I am not vegan but I try to be as balanced as I can, I don't eat too much meat, dairy or eggs, just the right amount that will avoid me from taking Vit B12 pills as a substitute. (VitB12 indeed can be taken only from animal origin). We have so many ingredients and spices out there to overeat too much of the same thing.
As I always mention, I don't believe in restriction and limitation but in variety and moderation.
Here is the recipe for about 40 🍆balls: -5eggplants
-100gr of parmisan
-130gr of bread crumbs (plus some spoons for the breading)
-1clove of garlic if you like it
-2eggs
-Salt& Pepper
-Fresh mint or basil or thyme or the spice you prefer
-Extra Virgin Olive Oil

These eggplants balls can be fried but I prefer to make them healthier and bake them instead. 
First wash the eggplants, pinch them with a fork and bake them for about 30minutes in 200C° ventilated mode.
Remove then the eggplants from the oven, peel them and smash them trying to remove the water from them.

Then mix all the ingredients, create the balls, cover them with bread crumbs and bake them at 200C° for 15minutes.

If you prefer not to eat eggs just put about 500gr of quinoa instead ;)
