  • It’s been two weeks since I last worked out. Between Jeff’s work schedule and last weeks colonoscopy, yoga just wasn’t happening. I didn’t realize how much I missed it until I laid in the warm room waiting for class to start. I missed the challenge and the pure exhaustion that comes afterwards. I was also much more flexible than I thought I’d be after a hiatus. Even getting into a few new poses.

Today also marked day 1 of a new chapter in my #intermittentfasting journey. I’ve decided to do #alternatedayfasting for a while. After a year of eating one meal/day, I’m looking to shake it up. A new mental challenge. A new opportunity to eat lunch and breakfast! This will look like 36-40 hours without eating, then eating for 8 hours. Repeat. I’ll try this for a few weeks, give my body the chance to adapt, and worst case scenario, if I absolutely hate it, I’ll go back to my trusty #OMAD. Maybe this will help me break through my 9 month long plateau?? Worth a shot!! 👊🏻

  • If you’ve been following my stories or posts you know I’ve been having issues with dairy free... or I guess it’s more the veggies and substitutes I’ve been having. I’ve been having stomach issues most days. AND I gained weight 😡 So I’m keeping it simple the rest of the month. Just meat, eggs, avocado, coffee and cooking with avocado oil. I will be still having almond milk in my coffee as well. So sorry if my posts are boring lol. .

This steak looks a lot bigger than it was, well it was big... but it was very thin. Winco had thin cut ribeyes, I got 4 like this for $14 🙌🏼 winning! I’m also using frozen avocado to save money, and I’m not hating it! I just sauté them real quick in a pan or put them in the microwave for a couple seconds and mash it. .

Ingredients
for 4 servings
2 tablespoons olive oil	
4 boneless, skinless chicken thighs, sliced	
salt, to taste	
pepper, to taste	
1 lb green beans (455 g)	
2 cups cherry tomato, halved (400 g)	
½ cup basil pesto (115 g) 
Preparation	
In a large pan, heat olive oil and add chicken thighs.	
Season with salt and pepper. When the chicken is completely cooked through, remove from pan.	
Slice into strips, and set aside.	
Add green beans and cook until crisp tender.	
Return the chicken strips to the pan, then add tomatoes and pesto. Stir until fully incorporated.	
Serve immediately or divide into 4 food storage containers and store in the refrigerator. Can be kept refrigerated for up to 4 days.
