2 T olive oil 
1 stick salted butter
1 onion, minced
2 T garlic, minced
3 c mushrooms, sliced 
2 tsp ground thyme
2 T flour
1 1/2 c cubed bread
4 c chicken stock 
1 c heavy cream
salt/pepper

DIRECTIONS:
In a stockpot, heat the olive oil and half the stick of butter.  Sauté the onion. After the onion is done, add the garlic, the mushrooms, thyme, and the butter.  Cook until the mushrooms start to get golden. Add the flour and stir to coat the mushrooms. 
Add the broth and bring to a simmer. Cook for a few minutes, until smooth, then season with salt and pepper. Stir in the cream and bread.  #mushroomsoup #cooksinthekitchen_

  • We all have certain levels of trauma from our past. Perhaps we were physically or sexually abused as children, or had parents who neglected us or failed to demonstrate normal human affection.  Often these things come up in marriage, and can create tremendous hurdles in your ability to show up for your partner in the ways you should.  And the crazy thing is, many of the traumas from our past that are holding us back and keeping us trapped in this state of eternal conflict, are things we can’t even remember!  Even though we may not be able to remember the event from our past, it is still there affecting us today.  Every experience we ever had over our life formed and molded us into who we are today.  Psychedelics when used properly in the proper set and setting, have the potential to allow us to process and reconcile traumatic events from our past In a way that they no longer control us.  The event still happened of course, but after a psychedelic therapy session, it no longer dictates our current behavior.  This is exactly what I personally needed to finally be able to show up in my marriage.  It gave me access to empathy which I previously had a very hard time accessing within myself. But caused me to truly care about others.  It caused me to be able to see things from my wife’s perspective in a way that caused me to have compassion and love for her rather than almost constant shut down and withdrawal at every little thing that bothers me.  It is the most incredible thing!  And I owe this literal personality change to the amazing wonder of psilocybin! .

  • Just 8 easy-to-find ingredients (mushrooms, lentils, potatoes, broccoli, olive oil, black pepper, salt, shallots) and 40 min. to cook, you will have soup for dinner, which is high in fiber, vitamins and minerals. 
Ingredients:
Mushrooms, 10 pieces;
Dry red lentils, 1/2 cup;
Potatoes, 2 pieces, medium;
Broccoli, 6 florets;
Olive oil, 1 tablespoon;
Black pepper, 1/4 teaspoon
Salt, 1/2 teaspoon;
Shallots, 3 pieces;
Water.

How to make:
1 – Rinse and soak lentil in 1/2 cup water for at least 2-3 hours;
2 - Chop shallots finely;
3 - Slice the mushroom into strips;
4 - Cut potatoes to the same size;
5 - Cut broccoli florets in halves;
6 - Fill a medium pot with water;
2 - Put mushrooms in the pot;
3 - Add salt and black pepper;
4 - Cook mushrooms for about 15 minutes over medium heat;
5 - Add shallots, broccoli, potatoes, lentils and cook fo 25 minutes;
6 - Turn heat off;
7 - Add olive oil and stir;
8 - Let stand covered for  10 minutes.

Day 4 of Aberdeen Restaurant Week and my fourth stop was to @howiesrestaurant! I decided to go off piste today and surprisingly didn’t order the haggis starter (I must be sick or something 🤷🏻‍♀️) but opted for the ‘smoked trout pate’ instead which was really tasty. My only issue was the ratio of pate to oatcakes - I ran out of oatcakes but still had half my pate to eat! However 10/10 to the manager for noticing and bringing me some more 🙌🏻 My main course was a no brainer - I bloody love coconut so it had to be the ‘coconut, tomato, lentil and pumpkin curry’ 🤤 I love going to Howies anyway but ARW is a great incentive to go for lunch on a work day - it’s such great value for money!

  • Rainy weather calls for creamy mushroom soup and freshly baked baguette from the store🥖 .
.
Ingredients:
1. 1 white onion, chopped 
2. One packet of mushrooms, sliced
3. 3-4 cloves of garlic, minced
4. 3-4 cups of chicken broth
5. 1 cup light cooking cream
6. 2 tbsp corn flour 
7. 1/4 tsp dry thyme 
8. Salt and pepper to taste 
9. Dill to garnish, optional 
Instructions:
1. Place pot on medium heat, add some generous amount of olive oil, mushrooms and garlic. Stir till mushrooms water evaporates and gets almost browned. Stir in onions till translucent.
2. Add in chicken broth and bring to boil for 5-6 mins then add in cream and dried thyme. Boil for 1-2 mins.
3. At corn flour to 1/4 cup of water, mix well then add to soup for thick consistency. Let it simmer for 5 mins then add salt and pepper to taste. Garnish with dill and serve with sliced baguette on the side. Enjoy 🥖

  • 🍄🥣Cozy mushroom soup! Like most of my soups, this is more technique than an exact recipe. Use a mix of mushrooms or just one. Regular old button mushrooms work great but you can add shiitake, cremini, oyster, porcini, etc. for added flavor. To watch the video, look at my latest story highlights. ⁣

•Sauté one diced onion with a few cloves grated garlic, a little minced fresh thyme if you have it, salt and pepper in 4 Tbs butter or olive oil. You can use more if you’re feeling indulgent - there are recipes that use a whole stick of butter since mushrooms and butter are bbfs. Sauté until onions get a little golden on the edges, 5-10 minutes.⁣
⁣
•Add about 8 cups cleaned and sliced mushrooms. For this soup I used a pound of cremini, and 8 oz of shiitake. Sauté 15-20 minutes, stirring every so often. Deglaze with a good splash (1/4 - 1/3 cup) white wine, sherry or mirin. Stir to scrape any brown bits at the bottom of the pan. Lots of flavor there!! ⁣
⁣
•Once wine is mostly evaporated, add 4-5 cups chicken or veg stock.  Bring to a simmer, cover with lid slightly ajar and cook another 20 minutes. Let it cool a bit and purée to desired consistency. Usually I like mine a little chunky but super smooth is also nice. Finish with cream or half n half if desired (I’m a fan) and a drizzle of olive oil. If I’m being fancy I’ll garnish with a few mushrooms sautéed in olive oil and seasoned with salt and pepper. A simpler (and totally delicious) garnish is a round of toasted baguette rubbed with olive oil! 🤤🍄🥣 Tag me if you make it!!⁣

  • MUSHROOM EGG DROP SOUP coming to you courtesy of my mother-in law. She's a genie in the kitchen. Immensely grateful for her! Not only does she help me with the kiddos but she's always feeding me. 😏😌⁣

Soup 👉🏼 Sauté chopped onion, 2 cups shredded carrot, 1 clove minced garlic and grated ginger in a small pot. Fill 2/3 of the pot with water, 4 tbsp vinegar, 3 tbsp Oyster sauce, 2 tbsp soyce sauce, 1 tbsp bouillon or substitute with @betterthanbouillon, and Sea salt to taste. Once soup starts to boil add 2 tbsp corn starch. In a bowl beat 3 eggs and add them slowly while stirring the soup. Add chopped mushrooms and cubbed firm tofu. Turn stove off after 1-2 minutes. Added sriracha when served.

  • Cold outside + feeling poo = SOUP!
Today’s soup of choice is mushroom.
.
One of my favourite soups this one. Whenever I make it, I try and always mix up the mushrooms. Sometimes just wild sometimes just chestnuts but always delicious.
.
Fancy giving it a go.....
.
2 banana shallots, roughly chopped.
2 garlic cloves, finely sliced.
A handful of fresh thyme leaves.
600g of mixed mushrooms (shiitake, baby button, chestnuts)
Olive oil.
Butter.
Salt and white pepper.
Chilli flakes, optional.
1l of Chicken stock.
100ml double cream.
.
STEP 1:
In a large pot add a couple of nods of butter and a good drizzle of olive oil. Add the shallots, garlic and thyme and gently fry until they are soft trying not to colour much.
.
STEP 2:
Turn up the heat and add all the mushrooms, keeping small ones whole and tearing up any big ones. Give season and add the chilli flakes if you are using. Then give it a good mix and cook over a high heat till the mushrooms have released all their moisture and cooked away.
.
STEP 3:
Remove a few mushrooms to use for garnishing when the soup is ready. Pour in the stock, bring to a boil and simmer for 30 minutes.
.
STEP 4:
Using a ladle transfer in stages the soup mixture into a blender and whizz to a smooth and silky consistence or whizz in the pan using a stick blender. Check the seasoning stir in the cream and mix. Garnish with the reserved mushrooms, a drizzle of good extra virgin olive oil and some fresh chopped herbs.

  • 🇺🇸⬇️𝔸𝕟𝕫𝕖𝕚𝕘𝕖Veganes Weihnachtsmenü: die Vorspeise! Wie versprochen präsentiere ich euch in diesem Jahr eine vegane Weihnachtsmenü Idee - inspiriert von unserem, polnischen Menü an Heiligabend (Wigilia).

Bei uns ist Heiligabend ganz traditionell gestaltet - und ich liebs. Hier in Deutschland sind wir eine sehr kleine Familie (meist sind wir nur zu 4. oder 6. an Heiligabend), aber es ist immer wieder sehr liebevoll und schön. Hier einige Traditionen:
✨Auf dem Tisch befindet sich immer ein freier  Platz mit zusätzlichem Gedeck. Das steht symbolisch für verstorbene Familienmitglieder aber auch für „Offenheit“, falls ein unerwarteter Gast kommen sollte. Jeder ist herzlich willkommen.
✨Auf dem Tisch befindet sich auch ein kleiner Teller mit Weihnachtsoblaten, etwas Salz und ein paar Münzen.
✨Papa liest vor dem Essen ein Gebet und danach werden die Oblaten in Stücke gebrochen und verteilt. Jeder teilt dann mit dem anderen ein Stück (als Zeichen der Liebe und Versöhnung) und wünscht dem anderen etwas.
✨Nachdem Essen wird erst einmal gesungen. Einige freuen sich mehr (ich), andere weniger (mein Bruder 🤣).
✨Und dann steht schon die Bescherung an.

Ich habe mich bei meiner Mama nach Rezept erkundigt (natürlich kocht sie ohne Rezepte und Mengenangaben 😅 - aber ich habe eine grobe Vorstellung erhalten, wie das Ganze zubereitet wird) und Ich werde euch im Laufe dieser Woche eine typische Vor-, Haupt- und Nachspeise zeigen. Als Vorspeise kocht Mama die leckerste Steinpilz Suppe😍! Serviert wird sie mit kleinen Nudeln.
Leicht abgewandelt, teilweise improvisiert und etwas vereinfacht habe ich die Pilzsuppe vegan nachgekocht. Natürlich geht nichts über Mamas oder Babcias Essen, aber ich bin mehr als zufrieden über meine erste eigene Pilzsuppe👏🏼!

I’m so glad it’s Thursday and weekend is right around the corner. I definitely need some sleep, cooking and fresh air in my life after this week! But even though the week has been one of the hardest during this autumn, it has also inspired me a lot and helped me to see my future work dreams clearer than ever!
