  • Min andra Mirror glaze-tårta. Följde samma recept på glazen som sist, men hade i annan fyllning. Det är köpt (tyvärr) sockerkaksbotten, med apelsincurd,smörkräm och täckt med Nutellamousse. Gjorde för första gången chokladlöv, (av apelsinchoklad), som jag sen målade med ätbart guld. #mirrorglaze #mirrorglazecake #cake #tårta #nutella

  • Seasonal baking can be so simple, even during fall.
Chestnuts are a familiar flavor in the colder months and in Switzerland you can get your hands on freshly roasted chestnuts at almost every corner 🌰🍁
I love their complex, sweet, nutty flavor with the rich, buttery texture. I mean they’re one of my fave things about this time.
Last year I paired chestnuts with chocolate and blackcurrant and this match was winning me over. So I decided to recreate this wonderful combo but experimenting a little with new techniques. And this cake is what came up 👀
The outside looks simple and clean, but the new special feature is inside. I created a pinwheel insert by combining layers of chestnut choux pastry sponge with layers of raspberry and blackcurrant compote and layers of silky and creamy Waina white chocolate and chestnut whipped ganache 🌀
Each single layer is not quite perfect - I have some progress to make - but the cake just tastes amazing and that’s what matters most!
From bottom to top you’ll find:

Raspberry Inspiration crunchy layer with caramelized maple syrup chocolate puff rice and buckwheat | pinwheel insert made with chestnut choux pastry sponge, raspberry and blackcurrant compote and Waina white chocolate and chestnut whipped ganache | Caraïbe dark chocolate, chestnut, wildflower honey and vanilla whipped ganache | natural purple colored mirror glaze 💜

  • Back to Saturday glazing video day! Who else is excited about it?? I always have some expectations to how my cake will look like, but the final effect is still way different from what I expected even tho after glazing so many cakes I should know better than this is something you can not predict🤨😂 I mean unless you use just one colour 😅

So, speaking of one or multicolour glazing. What is your preference? From looking at my IG you can clearly say that  I'm all the way in to multicolour glazing 😃 I'm finding using three colour combo to be working best for me , ut rainbow glazing is super cool too, just head back to my previous post and try to count how many colours I've used in my rainbow doughnut cake🤨😃

To be honest,  I'm feeling exhausted after the last few weeks of work that involved me in being extroverted more than I would willingly be if I wouldn't have to 😂😅 only introverts will understand I Guess😅 
So what I'm trying to say is that I'm really looking forward to this super busy weekend of doing excitingly nothing at all except eating, reading, watching Terminator, wait what part is it, like 26th?! awwww and then eating again 😆
All the maybe I shouldn't eat that much as I need to make weight for next week competiotion. 🙄
