  • Judging from social media feeds this weekend, everyone, including me, is in the mood for a steaming pot of chili and crunchy edged corn muffins! Last night, dinner was a tag team effort. My husband is the chili cook in our house. He makes it a little different every time and is not a recipe following kind of cook. I baked the corn muffins using my long time favorite recipe from The America's Test Kitchen Family Cookbook which are perfect topped with butter and honey (@testkitchen). BUT I see @smittenkitchen posted, this morning, about her version of a Cook's Illustrated recipe that is a little different than the one I use, with an extra cornmeal cooking step. I am very tempted to try those next time I bake corn muffins! For muffin recipe see the cookbook or try the Perfect Corn Muffins recipe at smittenkitchen.com. No recipe for the chili. Roughly, this version contained- 2lbs cubed and browned beef chuck roast, three 14oz cans of beans-use a variety, a 28oz can crushed tomatoes, chopped onion, minced chipotle pepper in adobo, lots of chili powder, and cayenne pepper.

  • Wild mushroom and pea risotto. I love cooking risotto as it's so versatile as you can adapt it by adding different vegetables. So it's great for using up leftovers! It also reminds me of when I was living in Exeter as it was a firm favourite with my housemates.

Ingredients: 350g risotto rice, 1 large onion diced, glass of white wine, vegetable stock, 100g frozen peas, 150g button mushrooms sliced, Waitrose cook's ingredients wild mushrooms (a little expensive but worth it), 50g parmesan/vegan alternative, knob of butter/dairy free spread, handful fresh parsley

Serves: 4

Method:
1. Cover wild mushrooms in boiling water and soak for 20 mins.
2. In a large pan melt butter/dairy free spread and fry onions until softened.
3. Add button and wild mushrooms and fry until softened. Reserve liquid from wild mushrooms to use later
4. Add risotto rice and stir for a couple of minutes to coat.
5. Add white wine and keep stirring the risotto continuously from this point onwards to give the risotto a creamy texture - the rice takes around 15-20 mins
6. Once the wine is absorbed into the rice, liquid from the mushrooms.
7. Once this is absorbed keep adding vegetable stock a small amount at a time until the rice is almost cooked. Season with pepper.
8. Add the frozen peas and keep stirring until the peas and rice are cooked. The rice should have a small amount of bite left to it (Al dente). 9. Take the pan off the heat and stir in the parmesan/vegan alternative.
10. Serve with parsley scattered over the top.

  • Coconut Butternut Squash Soup! #nytimescooking recipe by Tara Parker-Pope. A few notes~ I used a small 2.5lb squash. I ignored their butternut squash roasting directions & used the method I always utilize for roasting winter squash: 450ยฐF, squash cut in half lengthwise & seeded, placed down in a large baking dish with an inch or two of water, baked for 1 hour. When you roast the squash like this it becomes so tender that you can even purรฉe the butternut skin in with the soup! I used full-fat coconut milk in place of light for added creaminess & used about 1 teaspoon of salt (there isnโ€™t a measurement for salt). The kale is a great addition to complete the meal but isnโ€™t wholly necessary. I made some garlic olive oil croutons out of a baguette for added crunch. Ingredients

Oil
Chopped Garlic - 1 Tsp
Chopped Ginger - 1 Tsp
Few Chopped Green Capsicum
Few Chopped Green Beans
Few Chopped Carrot
Few Chopped Cabbage
Few chopped Spring onion whites
Salt to taste
Pepper powder - 1 Tsp
Soy sauce - 1 Tsp
Vinegar - 2 Tsp
Tomato Ketchup - 2 Tsp
Schezwan Sauce - 3 Tsp
Egg - 3 nos
Spring onion stalk
Cooked Basmati Rice

Method:
1. Heat some oil in a wok or wide saucepan.
2. Add chopped garlic, chopped ginger and chopped green capsicum to the heated oil and sautรฉ well for 2 minutes.
3. Then add finely chopped vegetables (green beans, carrot, cabbage and spring onion whites) and sautรฉ for a few minutes.
4. Sprinkle some salt and pepper powder as per your taste to season it. Mix well.
5. Now add soy sauce, vinegar, tomato ketchup, and schezwan sauce to the vegetables. Keep stirring the vegetables as you add each ingredient so it gets mixed well.
6. Move the vegetables towards the sides of the wok or wide saucepan. In the space created in the center, add some oil and crack open the eggs.
7. Quickly scramble the eggs and mix it along with the sautรฉed vegetables. Add chopped spring onion stalk and mix well.
8. Now add the cooked basmati rice to the vegetables and stir gently until the vegetables and rice get mixed well.
9. Schezwan Egg Fried Rice is ready to serve hot.

Note: For a Schezwan Veg Fried Rice, you can simply add the cooked basmati rice to the vegetables and leave out the eggs.
