๐Ÿ’กWet the chips 30 minutes in advance and wrap them with a foil so they do not burn quickly. Locate it near the burners of your grill.Close the lid and you have a smoked meat from any home grill.

โฌ‡๏ธ my method for tender amokeribs:
1๏ธโƒฃ smoke until 75C/167F
2๏ธโƒฃ wrapped until  95C/203F
3๏ธโƒฃ 2 hours rest inside thermo box
.

๐Ÿ’ก if you go for sous vide you can Make the meat tender by low and slow 80C/176F cooking for 20 hours. Than cooled it down by 30 mins in ice water and finally allow another smoking step of 2-3 hours.

  • Carne Diem Maldives by Ignis Maximus opened at The Marina at Crossroads Maldives last night. One year in planning and designing the 750 Celcius Grill Oven to produce a phenomenal heat involved a prototype at Nihonbashi and the resulting taste profile is wow. We use #oigen cast iron pans from Iwate, Japan that can handle up to 1200 Celcius to make the beef crackling as an appetizer and we are the only steak restaurant in the world to use #globalknives cutlery. The square black plates were designed in collaboration with Midaya Ceramic and we produced an absolutely stunning plate. The steak house is probably the oldest restaurant concept and Carne Diem is proud to contribute to the #steakrevolution and new temperature to finish the reverse sear.

Another reminder of why this is my favorite meat cut. fast burning in very high heat. 930F/500C on my bravo 60 wood fire oven until reaching an internal temperature of 57 C / 134 F. it was after one hour inside my big green egg and 10 mins rest before the direct fire finish. 
3 more minutes rest before cutting.  WOW!

100 Oz #wagyu #beef chuck. The cut portion for serving is also known as the Denver Cut Steak is Flavor-rich and super marble meat.

Reverse sear method step by step:
The meat rest on the top floor away from the source of heat. Getting more and more tenderness,  smoke and aroma from wood chunks of used wine barrel located at the bottom of the grill close to the burners. Beneath all that goodness fresh vegetable that get the dripping of the fat with the taste of the spices. this vegetables gonna be the perfect side with special juicy taste. Just put them fresh as they are.

Use only one or two burners to stabilize the temperature around 120-140 ยฐ C. Do not go over to 150 ยฐ C to prevent process of searing the meat. Waiting for about two hours to reach the your internal target temperature inside the meat (use temperature probs). The For me the target temperature is  about 53-54 degrees Celsius (medium-rear). the thermometers should be placed close to the bone where it is area in the steak that harder for heat penetration. At this stage let the meat a rest of 2-3 minutes and meanwhile increase the burners to the maximum heat. 2 minutes of searing on each side, another 2-3 minutes of rest and it's ready to be your perfect steak. This is one of the only ways to achieve a same cooked and color from edge to edge by using grill only.

REVERSE SEAR method ๐Ÿ‘Š๐Ÿป The meat rest on the top floor away from the source of heat. Getting more and more tenderness,  smoke and aroma from wood chunks of used wine barrel located at the bottom of the grill close to the burners. Beneath all that goodness fresh vegetable that get the dripping of the fat with the taste of the spices. this vegetables gonna be the perfect side with special juicy taste. Just put them fresh as they are.

Use only one or two burners to stabilize the temperature around 120-140 ยฐ C. Do not go over to 150 ยฐ C to prevent process of searing the meat. Waiting for about two hours to reach the your internal target temperature inside the meat (use temperature probs). The For me the target temperature is  about 53-54 degrees Celsius (medium-rear). the thermometers should be placed close to the bone where it is area in the steak that harder for heat penetration. At this stage let the meat a rest of 2-3 minutes and meanwhile increase the burners to the maximum heat. 2 minutes of searing on each side, another 2-3 minutes of rest and it's ready to be your perfect steak. This is one of the only ways to achieve a same cooked and color from edge to edge by using grill only.

Another reminder of why this is my favorite meat cut. fast burning in very high heat. 930F/500C on my bravo 60 wood fire oven until reaching an internal temperature of 57 C / 134 F. it was after one hour inside my big green egg and 10 mins rest before the direct fire finish. 
3 more minutes rest before cutting.  WOW!

Smoked rib โžก๏ธ three-two-one method:
3 hours exposed
2 hours wrapped in foil
1 hour exposed
It is important to moisten the meat with a spritz or brush with any liquid Every half hour - Beer / natural juice / wine or just water with spices that you cooked a bit.

The method enables to get the good smoked flavors, while preserving the juiciness of the meat and the curvature of all flavors together, while continuing low and slow cooking under a foil cover but finally crispings finish!!!

REVERSE SEAR method ๐Ÿ‘Š๐Ÿป The meat rest on the top floor away from the source of heat. Getting more and more tenderness,  smoke and aroma from wood chunks of used wine barrel located at the bottom of the grill close to the burners. Beneath all that goodness fresh vegetable that get the dripping of the fat with the taste of the spices. this vegetables gonna be the perfect side with special juicy taste. Just put them fresh as they are.

Use only one or two burners to stabilize the temperature around 120-140 ยฐ C. Do not go over to 150 ยฐ C to prevent process of searing the meat. Waiting for about two hours to reach the your internal target temperature inside the meat (use temperature probs). The For me the target temperature is  about 53-54 degrees Celsius (medium-rear). the thermometers should be placed close to the bone where it is area in the steak that harder for heat penetration. At this stage let the meat a rest of 2-3 minutes and meanwhile increase the burners to the maximum heat. 2 minutes of searing on each side, another 2-3 minutes of rest and it's ready to be your perfect steak. This is one of the only ways to achieve a same cooked and color from edge to edge by using grill only.

An hour and a half in the smoke inside my BigGreenEgg with date honey, pepper and salt generously.  Smoke step Up to an internal temperature of 53 degrees Celsius (127F). 10 minutes rest and than cutting to a 3-finger thickness steak. One minute direct fire burn on my Napoleon sizzle zone on each side.  Another short rest and we are finally ready!!!

PERFECT SKIRT STEAK

REVERSE SEAR method ๐Ÿ‘Š๐Ÿป The meat rest on the top floor away from the source of heat. Getting more and more tenderness,  smoke and aroma from wood chunks of used wine barrel located at the bottom of the grill close to the burners. Beneath all that goodness fresh vegetable that get the dripping of the fat with the taste of the spices. this vegetables gonna be the perfect side with special juicy taste. Just put them fresh as they are.

Use only one or two burners to stabilize the temperature around 120-140 ยฐ C. Do not go over to 150 ยฐ C to prevent process of searing the meat. Waiting for about two hours to reach the your internal target temperature inside the meat (use temperature probs). The For me the target temperature is  about 53-54 degrees Celsius (medium-rear). the thermometers should be placed close to the bone where it is area in the steak that harder for heat penetration. At this stage let the meat a rest of 2-3 minutes and meanwhile increase the burners to the maximum heat. 2 minutes of searing on each side, another 2-3 minutes of rest and it's ready to be your perfect steak. This is one of the only ways to achieve a same cooked and color from edge to edge by using grill only.

Reverse sear method:
The meat rest on the top floor away from the source of heat. Getting more and more tenderness,  smoke and aroma from wood chunks of used wine barrel located at the bottom of the grill close to the burners. Beneath all that goodness fresh vegetable that get the dripping of the fat with the taste of the spices. this vegetables gonna be the perfect side with special juicy taste. Just put them fresh as they are.

Use only one or two burners to stabilize the temperature around 120-140 ยฐ C. Do not go over to 150 ยฐ C to prevent process of searing the meat. Waiting for about two hours to reach the your internal target temperature inside the meat (use temperature probs). The For me the target temperature is  about 53-54 degrees Celsius (medium-rear). the thermometers should be placed close to the bone where it is area in the steak that harder for heat penetration. At this stage let the meat a rest of 2-3 minutes and meanwhile increase the burners to the maximum heat. 2 minutes of searing on each side, another 2-3 minutes of rest and it's ready to be your perfect steak. This is one of the only ways to achieve a same cooked and color from edge to edge by using grill only.
