciale stagionato
150g di pecorino romano
50g di paprika dolce
10 foglioline di mentuccia
➡️ Procedimento
Mettere la cipolla finemente tritata in una padella ben calda con un cucchiaino di olio. Farla tostare rigirando continuamente per non farla bruciare. Toglierla dalla padella e nella stessa stendere il guanciale tagliato a fettine spesse 2mm. Farlo rosolare per bene e poi toglierlo per farlo raffreddare. Nel frattempo lessate i paccheri in abbondante acqua senza sale per circa 2/3 del tempo di cottura. Mediamente 10 minuti.
Nel frattempo in un tagliere tritare il guanciale (che si sarà quasi seccato) con un coltello. Aggiungere la cipolla tostata e amalgamare in un crumble. A questo punto mischiare il pecorino grattugiato con la paprika. In una ciotola mettete metà del composto e aggiungere un mestolino di acqua di cottura della pasta fino a formare una cremina. Nella padella dove si è reso croccante il guanciale e dove abbiamo lasciato il grasso sciolto aggiungere un mestolo di acqua di cottura della pasta e portare ad ebollizione. Scolate i paccheri nella padella per completare la cottura risottata. Spegnere il fuoco ed aggiungere la cremina di pecorino e paprika amalgamandola con i paccheri. Aggiungere ancora un mestolino di acqua di cottura e versate il resto del mix di pecorino e paprika. Saltare ben bene, sempre a fuoco spento, per creare la cremina del sugo. Impiattare, spargere sopra il crumble di cipolla e guanciale croccante e aggiungere un paio di foglioline di menta.

Aujourd’hui je vous ai laissé choisir entre une recette salée et une sucrée 🥰 la majorité d’entre vous a voté pour du salé 🍠 alors voilà des frites de patates douces avec une sauce ketchup maison 🤩

Ingrédients 🍠
🔸1 patate douce 🔸1 cc de paprika
🔸sel/poivre .

Réalisation 🥣
1/Éplucher la patate douce et la couper en lamelles 
2/Les mettre dans un sac congélation avec les épices et agiter pour bien les repartir 
3/Mettre sur un plaque de cuisson puis au four pendant 20-25min (dépend de votre four) à 200 degrés
4/Retourner régulièrement pendant la cuisson .

Daarna vulde ik hem met basmati rijst met courgette, prei, aubergine, paprika (ja, nóg meer) en rode ui. Ook voegde ik er een lekker sausje aan toe. Mix sojasaus, sambal en ketjap met elkaar en that’s it. Ik maakte het af met een gebakken eitje en lente-ui. Fijne dag 🧡
