📝INGREDIENTS
For Steaks:
4 pork chops, bone in or boneless (about 1-inch thick)
Salt and pepper, to season
2 tablespoons olive oil, divided
2 tablespoons butter, divided
6 garlic cloves lightly crushed with the back of a knife, divided
6-8 thyme sprigs, divided (or rosemary or parsley)
For Mushroom Sauce:
2 cloves garlic crushed
1/2 cup of chicken broth
1 cup sliced brown mushrooms
3/4 cup heavy cream 
2 teaspoons fresh chopped parsley
1 teaspoon fresh chopped thyme

👩🏼‍🍳INSTRUCTIONS
Season chops with salt and pepper. Heat oil and butter in a frying pan or skillet over medium-high heat until butter is melted.
When pan is hot, sear chops for about 5 minutes per side until golden browned and the centre is no longer bright pink. Transfer to a warm plate. Set aside.
Add the mushrooms to the buttery juices in the pan and cook for 3-4 minutes over medium heat. When mushrooms are browned, add the crushed garlic and sauté for 30 seconds until fragrant. 
Pour in the wine (or broth) and cook until liquid has reduced by half (about 3 minutes). Add the cream and bring to a simmer. Add the herbs and season with salt and pepper, to your taste.
Add the chops back into the sauce, allow to simmer for a minute to heat through. Serve immediately.

While this is one of our favorite warm winter comfort meals, this is delicious whenever and a 💯 in our go to recipe book!

Meatloaf Ingredients:
-1 pound of grass fed beef
-1 pound lean ground turkey
-1/2 cup blanched almond flour
-8/9 cloves of munched garlic
-2 tbsp coconut aminos
-2 large eggs beaten
-1 cup diced yellow onion -1 tbsp onion powder
-1 tbsp garlic powder
-salt and pepper to taste
-1/3 cup tomato paste
- Additional 2 tbsp tomato paste separated from 1/3 cup portion

Meatloaf Directions:
1. Topping: Sauté 2/3 cup onion, minced garlic in ghee until the onion is translucent. Add coconut aminos and tomato paste and stir until mixed well. Set aside.
 2. Mix all other ingredients together in large bowl. Add the other 1/3 cup of onion into meat mixture. Add 2 tbsp of tomato paste. 
3. Grease a bread loaf pan (we used 9x5) and bake meat mixture for 30 minutes at 375. 
4. Take out and add topping mixture on top of the meatloaf. Bake in oven for an additional 30 minutes until meat is cooked through •
Cauliflower Ingredients:
-2 heads of chopped cauliflower
-2 tbsp ghee or butter
-3 cloves of garlic -1 tsp onion powder
-salt and pepper to taste
•
Cauliflower Directions:
1. Place chopped cauliflower into a large pan of boiling water.
2. Boil for 15 minutes until cauliflower is soft. Strain cauliflower and dry off.
Try to get the cauliflower as dry as possible.
3. In the same pan that the cauliflower was baked in, add 2 tbsp butter (or ghee), 3 tbsp of heavy cream (or almond milk for dairy free), and 2 oz of cheese of choice(optional) in with the strained cauliflower. 
4. Use an electric hand mixer to mash cauliflower. Pulse until mashed consistency is achieved. #ketolishchi •

Ingredients
Grain-free Breaded Shrimp
1 tsp baking powder
1/2 cup Coconut Flour
1/4 cup Moon Cheese Pepperjack
1/4 tsp Sea Salt
1/8 tsp black pepper
1 lb shrimp peeled and deveined
1 large egg beaten
Oil for Frying
No-sugar Added Bang Bang Sauce
1/4 cup Real Hellmann’s Mayo
3 tbsp Easy Keto Sweet Chili Sauce
1 tsp Sriracha
1/4 tsp lime juice
1 tbsp Fresh Chives optional for garnish

Instructions
Add baking powder, coconut flour, Moon Cheese, salt, and black pepper to a food processor
Blend until the Moon Cheese becomes more like a flour/meal (there will be a few larger bits and that's ok. Transfer to a shallow bowl so that you can bread the shrimp
Dip each shrimp into the beaten egg then coat it with the breading mixture. Place the coated shrimp on a plate until all are coated
Heat your oil to 350 degrees in a frying pan
Fry the shrimp for approximately 1 minute per side then transfer to a paper towel-lined plate for draining
Add ingredients for the No Sugar Added Bang Bang Sauce to a bowl. Mix with a fork.
Place the breaded shrimp on a serving dish and top with the Bang Bang Sauce drizzle as well as the fresh chives.

👉Não vou colocar quantidade pq depende do tamanho do tabuleiro (pirex) que usar. Corte as fatia no comprimento da berinjela. Em fatias finas. Deixe de molho em agua com gotas de vinagre (usei de maçã) para tirar o amargo por 20 minutos. Depois coloque as fatias em agua fervente por 8 minutos para amolecer. Alterne camada de berinjela, molho de carne moída, muçarela até o final. Finalize com molho, muçarela e parmesão. Forno com papel alumínio por 20 minutos e depois mais 10 para gratinar.
. 👉Carne moída: 500gr mais ou menos (usei patinho), meia cebola picada, cebolinha, azeite e passata de tomate.
Refogue a carne com sal, cebola no azeite, quando tiver no ponto, coloque cebolinha, passata, um pouco de água pra dissolver o molho e deixe em fogo baixo por 10minutos. Ajuste o sal a gosto.

  • 2019 has been quite the year for me thus far….

I would love to tell you I’m this perfect person that does everything keto perfect all of the time, but I’m not! IG feeds and real life don’t always match up! And I initially started this account for transparency and accountability. Travels, birthdays, anniversary, death, birth, amongst other things happening around me have left my keto journey to be a yo-yo gaining and losing the same 10 pounds. BUT I can’t blame anyone for that! My latest highlight in the last couple of weeks, has been the birth of my precious little niece, Zoe.

I hate the cliche I’ll start Monday, but since I got back into town a couple of Sunday’s ago I did an official refocus and restart. Sometimes I’m like I could be skinny (I shouldn’t say skinny as I’m a southern girl after all, and a lil thick ain’t never hurt nobody) by now if I would just keep my keto streak perfect, but perfection is less important than consistency! Since I’ll never attain perfection, I might as well maintain consistency, trip ups and all! Now that I’m back on track I’ve decided I’m gonna push past my original keto weight loss goal and lose another 20 pounds (or whatever feels right), which I think would be good for me. It’s something about that keto feeling! It can’t really be explained but once you experience it, you know!

Anyway! Thanks to all of you that are still here rockin’ witcha girl! Earlier this year I wrote what I now call the “Get It Right Keto List”. It’s simply a list I wrote as a reminder to myself, and I thought it may help some of you also. If you love it share it! Even tag someone that could use a little keto love! :-)

  • Wanna know one of my favorite things about my job? Is that I’m home with the kids everyday. I’ve been there for them every moment since they were a baby. My job is to take care of myself, to be healthy, and be my best self. The people that I’m around everyday inspire me to be better. I get to control my day.  I get to watch people grow, crush their goals, and get to be part of it. I didn’t know anything about social media until a year and a half ago...I’m definitely not a writer...I took a leap of faith to try something....to put myself out there and document my journey. I knew there was more to life then a 9-5 job. The cool thing about the ketones, is they sell themselves. They are game changing! Have your tried them? 
To have a job to be healthy and show people how capable they are. Helping them realize their strengths. Empowering them to dream bigger and love THEMSELVES harder. Watching them realize their worth. Encouraging them to fill up their own cup FIRST.

I get alot of questions of how quickly one can lose weight on Keto. To be honest everyone is different. Some may lose it quick some may take more time. But that shouldn't matter. What matter is staying CONSISTENT and not giving up! Just be patient! .
