Pancakes/Pfannkuchen/Crêpes 🥞

Das Rezept: 🥞 400ml Buttermilch 🥞 2 Eier 🥞 3 EL Butter
🥞 250g Mehl 🥞 3 TL Backpulver 🥞 Prise Zucker/Vanillezucker und Prise Salz, Je nach dem ob ihr die Pfannkuchen süß oder herzhaft mögt 🥞

Eier, Butter, Zucker/Salz schaumig schlagen, danach die Buttermilch hinzugeben. Das Backpulver zum Mehl geben, vermischen, alles über den Ei/Buttermilch-Schaum sieben gut verrühren und etwas stehen lassen.
Den Teig in die gefettete Pfanne geben und so große/kleine Pfannkuchen backen wie ihr wollt bzw. Wie groß euer Hunger ist 🍴

I made these protein pancakes for my mum and I the other week after our 6am 10 miler and they were 👅 the recipe is #glutenfree and so quick (if you’re not a knob like me who spends forever faffing on aesthetic) .

RECIPE: (Per person) .

2 eggs 🥚 1 banana 🍌 1 scoop @freesoulsistas vanilla and cinnamon. .
Beat the eggs and add the banana mashed (cut stars 🌟 then use the remnants in the mix!). Then a tsp of cinnamon or mixed spice and your scoop of protein 😍

Coat a pan in @frylighthq and then cook ☺️ whilst they’re cooking, heat up some frozen berries on the stove with a teency bit of water to stop them initially sticking. .

Once all the pancakes are cooked - STACK. Smother them in yog, I used @fage on these and then pour over the heated berry compote thing... 😂 add 🍌 🌟 s, more peanut butter 🥜 than should humanly be consumed, chia seeds and you’re good to go!

  • Wie esst ihr eure Pancakes? Es gibt ja so viele Varianten. Ich liebe sie mit Schmand, Blaubeeren und Ahornsirup, meine Tochter macht einen Doppeldecker mit Schokocreme in der Mitte, lecker ist auch mit glasierten Äpfeln, warmen Himbeeren oder einfach nur Puderzucker. Was gibts bei euch zu Pancakes? Übrigens lassen sie sich sehr gut mit Vollkornmehl backen. 🥞🥞
Hier das Rezept für ca 12 Pancakes:

360g Vollkornmehl (Dinkel oder Weizen)
1 Päckchen Backpulver
1 Prise Salz
300 ml Milch
ca 300 ml Mineralwasser
Pflanzenöl für die Pfanne

Mehl mit Backpulver u Salz vermischen, langsam und abwechselnd Milch und Wasser unterrühren (geht sehr gut mit einem Schneebesen). Der Teig sollte nicht zu dünn werden. Dann langsam in einer Pfanne mit Öl ausbacken. Der Teig sollte leicht in Fett brutzeln wenn man ihn hineingibt. Backen, bis sich Blasen bilden, wenden und schön knusprig fertig backen.

Last weekend I shared the sheet pancakes. This weekend I’ve made one of my other favourite pancake recipes - a Dutch baby pancake. It’s a bit “eggier” and there’s much less flour. It’s pretty much like a giant sweet Yorkshire pudding, and surely you can’t go wrong with that 🙌. Oh and all you need is a blender and a pan.

Recipe
3 medium eggs
1/2 cup plain flour
1/2 cup milk
1 tablespoon sugar
1 teaspoon vanilla extract
1 tablespoon butter
Pinch of salt

1. Preheat the oven to 220 degrees.
2. In a blender, blitz together all the ingredients apart from the butter for about a minute or so, making sure the batter is nice and frothy.
3. In an ovenproof dish or caste iron skillet heat some butter (I usually just put it in the oven whilst it is heating up). When the oven and pan are hot, pour the batter in and pop straight into the oven. Bake for 20-25 minutes or until the pancake is puffed up and the batter is cooked. Top with fruit of choice.

  • On Sunday mornings we have pancakes.

Now, I've used various pancake recipes, my favourite is based on one I found from @bbcgoodfood (recipe below).
If you want to keep it #vegan @the_buddhist_chef has an awesome pancake recipe 👌

Whatever recipe you choose to follow I find the magic is in the toppings! Today, I made a quick blueberry compote and served it alongside sliced banana 😋 #delicious

PANCAKE RECIPE

200g self-raising flour

1 ½ tsp baking powder

1 tbsp golden caster sugar

3 large eggs

25g melted dairyfree shortening (I use @flora plant based)

plus extra for cooking

200ml dairyfree milk alternative (I use @alpro soya)

vegetable oil, for cooking

1. Mix the flour, baking powder, caster sugar and a pinch of salt together in a large bowl. Create a well in the centre with the back of your spoon then add the eggs, melted butter and milk. Whisk together either with a balloon whisk or electric hand beaters until smooth then pour into a jug.

2. Heat a small knob of butter and 1 tsp of oil in a large, non-stick frying pan over a medium heat. When the butter looks frothy pour in rounds of the batter, approximately 8cm wide. Make sure you don’t put the pancakes too close together as they will spread during cooking. Cook the pancakes on their first side for about 1-2 mins or until lots of tiny bubbles start to appear and pop on the surface. Flip the pancakes over and cook for a further minute on the other side. Repeat until all the batter is used up.

3. Serve your pancakes stacked up on a plate and your favourite toppings.

I've been experimenting with making pancakes for a long time now. I'm not very good at following recipes or even repeating my own recipes twice lol

I just always feel like changing ingredients, adding this or removing that. So I always end up with a different recipe in the end 😆

Today, we have a no milk no eggs pancake here. I never use eggs in pancakes anyway. For the milk, I usually use a plant based one 🌿, but I had none today, so I decided to make a mix to replace it and it worked just fine 🤗

Ingredients used today:

1 cup plain flour
1 tsp baking powder
1 cup milk & egg replacement mix (mix water with 1 tbsp oat bran + 1 tbsp flax seed flour and let it rest for a couple minutes)
1 tbsp cocoa nibs
1/2 tbsp apple cider vinegar
2 tbsp coconut oil (liquid form)
1 tsp vanilla extract
Stevia (as much as you like, I use 1 tbsp for this recipe)

First, mix dry ingredients then add the replacement mix and the other ingredients. Mix everything with a spoon until smooth.

Scoop the batter using the same spoon onto a pre heated pan. Brown on both sides and serve with your favorite toppings. This time, I used peanut butter, maple syrup and berries 😋

C’est facultatif, mais qd même ça a apporté un petit plus plutôt sympa...

  • Weekends are for pancakes!!! This gluten free pancake recipe comes out perfect every time (and the kiddos love it!). I like to top with a little coconut oil, berries and bananas. .
1/2 cup dry oats.
1/2 cup almond milk.
1 eggs
1 serving collagen peptides.
1/2 teaspoon baking powder.
.
Combine oats and milk of choice (I use almond milk) in a bowl.  Allow oats to soak for 10 minutes.  Blend in a high speed blender until smooth.  Mixture will be thick!  Pour back into bowl and add remaining ingredients.  Mix until incorporated.  Cook on hot pan or griddle about 60-90 seconds, flip, cook another 30-45 seconds on other side.  Top with your favorite toppings.  Makes about 3-4 pancakes (depending on how big you make them). .
Macros: 28g carbs/9g fat/29g protein.

Ingredients:
200g self-raising flour
1½ tsp baking powder
1 tbsp golden castor sugar
3 large eggs
30g melted butter
100ml milk
100ml pumpkin puree
1 orange
3 tbsp pistachio nuts
Syrup to drizzle over the top

Preparation:
1️⃣ Sift the flour, baking powder and sugar into a large bowl and create a well in the centre.
2️⃣ Add in the eggs, melted butter, milk and pumpkin puree and whisk together.
3️⃣ Cook by frying in a non-stick pan with melted butter, cook for 1 – 2 mins on each side or until golden brown.
4️⃣ Segment the orange and mark on a hot griddle.
5️⃣ Serve with a good glug of syrup, sprinkle over the chopped pistachio and caramelised orange.

  • Panqueca de Banana Fit

INGREDIENTES
1 Banana-nanica madura
½ xícara (chá) de Farinha de trigo intregal
1 colher (sopa) de Açúcar demerara ou mascavo
⅓ de xícara (chá) de Leite desnatado ou de coco, aveia
1 Ovo
1 colher (sopa) de Óleo de canola (ou manteiga derretida)
½ colher (chá) de Fermento em pó
1 pitada de Canela em pó
1 pitada de Sal
 Manteiga para untar a frigideira
2 colher de (sobremesa) de Essência de Baunilha

MODO DE PREPARO :
Misture os liquidos e a banana no liquidificador, e aos poucos vai acrescetando a farinha, por último coloque o sal e o fermento, misture novamente para incorporar e desmanchar os gruminhos. Deixe a massa descansar por 10 minutos (isso deixa a panqueca mais levinha).
Em uma frigideira antiaderente pequena ao fogo médio, aqueça e depois com um pedaço de papel-toalha, unte o fundo da frigideira com óleo (ou manteiga). Coloque 1 concha da massa no centro da frigideira (a massa da panqueca fica no formato redondo sozinha, não tente espalhar com uma espátula pois a panqueca pode ficar solada). Deixe dourar por 2 minutos, até a as bordas começarem a firmar e o centro da massa inflar ao redor das bananas, com uma espátula, vire a panqueca e mantenha em fogo baixo por 2 minutos para dourar o outro lado por igual. Transfira para um prato e repita com o restante da massa, untando a frigideira novamente. 
Sirva as panquecas ainda mornas com mel e iogurte cremoso, frutas , doce de leite ou com calda que preferir.

Semi-sweet Cooking Chocolate - 100 Gms

Method
To make pancakes
1. In a medium bowl whisk together egg until creamy. Add in milk and melted butter, whisk until combined well.
2. In another bowl whisk dry ingredients and add it into the wet ingredients. Whisk until combined well. It will be a thick batter. Fold in chocolate chips.
3. Heat a pan over medium heat and either spread a little butter over it.
4. Scoop the batter onto the pan using a 1/4 cup for each pancake. 
5. Cook until you see bubbles on the top, for about 1 minute or so. 
6. Flip them over and cook for another 1 minute.
7. Transfer to serving plate and repeat with remaining batter.
8. Serve pancakes with chocolate ganache

To make the Chocolate Ganache
1. Heat heavy cream and milk in a saucepan. Remove from heat once it simmers. 
2. Pour over chocolate chips and let it sit for 5 minutes without stirring. 
3. Then whisk them well until it turns into a smooth and silky ganache.
4. Wait until it reaches room temperature before pouring it over pancakes.

كف ماهيتابه رو با روغن نارگيل چرب كنين (براي جلوگيري از  از چسبيدن پنكيك ها)
حالا به ازاي هر يك لايه از پنكيكي كه ميخوان بپزين تقريبا يك چهارم ليوان از خميري كه آماده كردين رو داخل ماهيتابه بريزين و آماده كه شد بهمراه تاپينگ موز و بلوبري يا توت فرنگي و سيروپ افرا نوش جان كنين
