  • Whipped up these super easy chocolate peanut butter granola bars last night for hubby 🤤
Warm on stove,
1/2 cup coconut oil 
2/3 cup honey 
1 cup peanut butter (I used peanut, almond and cashew butter
Warm on stove until combined *not boiling
(Don’t do what I did and yack on the phone with your sister and forget about it)😆 @mykitty19932009 
Put in mixing bowl and add,
2 cups rolled oats, and let cool in fridge 10-15 mins, add chocolate chips as many as you like I used about 1 cup of dairy free coconut sugar choco chips. Press dough into parchment lined 9x12 baking dish and refrigerate over night. Cut into squares in the AM and enjoy! 
These are so easy to pop into lunches for a easy and yummy snack 🤗

  • Celebrating my birthday today with a bowl of oats! 🎉 Well just to start the day but not like it’s any different than any other day 😆 Vanilla oatmeal with pumpkin purée, blackberries and strawberries, hemp seeds and pecans.

I’ve busy so occupied with finals that I feel like I’ve barely been keeping up with social media! That used to stress me out a lot. But I’ve learned that when social media becomes a source of stress, it’s best to step away for a bit. Miss you guys though. Hope you have a great Thursday 💕 #pumpkin #oats

  • If you’re wondering why I always show you my in-the-blender smoothie shots...it’s because once they’re blended they often look like 💩💩💩🤣. This one is one of my favorite blends, a mix of frozen cherries, raw cacao, banana, @gardenoflife grass-fed collagen, avocado, cardamom, a pinch of sea salt and a TON of greens (like, an entire @organicgirl clamshell). Blended it with filtered water until it was smooth and shared some with Zack because, you know, I love him. Any day you don’t see a smoothie pic, you can pretty much assume this is what I’m drinking (the cardamom cherry cacao combo is just irresistible, plus who doesn’t want to start their day with chocolate??). ⁣

  • Ready to be hella trendy?
DIY oat milk:
1 c oats
3 c water
Vanilla extract *optional*
Blend al ingredients in blender for 1.5 mins
Be careful not to over blend because it will get gummy
Strain using cheese cloth, milk bag, clean T-shirt, dirty T-shirt whatever works for you!
Done!
That’s right you now know how to save a bunch of money and be a little more eco friendly.

  • Buckwheat, cornmeal and oats are in my muffins this morning. Some coconut oil, eggs and rye starter, Plus the standard baking powder, baking soda and salt. I didn’t add any sugar because I’ve been experimenting with no sugar baking for about 20 years. My body doesn’t do so great with sweets, and I’m curious about how to make baked goods tender and appealing without sweeteners. 
Everything in a baked good has a job to do, and muffins work pretty well without the expected sugar. So do pancakes. I never ever ever ever ever ever ever ever add sugar to my pancake mix and I get kind of upset when I see it in a recipe. People are gonna be drowning the pancakes in syrup! We don’t need to make the actual pancake sweet.

Baking instructors may quarrel with my evangelisms, but I am who I am.

I’m enjoying these muffins this morning. Here’s what I did so you can as well.

Before you go to bed, mix together 
1 heaped teaspoon of rye starter from the fridge
1/2 cup whole-grain buckwheat flour 
1/2 cup stoneground cornmeal
1/2 cup oats
1 cup milk
Stir these together and cover the bowl and let sit on the counter overnight. 
In the morning, add
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 eggs
1/2 Cup melted coconut oil (or butter)

Stir everything together and if the batter looks too thin, as mine did, add 1/4 to 1/3 of a cup buckwheat.

bake in preheated 400° oven for 20 minutes.

  • MAPLE GINGER OATS 🍂 somehow I forgot how gorgeous maple syrup is ~ rectified that this morning with these sweet warming autumn oats 🙌 RECIPE: 1/2 cup whole organic oats, 1 tsp ground @yumandyay_ flaxseed, 1/2 tsp cinnamon, 1 tsp ground ginger, 1/2 tsp @nielsenmassey vanilla extract + 1/2 cup oat milk ➡️ mix all ingredients together in a saucepan over a medium-low heat, adding more milk if you want it a bit creamier (I like mine thickkkk 🥰) topped with maple syrup, banana and a sprinkling of fruit + nut muesli 🤗

My morning started with these oats and were soon followed by some vegan beignets. The food experiences have been so fun and have me itching to get back to the kitchen. 😂 Hoping you all are having a fantastic week so far. ❤️

Banana Cinnamon Oats
1/2 cup rolled oats
1 sliced banana
1/4 tsp cinnamon
1 cup unsweetened vanilla almond milk .
Add ingredients to a sauce pan and bring to a simmer. Allow oats to cook and thicken while stirring occasionally for 5 minutes. Then go ahead and top. 👏🏽

If you’d like to make blueberry chia jam, add 1/2 cup frozen blueberries with 1 tsp chia seeds and a pinch of cinnamon to a small sauce pan. Feel free to sweeten with sugar or maple syrup if you need it to be a little sweeter. Stir and cook consistently as the berries warm through and release their juices. Berries should start to thicken, and you are welcome to lightly mash if you really want a good jam like consistency. Love these right off the stove in the winter, so warm and cozy. 🤤 If you can’t handle chia seeds you can also replace with a pinch of corn starch or agar agar to thicken as it cooks. 👏🏽

    My morning started with these oats and were soon followed by some vegan beignets. The food experiences have been so fun and have me itching to get back to the kitchen. 😂 Hoping you all are having a fantastic week so far. ❤️

    Banana Cinnamon Oats
    1/2 cup rolled oats
    1 sliced banana
    1/4 tsp cinnamon
    1 cup unsweetened vanilla almond milk .
    Add ingredients to a sauce pan and bring to a simmer. Allow oats to cook and thicken while stirring occasionally for 5 minutes. Then go ahead and top. 👏🏽

    If you’d like to make blueberry chia jam, add 1/2 cup frozen blueberries with 1 tsp chia seeds and a pinch of cinnamon to a small sauce pan. Feel free to sweeten with sugar or maple syrup if you need it to be a little sweeter. Stir and cook consistently as the berries warm through and release their juices. Berries should start to thicken, and you are welcome to lightly mash if you really want a good jam like consistency. Love these right off the stove in the winter, so warm and cozy. 🤤 If you can’t handle chia seeds you can also replace with a pinch of corn starch or agar agar to thicken as it cooks. 👏🏽

1 tbsp chia seeds⠀⠀⠀⠀⠀⠀⠀⠀⠀
3 tbsp lemon juice⠀⠀⠀⠀⠀⠀⠀⠀⠀

Prepare jam by adding strawberries to a small pan over low heat. Simmer for 5-10 mins, until bubbling and starting to soften. Remove from the heat and mash a little with a fork. Stir through chia seeds and lemon juice and allow to cool before transferring to a jar. Keep in the fridge for up to 4 days.⠀⠀⠀⠀⠀⠀⠀⠀⠀
