Base:
3/4 cup roasted hazelnuts
1 cup coconut flakes
1 cup dates, pitted
Blend until sticky and press down in muffin molds
200 g dark chocolate
2 tbsp coconut oil, cold pressed
2 tbsp carob powder
Pinch sea salt
Melt the coconut oil with the chocolate, add the carob and salt and mix well. Pour over the base. 
Let it set overnight in a cool place or in your freezer or fridge until hard enough to take out the molds. Enjoy!

🌱Zutaten für zwei Portionen⠀
▪10 Stangen Schwarzwurzel⠀
▪125 ml Sojasahne oder Hafersahne⠀
▪5 EL Erbsen (Ausm Glas, oder eingeweicht & gekocht)⠀
▪1 St. helle Zwiebel⠀
▪2 TL pflanzliche Butter⠀
▪Etwas Olivenöl⠀
▪Etwas Salz & geschroteter Pfeffer⠀
▪1 MS geriebene Muskatnuss⠀
▪1 EL geriebene Zitronenschale⠀
⠀
🌱Zubereitung⠀
☑Die frische Schwarzwurzel schälen, am besten mit Mehrweghandschuhen o.ä, da sie extrem einfärben und anschließend in mundgerechte Stücke schneiden - gleich in eine Schüssel mit kaltem Wasser und einem Schuss Zitronensaft, da sie sehr schnell oxidieren⠀
☑Die Schwarzwurzeln in einem Topf mit Wasser für etwa 10 Minuten kochen lassen, anschließend in ein Sieb geben und abtropfen lassen⠀
☑Die Zwiebel in feine Streifen schneiden und in einem kleinen Topf mit der pflanzlichen Butter glasig anschwitzen⠀
☑Jetzt die Schwarzwurzel und die Erbsen mit dazugeben und für etwa 10 Minuten bei kleiner Flamme rösten⠀
☑Zum Schluss die pflanzliche Sahne dazu geben und kurz mitrühren. Sie sollte nicht allzusehr mitkochen, da sie ansonsten ausflockt⠀

3 Tbsp @nutraorganics matcha latte blend⠀
1/2 tsp vanilla extract ⠀
Coconut whipped cream⠀
Coconut ice cream⠀

Method :-⠀
1. Add ice, milk, matcha and vanilla to a blender, and blitz till you have an ice slushy. Add a scoop of ice cream into each cup, pour over frappe and top with whipped cream 🍵.⠀

Iced Ayurvedic velvet latte + iced golden latte (to serve 1)⠀
⠀
1) Add 1/2 cup ice to your cup, and fill up with ice cream. Top with preferred milk.⠀
2) Dissolve 1 Tbsp of @nutraorganics beetroot turmeric velvet latte or golden latter in 1 Tbsp hot water, then pour into glass. Serve with a sustainable straw, and drink immediately.⠀

    3 Tbsp @nutraorganics matcha latte blend⠀
    1/2 tsp vanilla extract ⠀

    Method :-⠀
    1. Add ice, milk, matcha and vanilla to a blender, and blitz till you have an ice slushy. Add a scoop of ice cream into each cup, pour over frappe and top with whipped cream 🍵.⠀

    Iced Ayurvedic velvet latte + iced golden latte (to serve 1)⠀

    1) Add 1/2 cup ice to your cup, and fill up with ice cream. Top with preferred milk.⠀
    2) Dissolve 1 Tbsp of @nutraorganics beetroot turmeric velvet latte or golden latter in 1 Tbsp hot water, then pour into glass. Serve with a sustainable straw, and drink immediately.⠀

  • Today in vegan batch cooking...pad Thai fixings. I air fried some tofu that I had tossed in coconut aminos, olive oil and cornstarch, chopped alllll the orange bell peppers and cucumbers and cilantro, and made a delicious pad Thai sauce using a combination of onions I had chopped and frozen & a bunch of ingredients from my pantry and fridge supplies. So good! The little face in the last pic says it all (this was her face after eating a tiny piece of sauce covered rice noodle...I don’t think she’d ever had pad Thai before, she was in LOVE 😂😍😋)

  • Anoche tenía ganas de hacer las galletas que subió Javi @recetasdejavi el otro día, porque se veían cuáticas, pero me di cuenta de que no tenía aquafaba ni vainilla 😅 así que adapte su receta con las cosas que tenía.

GALLETAS DE LIMÓN Y CHOCOLATE🌠
Encender el horno a 180C. Luego, mezclar en un bowl 1/2 tz. de azúcar rubia (o más si son muy dulces), 1/4 tz. aceite, 1/2 tz. leche de soya y 2 cdas de chía. Se agregan 2 tz. de harina, 2 cdtas. polvo de hornear, la ralladura de 1 limón y se mezcla todo. Al final se agrega chocolate picado o chips de chocolate (si no tienes, puedes omitir).
Con una cuchara ayúdate para hacerle la forma a las galletas sobre la lata del horno (poner aceite para que no se peguen) o en una lámina de silicona. Procura dejar espacio entre ellas porque se expanden un poco. Hornear por 20 min a 180C. Sale  10 galletas grandes.

Es una buena alternativa para darles a probar a quienes no son veganos en casa y enseñarles de a poco que se puede comer rico sin ingredientes animales 🤭. Que tengan buen domingo! .

  • Good morning! It's the weekend! 🙏🙏🙏Started mine with a run by the river and now refueling with this chocolate chia raspberry parfait. How to 👇 This week has been tough but hoping to recharge this weekend. And get some proper rest. Sleeping is not great for me. Don't know about you  How are you finding things? Stay safe and well everyone.
🍫🍫🍫
To make:
- Mix a tbsp of chia seeds with 100ml almond milk and a little maple syrup. Leave overnight in the fridge.
- In the morning soak 1/3 cup oats in 100ml warm water. When the water's absorbed add in a further cup of water, a handful of sultanas and cook slowly storing occasionally.
- When the oats are done stir in 1/2 a ripe mashed banana, a heaped tsp of cacao powder and a little vanilla and cinnamon.
- Next crush your raspberries with a little lemon juice (and maple syrup if you like it sweeter) and add to a glass.
- Top the raspberries with the chia pudding, followed by the chocolate oats.
- Add frozen raspberries, banana slices and a drizzle of crunchy peanut butter.
- And enjoy!

VEGAN BROCCOLI CHEDDAR SOUP! 🥦⠀

RECIPE⠀
Ingredients⠀
4 cups broccoli florets⠀
1 onion, chopped⠀
2 cups almond milk or any unsweetened plain plant milk⠀
3 cups filtered water⠀
1 1/2 tbsp “Not chicken” bouillon⠀
1 cup celery,chopped⠀
1 cup carrot, chopped⠀
1-2 golden potatoes, chopped⠀
1/2 tsp black pepper⠀
CHEDDAR CHEESE SAUCE⠀
Juice of 1 lemon⠀
1/2 cup raw cashews (soaked for 20 minutes in hot water)⠀
1 cup carrot, chopped⠀
1 cup potato, chopped⠀
1 cup unsweetened almond milk⠀
1/2 cup water⠀
1 tsp salt⠀
1/2 tsp pepper⠀
1/2 tbsp garlic powder⠀
1/4 cup nutritional yeast⠀

Instructions :⠀
1. Soak raw cashews in hot water for 20 minutes. (Discard water and add into cheese sauce later⠀

3.Pour almond milk, two cups of filtered water and 1 1/2 tbsp “not chicken” bouillon. Whisk together until bouillon is dissolved. Bring to a simmer for about 5 minutes. Add potatoes and carrots cook for 10 minutes then add broccoli and celery; simmer until all the vegetables are tender, about 15 minutes.⠀
6. Meanwhile make “cheddar sauce”. In a large pot bring 4 cups of water to a boil. Add copped potatoes and carrots to the pot and let cook for 15 minutes or until tender.⠀
7. Once potatoes and carrots are cooked, Drain the potatoes and carrots (discard the water) and place all your cheddar sauce ingredients into a high-speed blender or food processor and blend until smooth. Pour the sauce into the pot and stir to combine. Simmer for 5 minutes and then serve hot! Enjoy.

  • 🇬🇷 Roasted Chickpea wraps with vegan tzatziki by @thekindestplate 💙⠀

For the roasted chickpeas⠀
1 can of no sodium chickpeas⠀
Juice from 1 lemon⠀
1 tsp of olive oil⠀
Pinch of oregano⠀
Pinch of salt⠀
Pinch of pepper⠀
For the Tzatziki⠀
1 cup of veganaise⠀
Juice from 1/2 lemon⠀
1 tbsp of red wine vinegar⠀
2 tbsp of shredded cucumber⠀
2 cloves of garlic pressed⠀
Tsp of olive oil⠀
Pinch of pepper⠀
Thumb size amount of fresh dill chopped (or more depending on your preference)⠀
For the wraps⠀
Pita bread⠀
Red onion, chopped⠀
Tomatoes, chopped⠀
Lettuce, chopped⠀
Preheat oven to 350F.⠀
In a small bowl, mix the chickpeas in the lemon and olive oil. Add the spices then spread over a cookie sheet.⠀
Bake for 10-15 minutes or until chickpeas are roasted.⠀
While the chickpeas or cooking mix together all the ingredients for the vegan tzatziki. Place in fridge and let cool while you chop your veggies.⠀
Chop all your veggies for the wrap.⠀
In a small frying pan on medium heat, warm the pita breads to soften them.⠀
Once chickpeas are cooked, combine everything to the pita, wrap in a piece of parchment paper and enjoy.
