Ingredients:
1/2 cup organic pecans
1/2 cup Aus blanched almond meal (may need a little more depending on consistency)
1/4 cup organic desiccated coconut (plus a little extra aside for rolling)
1/4 cup Collide’s macadamia and cashew nut butter
1 cup organic medjool dates 
1 tbs organic maple
Himalayan rock salt to taste (start off with 1/4 tsp)
Protein of choice .

Method:
Place dates, nut butter, maple and salt in food processor, blend until smooth and creamy.  Add dry ingredients and blend until it forms a sticky dough.
Roll into bite sized balls and cover with desiccated coconut.

  • This week's grocery haul: $132! 🛒

I'm going to work on more whole foods and continue to buy as much organic stuff as we can. But, I'm giving up on buying more "clean" personal care and household products. It's just not working out for us financially and I haven't been happy with what's been available for a good price.
.
What isn't shown is toilet paper and some cinnamon rolls from our bakery that were clearanced out. With our organic foods, I'll more than likely be buying produce, dairy, and meat organic. Those are the things that are prominent in our diets. Snacks and condiments aren't, so those can be generic brands to save more money!

I'll be working on a printable wallet-size list to take with to the grocery store compiled of the Clean 15 and Dirty Dozen foods! I'll also be working on my website so I can start sharing much more food and lifestyle stuff, including FREE printables! 🍒

  • For Thanksgiving, an easy way to lower your waste and your exposure to toxins is to skip the canned pumpkin and make your own organic pumpkin puree for pies and bread.

Aluminum cans are lined with plastic. Even cans that are BPA-free still leach hormone-disrupting plastic chemicals and microplastics into the food. I really don’t want estrogen mimickers in my dessert. And, in my opinion, organic food is always the better option.

Making your own puree is easy. Organic sugar pie pumpkins are easy to find this time of year. Bake the pumpkins, puree the baked goodness, and you’re all set to make everything pumpkin. And don’t forget to roast the seeds for a healthy snack.

I bake my pumpkins at 375° for about an hour. After they cool, I peel them and mix the meat in my (glass) blender with a little water. Three pumpkins is enough for 2 pies and 1-2 loaves of pumpkin bread. As for the seeds, I don’t bother cleaning them before roasting them. It’s tedious, and the stringy bits mostly burn and fall off when cooked at such a high temperature.

For the chicken:
@butcher_box organic chicken breast 
½ onion, sliced
1 cup cherry tomatoes 
3 garlic cloves
Sea salt and pepper
Pesto
Mozzarella cheese (non-dairy works!) Directions: 
Preheat oven 350
1. Season @butcher_box organic chicken breasts with Italian seasoning, sea salt and pepper. 
2. Place inside @lecreuset square dish or oven safe dish. Add onion, tomatoes and drizzle a little @kouzinifoods olive oil. 
3. Bake for 30-40 minutes or until internal temp reaches 163F (I use a meat thermometer).
4. Add sliced mozz over the top. 
5. Bake for 3 more minutes or u til cheese melts
6. Top with pesto and tomatoes
7. Pair with @traderjoes cauli gnocchi and steamed broccoli (few posts back)

  • No crust? Toast comes in clutch 👏🏻🍕Celebrating #PizzaFriday and toasting to the weekend with a snack that reminds me of those I ate circa age 5. My mom used to make us English muffin pizzas, and I’m still a huge fan. Also a huge fan of this version because...well, everything’s better on bread 🍞🥳.

Directions: Preheat oven to 400 F. Top slices of your favorite bread (I used @mikeys grain-free bread, but any works) with tomato sauce (my go-to is @raoshomemade) + mozzarella cheese (I recommend buying a block of cheese rather than pre-shredded cheese for two reasons: 1) you get more 🧀 for your money 2) pre-shredded cheese contains anti-caking agents, which are not only yucky, but also prevent the cheese from melting nicely) + @applegate turkey pepperoni (I used a small cookie cutter to cut them smaller). Bake for 5-10 minutes, or until the cheese is melted. Turn oven to broil, and bake an additional 1-2 minutes, or until brown and bubbly 🔥👌🏻. -
