INGREDIENTS
- 3 whole eggs + 1 egg white
- 1 tsp baking soda
- 3/4 cup cashew or Keto butter
- 1 heaping scoop of Vanilla Collagen
*Optional: Unsweetened chocolate chips
INSTRUCTIONS:
1. Pre-heat oven to 350 F.
2. Mix with an electric or stand mixer whole eggs, egg white, and baking soda until peaks form. Add cashew butter and vanilla collagen and continue mixing a few minutes.
3. Stir in desired amount of chocolate chips and pour batter into desired cake pan, cupcake tins, or bread loaf pan.
4. Baking time will vary depending on type of pan you use. Larger pans will take longer while cupcake tins will take the least amount of time. (15 – 25 minutes) I used these mini springform pans and baked them for about 20 minutes.

Toppings (optional): •1 cup shredded cheese •1/4 cup finely chopped cilantro •Half banana pepper, sliced •2 tbsp diced red onion •1 tbsp pico de gallo

Directions: •Preheat oven to 400 degrees F •Halve avocados & remove seed, peel skin from each half & slice. •Crush pork rinds in a gallon plastic bag or use a food processor •Toss avocado slices in pork rind crumbs until evenly coated •Arrange on cast iron skillet or similar pan & bake for 20-25 mins or until golden brown •Remove from oven & sprinkle with shredded cheese, return to oven for 3-4 minutes or until cheese has melted •Remove from oven & add your toppings!

Macros with toppings (per serving) Approx 6.3g net carbs

Congrats, the hardest week is in the books! It's smooth sailing from here! ⛵

Week 2: make sure you're getting enough protein. You need 0.6-0.8g protein per pound lean body mass, depending on how much you work out. You can Google a lean body mass calculator, or just use goal weight minus about 20%. Then, eat enough protein from now until infinity. That's it for this week!

You don't need to track calories on keto. But if you're dying to know, you can Google a calorie needs calculator, subtract 500 off maintenance, and use that- I bet it's higher than you think! In fact, if you've been trained to fear calories this might help you feel more comfortable eating more. As you enter fat adaptation, your appetite will naturally decline. Until then, be patient... Week 3:
How is your intake of veggies looking? Don't neglect the leafy greens stuff! It's super important for your gut health, which is super important for overall health. In fact, new research shows that the majority of chronic diseases start with an unhealthy gut. Even just adding a Caesar salad with dinner is a good start!

If there's a veggie you hate, that's fine. I hate mushrooms and kale. Sue me. But if you are picky enough that your diet is likely suffering, you might want to pick up some of the vitamins listed in my meal plan.

And while I'm at it, less than 20 net carbs a day isn't better, it's just a sign you need to eat more veggies. Ketosis is a metabolic state that is on or off, there are no bonus points for super low days.

  • I love trying on clothes. I went from a size 11 in jeans to a size 5 and this dress is a size small in juniors when I used to wear a large. I am so happy I decided to do something about my weight at the beginning of the year. I used to hate to look at my naked body in the mirror or try on clothes, now I have so much confidence in my own skin. I’m 10 lbs away from my goal weight of 135!! #ketotransformation #keto #ketodiet #weightloss #weightlossjourney

My digestive system slows down to snail pace when I'm pregnant, as does most mothers to help grow their precious babies. I'm really conscious about adding additional fiber into my diet daily to keep my digestive system going. You really want to avoid the additional strain on the bowel and the possibility of hemorrhoids (common side effect of pregnancy and labour). After issues with this in the past my current favourite go to is snacks containing dates and natural prune juice. 
Here's one recipe I love! 
Premium Medjool Dates
Your favourite natural nut butter. I love Almond or Peanut Butter
Raspberries 
Cacao Nibs 
A perfect snack even if you're not pregnant as it's high fiber, high in good fats and beneficial antioxidants. The hardest part is stopping at 2 or 3! Delicious 🤤

  • Shakshuka with coconut flour 'naan' for dinner, it was delicious and so filling (and I was starving after so much swimming today!)
I haven't made shakshuka since I've been keto, but it's still a pretty good keto meal! I did cut the tomaties in half from what I use to do and added some bacon (everything is better with bacon). This meal was still 18 carbs (6 fiber so only 12 net carbs but still) so pretty hefty, but I planned for it and had salami, cream cheese, and olives for lunch to save my carbs for dinner. 
The coconut flat bread was ok but it wasn't the same as good homemade real naan. Enough butter made it better 😂

  • The girl on the left was someone who would hide behind those god awful filters and think that was beauty and scared to take charge of her own world but now the woman on the right.. She blows my mind and continues to do so everyday, she’s become so confident and strong. Beyond blessed to see how far I’ve became and yet to become. This year has blew my mind and made me grow into the woman I am and yet to become. Most don’t understand that you go through a physical change but yet you go through a mental health change too! • • • •

  • Maybe you caught my story of me slicing into this fabulous little fried-boiled “froiled” @peteandgerrys egg... it was magical 🙌🏻

I brought one inch of water to a rapid boil, put the eggs in, covered them, turned the heat down to medium and let them cook for exactly 5 minutes and 30 seconds.

One more minute would have made them perfect! But when I broke into the first one it was so not done! 😬 I’m all for runny yolks but runny whites... just can’t do it. That’s when I decided to fry them up in some #kerrygold to help the whites set on the inside.

I had them with roasted garlic cauliflower and avocado. So satisfying and delicious 🤤
