  • Mushroom, Gravy & Delikatess Potato Skillet by @missmarzipancom 💚 Potatoes and mushroom, always a great savory combination, simple vegan pleasures.

1 cup + 2 tsp (250 ml) oat-based cooking cream (or soy or whatever you like)
3 tbsp + 1 tsp (50 ml) white wine/cooking wine
1 tsp vegetable stock powder
1/2 tsp garlic powder (or 1 clove crushed garlic)
A pinch of sweet paprika
5 asparagus spears, each chopped into thirds
Around 9 oz (250 g) brown button mushrooms/forest champignons, cleaned and sliced in half
1.65 pound (750 g) delikatess potatoes (or very small new potatoes)
Salt and pepper to season ▫️
Boil the washed and scrubbed potatoes, skins on, for around 15 minutes, adding the asparagus for the final 2-3 minutes of cooking time.
Meanwhile sautée the halved mushrooms in an oven-safe skillet (I prefer cast iron) until they are turning golden (I tend to use a little oil for this). In a medium sized bowl, mix the plant cream, wine, stock powder, garlic powder and paprika. Stir to combine.
Add the cooked potatoes to the skillet along with the asparagus. Pour over the gravy mix.
Allow to bubble away on the stove top for around 3 minutes or until the alcohol has cooked off and the gravy is turning brown and lovely.
Pop the skillet under your grill on high heat 400-425°F (200-220°C) for 2-3 minutes or until the the tops of the goodies in the skillet are browning.

  • Black Bean Quinoa Chopped Salad 🥗🌱

Recipe
makes about 6 servings

Ingredients:
2 cups cooked quinoa
1 (15oz.) can of black beans, drained and rinsed, OR about 2 cups homemade cooked black beans
1 large green bell pepper, diced 
1 large red bell pepper, diced 
2 cups cherry tomatoes, quartered
1 small red onion, diced
a good handful of fresh parsley or cilantro leaves, chopped
1 large avocado, chopped
1 Tbsp extra virgin olive or avocado oil
3 Tbsp fresh lime juice
1/2 tsp ground cumin
sea salt and fresh ground black pepper to taste (about 1/4 teaspoon each)

Instructions:

In a large bowl add all the ingredients and very gently stir to combine.

You can serve this immediately or place in airtight containers and refrigerate.

  • Итог сбора 18.09.19🇧🇾 Дожди только пошли! Нового слоя грибов пока нету! Несмотря на засуху, грибы продолжали свой рост! Растут, классически, где больше влаги(низины, вдоль болот) Ключевое дерево для роста, береза! Однозначно грибы массово ещё выйдут в этом сезоне!

    Итог сбора 18.09.19🇧🇾 Дожди только пошли! Нового слоя грибов пока нету! Несмотря на засуху, грибы продолжали свой рост! Растут, классически, где больше влаги(низины, вдоль болот) Ключевое дерево для роста, береза! Однозначно грибы массово ещё выйдут в этом сезоне!

  • PORTOBELLO HUMMUS TOAST #Vegan 🍄🍞 si te digo que en cada bocado te explota la boca por la cantidad de sabores y texturas sabrosas que hay en algo TAN simple pero a la vez TAN nutritivo con ese toque gourmet que lo hace especial: me crees?? Testeando un nuevo producto: hummus natural 🙌🏻🙌🏻 Es de @kyroshummus y ahora que estoy bien de la panza: no dejo pasar esta delicia!! 👉🏻alguna lo probó ya? Cuéntenme! ✔️VAMOS A LA RECETA:
-1) tostar un pan a elección: integral, gluten free, lo que tengan! (Si son fan del ajo, pueden raspar un poquito de ajo para impregnarle sabor)
-2) agregar 1 cucharada MUY generosa de hummus clásico @kyroshummus (tiene varios gustos, por ahora probé este y LO AMÉ)
-3) saltear 2/3 taza portobellos (algunos los corté y a los más chiquitos los dejé enteros) con aceto balsamico y un poquito de azúcar mascabo para que queden agridulces y bien bronceaditos!
-4) agregar ciboulette picado por arriba.
-5) terminar con unas nueces picadas.
