Deze veel gezondere, glutenvrije koekjes met een beetje honing zijn echt heerlijk.🍪 2 druppels Lemon🍋en 2 druppels Orange🍊 uit de starterkit erdoor maken het echt af, onze nieuwe favoriete herfstkoekjes!

Acá va la receta: -
Ingredientes:
.

115g manteca pomada a temperatura ambiente 
100g azúcar común
½ cucharadita extracto de vainilla
1 huevo
Ralladura de 1 limón
2 cucharadas jugo de limón
¼ cucharadita sal
¼ cucharadita polvo de hornear
Pizca grande de bicarbonato de sodio
210g harina 0000
½ taza aprox. de azúcar impalpable, para cubrir las cookies

Prender el horno a 180 grados. -

En un bowl grande mezclar bien manteca y azúcar común con batidor de alambre.
Agregar vainilla, huevo, jugo de limón y ralladura y mezclar bien otra vez.
Agregar harina, sal, polvo de hornear y bicarbonato a la mezcla anterior. Formar una masa. 
Si esta muy blanda unas horas a la heladera.
Poner azúcar impalpable en un bowl o plato hondo. Hacer bolitas del tamaño de una nuez con la masa y pasarlas por el azúcar hasta que queden bien cubiertas (yo las aplasté un poquito con una cuchara a mitad de la cocción) 
Poner en las placas enmantecadas dejando un poco de lugar para que se agranden mientras se hornean.
Hornear por 12 a 15 minutos, hasta que apenas estén empezando a dorarse y estén agrietadas.
Enfriar sobre rejilla de metal. .

I’m not a massive cake person but for some reason I LOVE loaf cakes, what about you?

Blueberry lemon pound cake
.
Wet
.
3/4 cup almond milk
3/4 cup sugar
2 tsp vanilla extract
3 tbsp veg oil
half lemon, juiced and zested
1/2 cup non dairy yoghurt
.
Dry
.
2 cups all purpose gluten free flour
1/4 tsp xanthan gum
1.5 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
1 cup blueberries
.
Preheat oven to 180•c and line a loaf tin. Mix all wet ingredients together in a bowl until smooth. In a another bowl, add all dry ingredients apart from blueberries. Stir to combine, then add to the wet ingredients and mix to form a smooth batter. Fold through 3/4 cup blueberries, saving the rest. Fill loaf tin with batter and sprinkle blueberries on top. Bake for 60 mins, until golden and a toothpick comes out clean. Cool completely before slicing.

  • I must say this week went by very quickly but I’m definitely glad it’s Friday! Lunch today is baked brown sugar glazed salmon 🐟 (picked up from Publix seafood counter) with warm lemony spinach mushroom salad 🍋🍃 and a hard boiled egg 🥚. To make the lemony spinach mushroom salad you will need:
.
4 cups loose baby spinach. 
2 tablespoons extra virgin olive oil.
1 cup sliced cremini mushrooms.
1/4 tsp. garlic powder.
Squeeze of lemon.
Salt and pepper to season.
1 tablespoon water. 
Lemon olive oil dressing (recipe below)
.
Add 4 cups of loose baby spinach into a bowl. Heat 2 tablespoons olive oil in a medium pan on the stove top. Add 1 cup sliced cremini mushrooms and sauté 3-4 minutes. Season with salt, pepper, a little garlic powder and a squeeze of lemon. Add a tablespoon of water and let it reduce 2-3 minutes. Remove mushrooms to a bowl and set aside. .
For the dressing: In a small mason jar combine 1/4 cup extra virgin olive oil, juice of a lemon, 1/2 teaspoon salt, 1/2 teaspoon ground black pepper and 1/2 teaspoon granulated garlic. Close lid and shake vigorously. 
Drizzle some of the dressing onto the spinach to taste and toss to coat the leaves. Drain the excess mushroom liquid that settles in the bowl. Add the warm mushrooms to the spinach and toss to combine. Add more dressing if desired.
