As I was writing “beef & cheese bowl” it reminded me of the scene in elf when he says “You smell like beef and cheese, you don’t smell like santa” and I literally started laughing out loud at the gym 😂😂😂 .

Ingredients:
4 oz ground beef 
1/4 cup cheese sauce
2 tbsp sour cream 
2 tbsp Sliced Jalepenos 
2 slices of Colby jack
Seasonings of choice

.
Instructions:
1. Season & cook ground beef on stove. Set aside when done.
2. Cut slices of cheese into 3 pieces each. Salt them. Broil on parchment paper until edges turn light brown. Let cool & harden.
3. Combine all ingredients. Enjoy! .

Macros: recipe makes 1 serving 
Calories: 514
Fat: 42g
Protein: 31g
Net carbs: 3g
Fiber: 0g

For the seasonings I used 1 tsp salt, 1/2 tsp black pepper, 1/2 tsp red pepper, 1/2 tsp cayenne pepper, & 1/4 tsp garlic powder.

The cheese sauce was from Walmart and I think the brand is Ragu. It was in the pasta aisle and has 2 net carbs per 1/4 cup. .

  • The only thing I really miss on this Keto journey is a good sweet, cold treat. Especially ice cream! If it didn’t make me feel sick, I’d eat ice cream for breakfast, lunch, and dinner. I would put a large spoonful of it in my morning coffee. I REALLY like ice cream.

Here's a quick 15 min Recipe🍴:⁣⁣
⁣⁣
1 lb shrimp⁣⁣
4 cups Collard Greens⁣⁣
2 Tbsp minced Garlic ⁣⁣
1/2 chopped Yellow onion⁣⁣
1 chopped scallion⁣⁣
3 Tbsp Red Chili Powder (Indian)⁣⁣
1 Tsp ground Ginger ⁣⁣
1/4 Tbsp Black Pepper⁣⁣
2 Tsp Cumin⁣⁣
1Tbsp curry powder ⁣⁣
1Tsp Paprika⁣⁣
1 Tbsp Tumeric⁣⁣
2 Bay Leaves⁣⁣
1 juice of whole lemon⁣⁣
3 Tbsp butter⁣⁣
4 Tbsp Heavy Cream⁣⁣
⁣⁣
1. Add 2 Tbs butter to pan, once melted add onions, garlic. Let em cook down until theyre golden brown.⁣⁣
⁣⁣
2. Toss in 1 Tbs of butter to pan and add collards. Once they cook down, and you know they're good add all your seasoning to the pan and mix.⁣⁣
⁣⁣
3. Add 1Tbs of butter and Heavy Cream to greens and throw in the shrimp.⁣⁣
⁣⁣
4. Once shrimp is cooked you're done. Serve over Cauliflower Mash or by itself

  • 🌮 Keto Taco Night.....well my kids are having normal Tacos but we are using up last nights mince and I melted some Parmesan cheese mixed with mozzarella in the oven, then folded them over a spoon to set and crisp up. 🥑 I made an avocado salsa to go with them
