  • Went to the Rocks for the special Christmas installation. ⁣
⁣
When we celebrate chrissy here in Oz,⁣
it's actually summer hence the fake snow. Would have wanted more props installed but at least we have this.

  • The beaches of Broome in the Kimberley. You can see why my aerial shot was those colours this is a major coastal town found amongst the vast wilderness of the region.
•
The late 1800’s saw its beginning as a major pearling town. It’s off here that many of the world’s best pearl, the South Sea Pearl, is farmed today. They need pristine waters to create their beauty.

The sunsets in this West Coast were so incredible... second pic.

  • The amazing colours of Australia’s Kimberley region, from the air. Nature’s artwork. *

This is Australia’s vast wilderness area in the north west of the country. Amazing to see such big open land areas and sea with very little population.

  • This was the view from my room at the amazing @southernoceanlodge on Kangaroo Island. Swipe to see more pics of the lodge.
•
I was extremely saddened to hear the fires hit this beautiful Island and it’s National Park yesterday. It was heart breaking to learn that the lodge was destroyed and lives were lost on the Island. Both human and many wildlife ones too. It was the base to explore so much flora and fauna, some call it the Galapagos of Australia.
•

Thinking of all of you there. I hope the worst is over and everyone on Kangaroo Island is safe. We look forward to visiting as soon as you’re all on your feet again.

  • 3.6 million hectares of NSW land has burnt so far, an area greater than Wales, the country. The fires are nowhere near finished. There are more than 1500 homes destroyed and many lives lost.
•
To put the fire damage in New South Wales alone in perspective, 1.8 million hectares burned in the 2018 California wildfires and some 900,000 hectares were lost in the 2019 Amazon fires.
•
This is just one State, the fires are throughout the country. 12million hectares have burnt in total in Australia this season. •

Bushfires this season have officially burnt the most land on modern record across eastern New South Wales. They’ve been burning since August.
•

Thank you to the brave firefighters and services who are in the thick of the fires day after day, risking their lives. The devastation for the people living through it and suffering losses are incredible , I can’t even imagine their emotions. •

If you want to help, go to
@nswrfs website and donate to support the firefighters. For disaster relief
@redcrossau @salvosau

@wireswildliferescue For the wildlife, we’ve lost more than half a million wild animals.

Some of the fruit and veggies that are in season over summer are watermelon, stone fruit, tomatoes, capsicums and eggplant 🍆🍅🍉 Pictured is a selection of some of the summer recipes that are featured on vegcoastcook.com (clockwise from top left): Tomato and basil pizza / Summer fruit salad / Poached peaches with raspberry frozen yogurt / Baked cheese and capsicum bread / Avocado egg with panzanella

  • “In three words I can sum up everything I’ve learned about life: it goes on...”
With a population of less than 2000, Queenscliff is the ideal spot to finish off my road trip along the Great Ocean Road. The Queenscliff Pier was originally built between 1884 and 1889 with a shelter shed built during the main build. With the lifeboat shed added in the 1920s it’s now a popular fishing spot or a great place for a quiet walk.
Live life and...be kind.

  • The amazing Uluru of central Australia. It seems bright, but it was! Late afternoon glow. The rock is a giant monolith that is sacred to the indigenous people of Australia.

They used to request you didn’t climb it, and respect its sacredness, but unfortunately people still chose too. Finally, climbing has been banned, and respect instilled once again to this UNESCO site.
There’s so much to see around the rick... springs, caves and ancient paintings. No need to climb it!

This beach can only be reached by plane, helicopter or boat. It’s in the Whitsundays off the Great Barrier Reef of Australia.

  • Why is the sound of the ocean calming?
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Wallace J. Nichols, a marine biologist, believes that we all have a "blue mind" -- as he puts it, "a mildly meditative state characterised by calm, peacefulness, unity, and a sense of general happiness and satisfaction with life in the moment" -- that's triggered when we're in or near water.

  • Roasted onion and white bean dip with cayenne toasts 🔻

As the weather warms up here in Queensland, I love to go outdoors and have a picnic on the beach 🏖
We photographed (and ate!) this dip & toasts on beautiful Shelly Beach on the Sunshine Coast over the weekend ☀

This onion-flavoured, cannellini bean dip with spicy, toast triangles is perfect picnic food.

The dip and the toasts only take 25 minutes to prepare, so you can easily make them as a quick, vegetarian snack to eat outdoors 😋

What food do you make for a picnic?

If you want a tasty dip that is picnic-friendly, have a look at the recipe on my blog and make it this weekend.
