  • Before and after, one pan, minimal work for the dishwasher, quick to make and a great winter warmer. Unfortunately the baby threw most of it on the floor and only ate about 2 mouthfuls... The food refusal game is strong and it's a tough one to deal with because he is normally such a good eater and I get so worried about him not having the right nutrients. He did happily polish off some natural yogurt and blackberries though but I accepted that as a win 🤦🏻‍♀️ #weanin15 #weaning #foodrefusal #onepanmeal #wintercooking #allthegoodness #yoghurtfiend

  • MAPLE GLAZED ROASTED ROOT VEGGIES with chopped walnuts and thyme ✨ This is the perfect Thanksgiving or anytime dish that you won’t be able to stop eating! Super addicting because they are crunchy and sweet and savory and tangy, all in one! 🤤 Paleo, Vegan, and Gluten Free. Here’s how to make:

2 parsnips 
2 carrots 
1 large beet
1 large sweet potato
1 large red onion
1 bunch radishes
1/4 cup olive oil
3 tb maple syrup
1 tsp apple cider vinegar
1 tsp balsamic vinegar
2 cloves garlic, mashed
1/4 cup chopped walnuts
1 sprig fresh thyme (dry is ok too)
Salt & pepper to taste

Preheat oven to 425. While the oven is heating up, wash / scrub all of your veggies. Peel carrots and parsnips and chop into coins, and place into a medium bowl. Cut beet and sweet potato into cubes and place in same bowl. Cut sweet potato into cubes, and red onion into thick slices, and place in bowl. Add mashed garlic. Drizzle with olive oil, maple syrup, acv, and balsamic. Add salt and pepper. Use tongs or your hands to coat all the veggies. Place on parchment lined baking sheet. Bake for 20 minutes. There was absolutely no chopping involved because @kosher_taste frozen diced onions and diced Peppers has made this chili a totally dump it recipe and takes no time to prep. Chili in a total of 30 minutes from start to finish. •
1 bag @kosher_taste Diced onions
2 tbsp. Oil
1 box of @traderjoes beefless ground meat 
1 bag @kosher_taste Diced peppers
1 cup sliced mushrooms
1 tbsp. Cumin
1 tsp. Curry
1 tbsp. Smoked paprika
2 tbsp. Dried parsley
2.5 tsp. Garlic powder
1 tsp. Onion powder
Salt and pepper to taste 
1 can kidney beans, rinsed
1 can black beans, rinsed
2 tbsp. Canned sliced jalapeños (optional) 
2 cans of @bushsbeans Vegetarian baked beans
1 32 oz can fire roasted tomatoes or crushed tomatoes. *or can sub with 2 cans manwich thick and bold sauce. •
In large pot sauté the onions, ground beefless meat, diced mushrooms and peppers together for about 5 minutes.
Then add all the spices, mix well.
Add all the beans and mix well again and let it cook down for about 10 minutes. Then add the fire roasted tomatoes and let the whole thing simmer for about 10-12 minutes before serving. Make sure to season at the end with salt and pepper to taste. 
Serve with a topping of shredded cheese and some sour cream, guacamole and chips on the side!

  • This one pan pulled Mexican chicken has become a weeknight dinner staple. It’s super easy to make, requires little cleaning up and only takes 30 mins 💃 Exactly what you want after a long day at work!

INGREDIENTS:
600g chicken breast (sub for jackfruit or use beans for vegan option)
1 brown onion, diced
2 garlic cloves, minced
800g tinned diced tomatoes
3/4 cup corn kernals (I used frozen corn)
3/4 cup vegetable or chicken stock
1 tbs tomato paste
2 tsp paprika (use 2 normal or 1 sweet and 1 smoked for more of a smokey flavour)
1 tsp ground cumin
1 tsp oregano
1/2 tsp ground coriander
1/2 tsp chilli powder
1 tsp salt
Pinch of pepper
1 tbs olive oil

METHOD
Heat olive oil in a medium sized pot and sauté garlic and onion until translucent.
Add all the spices, tomato paste and stir for 30secs.
Stir in diced tomatoes and stock then add the chicken breast, cover with a lid and simmer for 20 mins until the chicken is cooked all the way through.
Remove chicken breast and shred with two forks.
Put the shredded chicken back to into the pot, add the corn kernels (and beans if using beans them too) and simmer with the lid off for another 5 mins.
I served mine with basmati @tildarice, slaw (details further back in my feed), avocado and fresh coriander 🥑🌱 #tildarice

I N G R E D I E N T S ⠀
⠀
1.5 cup butternut squash, cooked & pureed (boiling is easier & saves a dish, you can also roast)⠀
8 oz elbow noodles (I used whole wheat) ⠀
1 cup milk ⠀
1.5 c cheddar cheese, shredded⠀
2 tbsp parmesan cheese, shredded ⠀
3/4 tsp salt ⠀
⠀
I N S T R U C T I O N S ⠀
⠀
1. Preheat oven to 375. Lightly grease/spray an 8x8 baking pan. ⠀
2. Bring a pot of water with 1/2 tsp salt to a boil. Cook noodles al dente (took about 7 minutes). Drain & set aside in the pot. ⠀
3. In a food processor or blender, combine squash, milk, cheeses, & salt. Crank it up! Blend until silky smooth. ⠀
4. Pour squash-cheese sauce into pot of noodles. Stir until pasta is evenly coated. ⠀
5. Transfer mac & cheese to baking dish. Sprinkle some cheese on top if you want. Bake for 7-8 minutes in the oven or until desired golden crispiness. ⠀

-Add spices like oregano, thyme, and/or black pepper for extra flavor. ⠀
-Top with breadcrumbs & more cheese for a more traditional baked mac. ⠀
-Pumpkin puree is already canned & ready to go; try that in place of squash to save time! ⠀

    So, I generally dislike ‘healthy’ swap style posts. You know, the side-by-side ones with the calorie differences. The raisins instead of chocolate chips. Jesus, take the wheel 😧⠀

    For me, the problem with “eat this, not that” is that it can miss the mark on satisfaction, food preferences, cooking ability, & of course, cost! Sorry, but I’m just not gonna buy 40 medjool dates, pit them, & make “healthy” candy bars 🤷🏻‍♀️⠀

    You can sense a ‘but’ coming, can’t you? 😏⠀

  • My first pick of Vino for your holiday Turkey Day table. This Vino Russo Cabernet is a very well balanced blend of plum and dark fruit. Very elegant for your holiday table and priced under $9.99 🍷 It’s a fuller body red and would pare nicely with pork tender loin or roast beef. Might be a bit fuller bodied for turkey.

I paired it with a rich pan pull of herb potatoes and asparagus nestled around @heinens dry aged steaks. An affordable wine alongside a dinner under $20 is my kind of meal.

Directions
1. Heat 2tbsp of olive oil in a nonstick skillet over medium high heat with 1tbsp of chopped garlic.
2. When the oil starts to pop add the steaks to the pan. Generously season the steaks with salt and pepper. Turn every 30 seconds or so until that beautiful sear starts to appear (approx. 6mins).
3. Remove the steaks and set them aside. Add 2 tablespoons of butter to the pan and some quartered Yukon baby potatoes.
4. Sprinkle with paprika, season salt, thyme and basil, then cover and shake the pan ever minute or so for 4mins.
5. Add the steaks back to the pan and nestle the asparagus in between the steaks. Cover your skillet and let cook for about 2 to 3 minutes.

2 parsnips 
2 carrots 
1 large beet
1 large sweet potato
1 large red onion
1 bunch radishes
1/4 cup olive oil
3 tb maple syrup
1 tsp apple cider vinegar
1 tsp balsamic vinegar
2 cloves garlic, mashed
1/4 cup chopped walnuts
1 sprig fresh thyme (dry is ok too)
Salt & pepper to taste

Preheat oven to 425. While the oven is heating up, wash / scrub all of your veggies. Peel carrots and parsnips and chop into coins, and place into a medium bowl. Cut beet and sweet potato into cubes and place in same bowl. Cut sweet potato into cubes, and red onion into thick slices, and place in bowl. Add mashed garlic. Drizzle with olive oil, maple syrup, acv, and balsamic. Add salt and pepper. Use tongs or your hands to coat all the veggies. Place on parchment lined baking sheet. Bake for 20 minutes. Remove from oven and use tongs to flip/rotate the veggies. Add chopped walnuts and place back into the oven for another 13-15 minutes, until the veggies are roasted to your liking. Remove from oven and add more salt and pepper. Enjoy! #kalejunkie
