Whipped up these super easy chocolate peanut butter granola bars last night for hubby 🤤
Warm on stove,
1/2 cup coconut oil
2/3 cup honey
1 cup peanut butter (I used peanut, almond and cashew butter
Warm on stove until combined *not boiling
(Don’t do what I did and yack on the phone with your sister and forget about it)😆 @mykitty19932009
Put in mixing bowl and add,
2 cups rolled oats, and let cool in fridge 10-15 mins, add chocolate chips as many as you like I used about 1 cup of dairy free coconut sugar choco chips. Press dough into parchment lined 9x12 baking dish and refrigerate over night. Cut into squares in the AM and enjoy!
These are so easy to pop into lunches for a easy and yummy snack 🤗

If you’re wondering why I always show you my in-the-blender smoothie shots...it’s because once they’re blended they often look like 💩💩💩🤣. This one is one of my favorite blends, a mix of frozen cherries, raw cacao, banana, @gardenoflife grass-fed collagen, avocado, cardamom, a pinch of sea salt and a TON of greens (like, an entire @organicgirl clamshell). Blended it with filtered water until it was smooth and shared some with Zack because, you know, I love him. Any day you don’t see a smoothie pic, you can pretty much assume this is what I’m drinking (the cardamom cherry cacao combo is just irresistible, plus who doesn’t want to start their day with chocolate??).

» Galletitas de calabaza, canela y chocolate (sin huevo y 0 complicación) ¡Atención! Me las he inventado sobre la marcha con un pelin de calabaza que sobró, dos cosillas más y no creí que saldrían y oye, que han quedado coj....muy buenas de sabor!!
Receta:
- varias cucharadas de avena (5-6)
- un poquito de calabaza ya asada/cocida (3-4 cucharadas de la pulpa)
- canela (al gusto)
- trocitos de choco negro
- una cucharadita de semillas de chia remojadas en agua previamente (con el doble de cantidad de agua, aprox)
- mezclar tooodo bien con las manos, formar bolitas, aplastar un poco en papel de horno y pa' dentro 20-25 min a 180-200° **Consejo: unos hilitos de miel o de sirope de datil para que se una todo mejor
Esperar a que enfríen (endurecerán más) y a un tarro, duran 2-3 días perfectamente.

I’ve been getting back into overnight oats lately! 😋 It’s one of my favorite breakfasts, and keeps me really full and satisfied all morning. My basic oats recipe is:
+ 1/2c old fashioned oats
+ 3/4c unsweetened vanilla almond milk
+ 1tsp brown sugar
With that base, I add in some fun mix-ins and toppings - this week I’ve been doing a 1/2tsp maple extract in the mix, then topping with 1/4c frozen blueberries before I microwave in the morning (would rather do fresh, but they are SO expensive up here in the frozen tundra during the winter 😩)

Thinking that next week I might try stirring some PB2 into the mix, and topping with banana!

SAVOURY OATS BOWL!!
When someone utters the word oats most of us are drawn towards its sweet preparations. Here is a savoury version for all those who love oats and savoury food.
I used basic ingredients to prepare this delectable bowl. I flavoured my oats with oregano, paprika and garlic powder. You can always use what's handy to you.
I finally topped the bowl with a sunny side up egg, thai basil, cherry tomatoes and pumpkin seeds.
Not only is the bowl delicious but satisfies the body's nutrient requirements to keep you fueled up throughout your day.
Got these vibrant and fresh tomatoes from @agrotieindia. You guys should try them out too, go organic go healthy.

Blueberry Banana Bread🍌💙

Ingredients:
3 bananas, mashed
1/2 cup frozen blueberries
3 eggs
1-1/2 cup quick oats
1/2 cup almond flour
3 Tbsp honey
1 Tbsp coconut oil
1 tsp vanilla extract
1 tsp baking soda
1/4 tsp salt

Instructions:
* Preheat oven to 350F
* Mash bananas in a medium size bowl
* In a large bowl, combine all ingredients except blueberries
* Add mashed bananas into large bowl, mix
* Add frozen blueberries into large bowl and gently fold into batter
* Pour batter into loaf pan, lightly coated with cooking spray
* Bake at 350 for about 60 minutes
* Cool loaf for about 15 minutes on a rack, remove from pan, slice, and serve!

With a busy run-up to Christmas for everyone, I thought I'd share a few recipes that are delicious and also nutritious. Here's a fab brunch recipe that you can just pop in the oven and serve with a big dollop of @clandeboye_yoghurt 😋. Spiced Granola-stuffed Apples:
RECIPE:
In a bowl, combine 8 tbsp oats, 1 medium or several small finely grated carrots, zest of half an orange, juice of a whole orange, big handful of roughly chopped mixed fruit and nuts (@lidlni do a great mix), 1/2 teaspoon of ground cinnamon, ginger, cardamon, pinch of mixed spice and 2 tbsp of honey or maple syrup until you have a sticky mixture.
Slice the top off 4 Bramley apples and carefully hollow out the apple without going through to the bottom
Fill with the spiced oats mix and pop the lids on
Bake at 170 C for 20-25 mind until just tender.
Serve with yoghurt.
Enjoy

DIY oat milk:
1 c oats
3 c water
Vanilla extract *optional*
Blend al ingredients in blender for 1.5 mins
Be careful not to over blend because it will get gummy
Strain using cheese cloth, milk bag, clean T-shirt, dirty T-shirt whatever works for you!
Done!

Buckwheat, cornmeal and oats are in my muffins this morning. Some coconut oil, eggs and rye starter, Plus the standard baking powder, baking soda and salt. I didn’t add any sugar because I’ve been experimenting with no sugar baking for about 20 years. My body doesn’t do so great with sweets, and I’m curious about how to make baked goods tender and appealing without sweeteners.
Everything in a baked good has a job to do, and muffins work pretty well without the expected sugar. So do pancakes. I never ever ever ever ever ever ever ever add sugar to my pancake mix and I get kind of upset when I see it in a recipe. People are gonna be drowning the pancakes in syrup! We don’t need to make the actual pancake sweet.
Baking instructors may quarrel with my evangelisms, but I am who I am.
I’m enjoying these muffins this morning. Here’s what I did so you can as well.
Before you go to bed, mix together
1 heaped teaspoon of rye starter from the fridge
1/2 cup whole-grain buckwheat flour
1/2 cup stoneground cornmeal
1/2 cup oats
1 cup milk
Stir these together and cover the bowl and let sit on the counter overnight.
In the morning, add
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 eggs
1/2 Cup melted coconut oil (or butter)
Stir everything together and if the batter looks too thin, as mine did, add 1/4 to 1/3 of a cup buckwheat.
bake in preheated 400° oven for 20 minutes.

Lazy winter breakfast.. overnight oats with grated apples , nuts warm milk and some fresh seasonal fruits , drizzle of honey , company of family and lots of laughter what else can you ask for . My favorite strawberries have arrived and with persimmons they make a great balance of sweet and tart. -Colocar en la batidora y/o procesadora el guineo, la leche, mantequilla de mani y el cacao mae en polvo. Haga puré hasta que esté completamente suave: la mezcla debe ser espesa. Agregue más líquido si es necesario para que se mezcle completamente. .

Combine bananas, almond milk, peanut butter, Cacao Mae powder in a blender. Puree until completely smooth - the mixture should be thick. Add a touch more liquid if necessary to get it to blend completely smooth.

40 g buckwheat groats (soaked and rinsed)
35 g cashews (soaked and rinsed)
100 g blueberries, frozen or fresh
1 banana, frozen or fresh
200-300 ml almond/coconut milk
1/4 tsp vanilla bean powder
A pinch of salt
METHOD
Blend all the ingredients until smooth and creamy. Top with more fruits and crunchy granola!

SPICED COCONUT BLUEBERRY PORRIDGE, serves 2
105 g rolled oats
400 ml water
200 ml coconut milk
1/4 tsp ground cinnamon
1/4 tsp ground cardamom
Pinch ground ginger
Pinch salt
Toppings:
Wild blueberries
Coconut chips
Peanut butter
Maple syrup
METHOD
Combine all ingredients over medium high heat and bring to boil. Turn down the heat and let simmer for 4-5 minutes, stirring from time to time until you have the consistency you like. Top with blueberries, coconut chips, maple syrup and peanut butter.

MAPLE GINGER OATS 🍂 somehow I forgot how gorgeous maple syrup is ~ rectified that this morning with these sweet warming autumn oats 🙌 RECIPE: 1/2 cup whole organic oats, 1 tsp ground @yumandyay_ flaxseed, 1/2 tsp cinnamon, 1 tsp ground ginger, 1/2 tsp @nielsenmassey vanilla extract + 1/2 cup oat milk ➡️ mix all ingredients together in a saucepan over a medium-low heat, adding more milk if you want it a bit creamier (I like mine thickkkk 🥰) topped with maple syrup, banana and a sprinkling of fruit + nut muesli 🤗

Banana Cinnamon Oats
1/2 cup rolled oats
1 sliced banana
1/4 tsp cinnamon
1 cup unsweetened vanilla almond milk .
Add ingredients to a sauce pan and bring to a simmer. Allow oats to cook and thicken while stirring occasionally for 5 minutes. Then go ahead and top. 👏🏽

If you’d like to make blueberry chia jam, add 1/2 cup frozen blueberries with 1 tsp chia seeds and a pinch of cinnamon to a small sauce pan. Feel free to sweeten with sugar or maple syrup if you need it to be a little sweeter. Stir and cook consistently as the berries warm through and release their juices. Berries should start to thicken, and you are welcome to lightly mash if you really want a good jam like consistency. Love these right off the stove in the winter, so warm and cozy. 🤤 If you can’t handle chia seeds you can also replace with a pinch of corn starch or agar agar to thicken as it cooks. 👏🏽

Prepare jam by adding strawberries to a small pan over low heat. Simmer for 5-10 mins, until bubbling and starting to soften. Remove from the heat and mash a little with a fork.
