Whenever we're cooking multiples, we like to try out different rubs and sauces to find out what everyone likes best. It's no different for this week's #TraegerGameDay Ribs! Peak the fun we had in the prep, spelling out TRAEGER on the ribs!

These ribs were cooked using the 3-2-1 method. We rubbed these down with @badfish_bbq Sweet Fire before giving it some Smoke Therapy. The wrapping stage saw it get some orange juice and honey. The glaze came from @joeskc classic BBQ sauce. Much darker than the other rack but just as delicious!

  • Hello friends! For several years I've been working on a traditional Indian equivalent of the hand hammered wok. A tool so strong and indestructible; that would make light work of breaking down onions and tomatoes and could sit sturdy on a home range, bbq, live fire or gas ring as it does on a traditional mud chulha. With high sides suitable for stirring curries and a gentle enveloping heat for silky daals and melting lamb dishes, beautiful enough to present at the table.

My Indian partner and I scoured the country following leads that ended in flimsy pinned 'fire pit' makers. Nowadays these traditional skills are only maintained by makers of  massive weighty kadhais made for weddings, banquets, and temple gatherings. They are often stamped on massive machines. The original kadhai, that would have once been in a family home has been replaced by modern cookware.

We're happy to report, after gaining the trust of a whole village and remaining traditional makers, a kadhai suitable for the home. The last one of which was made by this maker's grandfather. The family were still using it, testament to the strength and durability of this ancient cooking vessel. They weigh 7.5 kg each!   • Anatomy of a dish: ‘Lobster Rolls.’ For these tasty little morsels, we wanted to create a local, seasonal take on one of our (everyone’s?) favorite east coast treat. We started by sautéing sliced Oregon lobster mushrooms in plenty of butter with aromatics, tucked them into Chinese bao buns, steamed them until piping hot and served them with a creamy dollop of ginger scallion mayo.
