Mothais a la Feuille je francuski kozji sir koji potiče iz regije Poitou-Charentes u zapadnoj Francuskoj. Ime je dobio po gradu Mothe-Saint-Héray u kojem se sir proizvodi i prodaje od 19. veka. 2002. godine sir je dobio AOC oznaku za zaštitu standarda kvaliteta.
Sveže kozje mleko koristi se za spravljanje sira koji potom sazreva u prostoriji sa neuobičajeno velikom vlagom. Tokom perioda sazrevanja prekriven je oblogom od lišća kestena.
Mothais a la Feuille ima meku teksturu koja sa godinama postaje gusta. Jedinstvena kombinacija ukusa zemlje, limuna i kestena postaje intenzivnija kako sir sazreva.

  • Друзья!🤗 По вашей просьбе, сегодня ризотто с белыми грибами. 
Нам понадобится:
280гр риса 🍚 
1шт лук шалот 🧅 
3-4 белых гриба
1/2 стакана белого вина 
500мл овощного бульона 
50гр сливочного масла 🧈 
100гр пармезана
Петрушка
Соль
Перец
Оливковое масло

Итак,для начала чистим грибы и нарезаем их. Затем очищенный лук 🧅 мелко шинкуем. На разогретую сковороду наливаем оливковое масло и выкладываем лук. Как только лук станет прозрачным, добавляем к нему рис и обжариваем несколько минут постоянно перемешивая. 
Затем заливаем все вином, и даём ему выпарится. Как только вино выпарилось, уменьшаем огонь 🔥 и начинаем понемногу добавлять бульон,постоянно помешивая рис. Одновременно добавляем грибы, солим и перчим по вкусу. 
Когда рис 🍚 почти готов, выключаем огонь и добавляем сливочное масло, пармезан и рубленную петрушку. Хорошо перемешиваем и даём нашему ризотто постоять пару минут.

    Нам понадобится:

Suntem alături de micii producători din Italia🇮🇹 cu care lucrăm la @sardinbucharest încă de la începuturile noastre.

Împreună facem parte din același lanț care, zilele astea, stă să se rupă.

Le vom rămâne recunoscători dacă vor continuă să lucreze alături de micii fermieri și după ce va trece criza, așa cum au făcut-o întotdeauna, pentru ca noi să putem așeza cu mândrie în farfurie aceleași brânzeturi cu al cărui gust ne-am obișnuit.

Ne morate više da idete u Francusku i Švajcarsku ukoliko želite kvalitetan i zanatski sir jer oni su pravi “cheesemongers” i njihovi sirevi su spektakularni.
Na farmi Ranilović žive Beograđani, pobegli od gradske vreve. Na Kosmaju su podigli gazdinstvo, uzgajaju 75 koza, nešto krava, podigli su i registrovali proizvodnju u okviru gazdinstva i sa Predragom krenuli u nove avanture. Ideja im je da razviju nešto jako lepo, nalik jugu Francuske gde su ljudi koji se bave ovakvom proizvodnjom pravi hedonisti, gospoda koja uz čašu dobrog vina, dobrog sira znaju i da uživaju u seoskom životu, a usput i da rade uživajući.   • Stāsts ir par šo Buratu - Man draudzenīte šo ierādija un tagad es vairs nevaru ieēst (gandrīz) nevienu citu mocarellas paveida sieru, man arī garšo tradicionālā bufalo mocarella, bet šī Burata kombinācijā ar salātiem vai vienkārši tomātiem un balzamiko ir kaut kas dievišķīs. 🙏🏼 Galvanā atšķirība buratai ar mocarellu ir tas vidutiņš, jo burata atšķirībā no mocarellas ir absolūti mīksta, gandrīz šķidra un garša ir krēmīga, savukārt čaula, jeb ārpusējā daļa ir tradicionālā mocarella, tas tāpēc, ka gatavošanas procesā tiek izveidota mocarellas kabatiņa, kas tieši viducis tiek piepildīta ar saplūkātu mocarellu un krēmu pirms tā tiek aizvērta. 😍 Sākotnēji es domāju, ka tā ir tā pati vecā labā mocarella tikai citāda, bet tad es papētiju un izrādās, ka nē, tas ir pilnīgi atšķirīgs Itāļu siera paveids, lai gan būsim godīgi - galvenā sastāvdaļa ir mocarella. 🤷🏼‍♀️😅🤤 Es savu pērku @promocashcarry - kad visi beigsim pašizolāciju un pasaule būs nedaudz skaistāka un trakums būs norimis, un ja tev būs iespēja iegādāties šajā veikalā vai citā un tu redzi šo produktu, tad noteikti iesaku notestēt. 🥰 Jaatcerās gan ir, ka Burata noteikti kaloriju ziņā ir bagātīgāka par tradicionālo mocarellu. 🤷🏼‍♀️ P.S.   • Episode 2 of Cocktails Under Quarantine: Northern Italy.

The second episode of my Cocktails Under Quarantine series introduces some dishes inspired by northern Italy. We start with an Aperol Spritz, a quintessential northern Italian cocktail. Fruity, slightly bitter, and infinitely refreshing, it's best enjoyed outdoors on a patio (or driveway, or backyard, or -- hell, near an open window -- whatever you can manage these days). Paired with the Aperol Spritz is a 2-ingredient recipe for Parmesan Crisps. Take high-quality parmigiano-reggiano cheese (from Italy, duh), and your choice of fresh herbs, and you get beautifully delicate cheese crisps. The rich, nutty flavor of the cheese is a perfect complement to the light and refreshing Aperol Spritz.

To get to the recipes, click the link in my bio for my blog post. Since we can't leave the house, we do our best to enjoy the world by traveling with our taste buds. And I think that cocktails and snacks are a great way to celebrate that we made it through yet another week under quarantine. Наш свежий хлеб
Сыр моццарелла из 100% итальянского буйволиного молока
Песто
Свежие томаты Черри

Хлеб слегка подсушить на сковороде,шарики моццареллы порезать на пополам.
Томаты в зависимости от размера.
Положить на хлеб сыр и слегка подпечь его горелкой.
Если у вас нет горелки - можно отправить хлеб с сыром на пару минут в духовку.
Сверху положить свежие томаты и песто.

Gorgonzola is one of Italy's most famous cheeses. It is mainly produced in Lombardy, as well as several specified regions of Piedmont. It is made from raw cow's milk and may be white or straw-coloured with blue-green streaks that are produced by a process called marbling. Gorgonzola dolce is sweeter with a soft, creamy texture, while Gorgonzola piccante is more crumbly with a piquant taste. In springtime Gorgonzola dolce is often used to make a creamy sauce for wild asparagus.
Wash 1 bunch (about 500g/ 1 lb) wild or thin green asparagus and trim or break off the woody ends. Steam for 20 minutes or until tender.
To make the sauce place 60g (2oz) Gorgonzola dolce in a bowl with 60ml single cream and 1 or 2 tablespoons freshly grated grana padana or parmesan cheese and blend well. Arrange  the asparagus on 3 or 4 serving plates and serve warm with the sauce on the side.
