  • I’ve been making this soup for many years. It didn’t really occur to me until today what all was behind it emotionally. Why do I spend two or more days to make a batch of simple chicken soup? People say to me time and again “oh the chopping - how can you spend so much time chopping vegetables?” I do spend a significant amount of my time in the kitchen.

Today the answer is clear. It’s how I love.

Feeding my family, my pets, my friends the most nutritious and healing foods that I can make is how I say “I love you.” When my 96 yr old Next Door Granny says she’s feeling horrible and doesn’t have any energy, she eats this soup and she has told me on more that one occasion that it healed her. I humbly say “oh no, it’s just soup - glad you feel better” and move on.

But maybe there is something to it.
The soup starts with two whole, organic, humanely raised chickens, free from hormones and antibiotics. I thank them for giving their lives to sustain ours as I wash them. After they have roasted in the oven for a couple hours and cooled, all the meat is pulled and the bones, skin and juices are put in the crock pot with organic vegetables and filtered water.

The bone broth cooks for 18-24 hours. When it’s ready, I start chopping and fill a giant stock pot with a mountain of freshly chopped organic vegetables. Then I add the chicken and finally the mineral-rich bone broth that’s been simmering for a day. These are the physical ingredients, but what ties them together is Love.

I don’t spend hours and days on this project because I don’t have anything else to do. I do it to give love. Love is energy. As I was making the soup today I was thinking about my Granny, wanting to make sure she has a back-up supply for her down days. I was thinking about myself and my husband, making sure we had something super enriching in the freezer for when we get too busy to make dinner. That’s when I realized the secret ingredient is Love. Putting that love energy into the food spreads to everyone I feed.

    Meatless Monday meets freezer/fridge foray soup (frozen spinach, cauliflower and artichoke hearts, leftover onion, roux, cayenne and a wee hunk o’cheddar) with a warm cheesy bun on the side. I think I’m ready for cooler weather. ❄️🥵❄️

  • Fake fall is what type of weather we have right now in Minnesota.  Last week it was rainy and in the 50s and today it’s 87 degrees and humid.  Next week, it will be rainy and in the 60s.  Typical, Minnesota Fall weather.

I was requested to make my famous homemade Instant Pot Chicken Noodle Soup from my Step Daughter when she was home one day last week.  Because, well...it was cold and rainy and it sounded like it would be a good dish to warm us all up!  Bonus, she loves it so why not?!?
.
In this chicken noodle soup, I like to use homestyle egg noodles instead of just plain egg noodles.  They seem to hold up in the soup and my kids love the taste of it better.  You can find it in a bag near the noodle section at your local grocery store.

It’s a very simple recipe to follow and it’s quick to make.  Your family will love warming up with this mouth watering soup!

  • Recipe! 👇🏻 I heard all the NFL players went vegan, so Sunday night football dinner is in our house, too. (It usually is anyway 😬). Roasted Summer Vegetable Minestrone with @jovialfoods GF rotini for Sunday dinner, a perfect seasonal transition meal with late summer veggies in peak season in warming hearty soup to usher you into fall.

.You can use any combo of veggies that you want, but your secret weapon is the extra step roasting the vegetables. The more fresh you can use, the better, but frozen veggies come in handy for this recipe. I serve with pasta, but always make your pasta separately so that it doesn’t break down and get soggy in your leftovers. Makes great leftovers and freezes well.

.Preheat oven to 425. Chop 3-4 zucchini and 2-3 carrots. Add to large bowl with corn cut off one ear. Toss with 2 tbsp olive oil and a generous helping of salt and pepper. Roast on 2 half sheet pans for 30ish minutes (you’re looking for strong caramelization on that squash).
.Dice onions (1 cup) and 2 stalks celery and add to hot oil in Dutch oven over medium heat. Salt, stir to coat. Allow to sweat 5-10 min until soft. Add 2 tbsp tomato paste and stir to coat vegetables.
.Add 6 cups low sodium vegetable broth and/or filtered water and bring to a boil, then reduce to simmer. I use 4 cups broth and 2 cups water.
.Add one 28 oz can of diced tomatoes (preferably no salt added) and a cup-ish of cut green beans (fresh or frozen.) Let simmer 10 min.
.Add one or two 15 oz cans of cannellini beans. Let simmer 5 minutes.
.Add roasted vegetables and gently stir them in. Ready to serve with vegan Parmesan, chopped basil or parsley.

  • how about some hearty vegetable & burger stew? 🍔🥘😀 now that we’re moving steadily into autumn, with its cooler temperatures and shorter days, it’s the perfect time to start whipping up cosy and comforting soups, so keep an eye out for this recipe coming soon! 🍂 (ps- yes, it’s vegan. feels dumb to have to say that all the time if it’s not right in the name of the dish, but you know otherwise there’ll be *someone* who thinks i’m suddenly adding beef burgers to my soup. 🙈😆)

  • fall is here <3 3-kind squash soup with butternut, hokkaido and summer squash (also carrots, green onions, red onions, garlic, ginger, red and green chilli peppers, bell pepper, fresh tomato, parsley) pre-prep, prep and cooking; recipe: combine all ingredients in a soup pot after cleaning, peeling and chopping everything pretty roughly, add olive oil and toss well on medium heat, add salt and freshly ground black pepper, oregano, paprika and hot pepper flakes, then add lemon juice and a touch of soy sauce, and finally add water to cover everything completely and leave about a finger width of liquid at the top, simmer on low heat keeping the pot covered, after everything is soft and the broth has begun to thicken significantly and the color is already pretty orange, blend well with an immersion blender. adjust salt and add more lemon juice if preferred. serve topped with chopped fresh parsley, slices of chilli pepper, toasted pumpkin seeds and a dollop of sriracha-tahini sauce made from tahini, lemon juice, salt, pepper, a bit of water and sriracha sauce, mixed well. #veganfood #whatveganseat #vegansoup #soups4ever #heartysoup #fallsouo #creamofsquashsoup #supacrema #supacradedovleacsidovlecei #mancarevegana #veganinromania #veganinbucharest #veganidinbucuresti #vegansofig #vegansofinstagram #vegan
