INGREDIENTS :

1 large egg

1 tablespoon 
milk

1 tablespoon 
olive oil

1 tablespoon 
coconut flour

1 tablespoon 
almond or hazelnut flour

1/4 teaspoon 
baking powder

Pinch 
salt

Optional add-ins:

1/4 cup 
grated cheese

1 tablespoon 
minced scallions or herbs

INSTRUCTIONS

Whisk the egg, milk, oil, coconut flour, nut flour, baking powder, and salt together in a small bowl. Add the cheese and scallions or herbs, if using, and stir to combine.

Pour into a tall microwave-safe mug and tap the bottom firmly on the counter a few times to force any air bubbles to rise and pop. Microwave on high for 1 minute, 30 seconds.

Invert mug onto a cutting board and let the bread slide out. Cut crosswise into 1/2-inch-thick slices. To toast, heat a teaspoon of oil in a small skillet over medium-high heat until shimmering. Recipe: 
1.5 lbs (700g) medium raw shrimp, peeled and deveined
1.5 (700g) asparagus (1 bunch) rinsed and trimmed
3 tablespoons butter
1 tablespoon olive oil
5 clove garlic, minced
1 teaspoon Italian seasoning
2 teaspoons onion powder
Salt and fresh cracked pepper, to taste
1/4 cup (60ml) vegetable stock
1 tablespoon Sriracha (or any hot sauce you like)
Crushed chili pepper flakes, optional
Juice of 1/2 lemon
Fresh chopped parsley or cilantro, for garnish
DIRECTIONS

1. Place a large non-stick skillet with 1 tablespoon olive oil and 1 tablespoon butter over medium heat. Add the asparagus and season to taste. Saute until the asparagus is crisp-tender, 4-6 minutes. Remove from the pan and set aside.

2. In the same pan, add remaining 2 tablespoons butter and add shrimp. Season with salt and pepper, cook 1-2 minutes on one side.

3. Add the minced garlic, Italian seasoning, and onion powder. Stir to combine and flip the shrimp to cook on the opposite side.
Cook for 1 minute then add 1/4 cup vegetable stock and Sriracha. Allow the sauce to reduce for 1 minute, making sure not to overcook the shrimp.

4. Push shrimp on the side and add asparagus back to the pan. Stir asparagus to coat them into the sauce and squeeze half of a lemon over the top of the shrimp and asparagus. Allow reheating for 1-2 minutes. Remove from heat, garnish with parsley, lemon slices, and red crushed chili pepper if you like. INGREDIENTS:⁠⠀
8 eggs⁠⠀
8 oz. package cream cheese⁠⠀
1/4 cup grass-fed salted butter⁠⠀
1 tsp vanilla extract⁠⠀
1 Tbsp coconut flour⁠⠀
1/2 tsp baking powder⁠⠀

INSTRUCTIONS:⁠⠀
1. Allow eggs, butter, and cream cheese to come to room temperature.⁠⠀
2. Preheat oven to 350 degrees F. Grease an 8x4 inch loaf pan and line with parchment paper for easier removal. ⁠⠀
3. Combine eggs, softened butter & cream cheese, and vanilla in a high-speed blender. Blend until smooth. Add coconut flour and baking powder and pulse until combined.⁠⠀
4. Pour batter into the pan, and bake for about 50 min-1 hr, or until firm in the centre.⁠⠀
5. Allow cooling. Refrigerate for a few hours or overnight before slicing to use for the french toast sticks.⁠⠀
6. Slice into approx. 24-36 stick shapes, or whatever size and shape you desire. ⁠⠀
7. Heat a Tbsp of butter in a skillet over low-medium heat. Fry the sticks in batches, turning until golden brown on all sides. ⁠⠀
8. Optional: Dip french toast sticks in a mixture of 1-2 Tbsp sugar-free sweetener mixed with 1/2 tsp cinnamon to coat.⁠⠀
9. Dunk in choczero syrup, and enjoy!!!⁠⠀
