  • Told you Im obsessed with mexican food right? If youre like me and looking for another easy but healthy option for dinner you must try these quinoa stuffed bell peppers. Theyre yum, easy and super healthy. 
Ingredients:
1. 1 cup quinoa (thoroughly rinsed and drained)
2. 2 cups vegetable stock or water 
3. 4 large red, yellow, green bell peppers (halved, clean and remove the core and the seeds)
4. 1/2 cup salsa (keep more handy for serving too)
5. 2 tsp cumin powder
6. 1 tsp chili powder
7. 1-2 tsp garlic powder
8. 1 onion
9. 1 cup beans (soaked overnight and boiled)
10. 1 cup corn (boiled)
11. 1 sweet potato (roasted and cut into cubes) - (optional)
12. 2 green chilies (chopped)
13. 1 tsp olive oil 
14. Salt to taste 
For toppings (optional) 
1. 1 avocado (sliced) or guacamole 
2. Cheddar cheese (optional)
3. Sour cream (optional)
4. Hot sauce 
5. Lettuce or cabbage for crunch (in this weather Im finding it hard to get good iceberg lettuce so Im substituting with purple cabbage)
6. Pico de galo 
Method:
Method: 
1. Preheat your oven.
2. In a medium pan, heat olive oil over medium heat. 
3. Once hot, add the onion and cook until translucent and soft.
4. Add the dry quinoa and toast for 1 minute and stir constantly to prevent burning, slowly add the cumin, chili powder, garlic powder, green chili and salt. quinoa. Add in the water/ vegetable stock.
5. Bring to a boil and once it starts boiling cover and simmer for 15 minutes, or until all liquid is absorbed and quinoa is fluffy. 
6. Once cooked, add the salsa, black beans, sweet corn, and the sweet potato. Taste and adjust seasonings.
7. Place bell peppers in a baking dish. Add the quinoa mixture to each bell pepper. 
8. Cover baking dish with foil. Bake for 30 minutes. 
9. Remove foil and bake for 10 minutes more.

  • I learned an invaluable lesson this week; that is to never completely leave the course of your future in someone else's hand, even with those bearing titles and designations that may or may not intimidate you, because they too are human - they have priorities, they make mistakes and they can forget - just like you. In other word, have some doubt. Not too much that it kills you but just the right amount to trigger if something doesn't look right. #ohlife Anyway, packed lunch today is as simple as it can get. Pasta chicken carrot and celery bolognese and kiwi. Happy weekend, everyone!

  • Dig a hole, layer with river rocks, line with banana leaves, throw in a whole lot of meat wrapped in foil, cover with more leaf then cover it in dirt for a few hours. Out comes a juicy tender Fijian lovo plate lunch! Chicken, lamb, polusami, salmon, taro, casava... It's an entire day of family, fun and drinking!

  • So I never delete pictures and my phone has all the pictures I have taken since 2015  Found these gems in my phone gallery- from some dinner I had at my place almost two years ago. Back home we had people over almost every weekend. Its been a while since I have had a crazy cookout! But now that we are pretty much settled in the new country with new jobs and new home, I cant wait to have people over again! 
The menu was:

Gulai Daging Cincang

Bahan :
500 grm daging sandung lamur
2 bh serai geprek 
1 cm lengkuas geprek
1 lbr daun kunyit
3 lbr daun jeruk 
1 bh bunga lawang
2 bh kapulaga
1 bh kayu manis
1 sdt bubuk pala
1 sdt bubuk jintan
1 bh asam kandis
Air secukupnya 
Garam, gula dan perasa
100 ml santan pekat

Bahan halus :
8 bh cabe merah kering rendam dulu buang biji
6 bh bawang merah 
3 bh bawang putih 
2 bh kemiri
1 cm jahe
1/2 sdm ketumbar sangrai
1 cm kunyit bakar

Cara :
1. Panaskan minyak di wajan tumis bumbu halus beserta serai, lengkuas, daun kunyit, daun jeruk, bunga lawang, kapulaga, kayu manis, bubuk pala dan bubuk jintan sampai wangi. 
2. Masukkan daging tumis sampai berubah warna baru masukkan asam kandis. 
3. Tambahkan air secukupnya, garam, gula dan perasa tutup dan masak sampai daging empuk. 
4. Kemudian masukkan santan aduk sekali kali agar santan tidak pecah. 
5. Test rasa angkat dan sajikan.
