  • Lunch (also my first meal of the day) was assembled quickly from ingredients which had been cooked on meal prep day. 
Air-fried Japanese yams topped with seasoned black beans and a dollop of hummus, Steamed Brussels sprouts which were crisped up under the broiler, Roma tomatoes. Lately I’m enjoying @california.balsamics Blazin Habanera and Gilroy Garlic drizzled over everything. I’m experiencing some changes in the amount of food I’m eating. For the last few days, I’ve been unable to finish my normal 1/2 plate of starchy veggies and 1/2 non-starchy veggies. I really dislike that “too full” feeling. Today I only wanted 1/2 of the Japanese yam. Maybe my body just leads less food now. Anyone else experiencing this change?

  • My scale pulled a horrible prank on me for April Fools. I got on it and it said I was up two pounds. Let me tell you, that was not funny and I don’t know why it plays so much🙄. So I told the scale, “Jokes on you cause I fit into a size 8 dress.” 😛😜⠀

  • Banana Oat Bread 🍌👩‍🍳
This recipe popped up on my Instagram feed right as I was about to start a batch of banana bread yesterday... I'm so glad I made the switch from my more traditional recipe! This is simple, delicious and full of vital nutrients. The only processed sugar is what's in the chocolate chips, so it's still satisfyingly sweet.

I made a couple changes based on what I had in my kitchen, but you can find the original from @larametznutrition 🌱
🌾
Ingredients:
🍌🍌🍌
5 overripe bananas
1 egg
1 tsp vanilla
3 cups quick oats
1 Tbsp chia seeds
2 Tbsp ground flaxseed
1 tsp cinnamon
1 tsp baking soda
1/2 tsp sea salt
Chopped Walnuts
Chocolate chips
🍌
1️⃣ Beat egg, bananas and vanilla together in a bowl. (I used a fork to mash everything together.)
2️⃣ Stir in oats, chia, flaxseed, cinnamon, baking soda and salt, mixing thoroughly.
3️⃣ Stir in chocolate and walnuts.
4️⃣ Pour wet batter into a prepared 8x8 baking dish, or use two loaf tins. Bake for 30 minutes at 350, or until the edges are just barely browned.

Note: the bananas I used were so ripe they were fermented. I freeze or refrigerate old bananas to save for baking, and the flavor is excellent.

🍅 Tomatoes are the major dietary source of the antioxidant lycopene, which has been linked to many health benefits, including reduced risk of heart disease and cancer and they are also a great source of vitamin C, potassium, folate, and vitamin K. But, we like them mostly because they add that extra jazz to our Moroccan Gold Wrap! 🌱🌯

Remember, they are “ Essential service providers” ( Foods & sustenance) , working diligently on the front lines to keep you fed, healthy & strong.! ..
From both a personal and professional experience, over the past 6 years, working as a very close , Local & fresh food supplier,  to almost 100 Regional  grocers, including @wholefoods , @erewhonmarket , and many independent Grocers , I’ve come to know hundreds of these Amazing !  grocery team workers to be some of the kindest, most helpful , and hard-working people . On a normal day, they are enthusiastically  juggling shelf stocking , team communications, duties , and “real time “ ( like now!) , priority tasks , ...all  while patiently helping customers with questions , and to find items quickly ,( out of 1000’s  of items in  store, all day , every day.... we @perfectbalancetrailmix now have an even  greater appreciation for these selfless individuals 🙏🏻..

there’s something about a bowl of mac n cheese or a good ol grilled cheese that helps normalize things amidst the chaos. most of us are stressed enough with the new #wfh situation, so don’t let cooking add another layer of stress. allow for some normalcy by assembling a meal and eating it together with your loved ones. now that’s something to smile about 😁

TUNA MELT SANDO:
1️⃣drain @bumblebeefoods canned light tuna. add tuna to mixing bowl
2️⃣mix tuna with 3 tbsp @fage nonfat greek yogurt + 3 tbsp dill + 1.5 tbsp lemon juice + chopped red onion + red pepper flakes. season w s/p
3️⃣heat pan over low heat and add a couple slices of @daveskillerbread. Top one slice with tuna salad, another with cheese (i used havarti bc that’s what was in the fridge). let it cook for 5-7 minutes
4️⃣fold the two halves together and let mom take the first bite 🥰

There are a ton of really cool and fun recipes out there with all this extra time at home, BUT that doesn’t mean we all suddenly feel like making extravagant meals all the time 🤷🏼‍♀️ Here’s a meal with minimal prep/effort that can also be easily modified (I’ll add lots of modifications after the recipe!)⬇️

Whatcha need for this version:
•Fresh or frozen salmon
•Spinach
•Tabouleh (pre-packaged)
•1 tomato
•1/2 avocado
•Feta cheese
•Lemon juice & olive oil
.
How I made it —> The tabouleh is pre-packaged from @neareastproducts, so all you have to do is add some boiling water to the mix & pop it in the fridge. I added tomato, lemon juice, & olive, like the box says but if you don’t have tomato it’s still yum!
For the salmon —> It was frozen, so I thawed it under running water for 10 minutes. I put it in a baking dish with a little olive oil, drizzled some more olive oil & lemon juice on top. I put two tomato slices on there (from the tomato for the tabouleh), threw on some feta, & baked for 12ish minutes (varies on your salmon thickness).
Coming together —> I put the salmon on the plate. I put a lot of spinach on the plate and added the tabouleh on top. I also added half an avocado, sliced. I actually ended up mixing everything to be pretty much like a salad andddd that’s it, not too much prep work/dirty dishes👍🏼

‼️Modifications: they’re kind of endless on this one depending what you have on hand.
•Don’t have salmon on hand but you have chicken - use it! (Beware cooking times/temps may vary!)
•Don’t have feta but you have Parmesan - swap! 🍋 and Parmesan are a delicious combo!
•No tabouleh? Rice, quinoa, potatoes, etc.
•If you don’t have any kind of leafy greens that’s cool, but still try to sneak a veggie or two in there!😉
•Make this meal what suits you best 🔆 stay safe & enjoy!

If you’re in a relationship & wish to grow with your partner, then learning how to give unconditional love can become a powerful way to create a healthier relationship. 
The first step in the right direction is learning to keep your inner thoughts about your partner positive! It is not only what you’re saying, but also what you’re thinking that has the power. The thoughts you’re having about your relationship affect the results you’re getting from your partner!
Many people feel & think negatively about their partner, & that energy is felt, many times these thoughts can keep a couple from facing mistakes DIRECTLY - which can lead to them holding on to the past & constantly bringing it up - inherently draining both partners. 
For example, let’s say your partner upsets you, & you pretend that ‘you’re over it’ externally, but internally, you’re constantly repeating to yourself what they’ve done to you with anger, resentment, fear, sadness, or just pure frustration. You’re probably having an inner dialect saying, ‘they’ll just do it again’ or ‘why do they keep doing this’ or many of the other negative repetitive thoughts. On the outside you’re playing it cool, but internally you’re upset with them. This ‘hiding of feelings’ starts to build up & cause other problems. This is what makes the couple drift apart & can even end the relationship!!
Indeed, silent thoughts can be powerful! Instead of breaking each other down, why not uplift & heal with your mind? A great awareness to have is:
“What you think about your partner, they become.”
Consciously choosing to say sweet loving words about them to yourself; appreciating their smallest effort; giving them reminders of how you feel; & most importantly, when you’re upset, asking yourself, ‘what do I wish to manifest in this relationship?’ are all potent ways to foster states of unconditional love!
Remember love birds, what you think internally, you see externally! With this in mind, lets make the intentions to let Love power our relationships this week! Happy Monday FAM!

    If you’re in a relationship & wish to grow with your partner, then learning how to give unconditional love can become a powerful way to create a healthier relationship. 
    The first step in the right direction is learning to keep your inner thoughts about your partner positive! It is not only what you’re saying, but also what you’re thinking that has the power. The thoughts you’re having about your relationship affect the results you’re getting from your partner!
    Many people feel & think negatively about their partner, & that energy is felt, many times these thoughts can keep a couple from facing mistakes DIRECTLY - which can lead to them holding on to the past & constantly bringing it up - inherently draining both partners. 
    For example, let’s say your partner upsets you, & you pretend that ‘you’re over it’ externally, but internally, you’re constantly repeating to yourself what they’ve done to you with anger, resentment, fear, sadness, or just pure frustration. You’re probably having an inner dialect saying, ‘they’ll just do it again’ or ‘why do they keep doing this’ or many of the other negative repetitive thoughts. On the outside you’re playing it cool, but internally you’re upset with them. This ‘hiding of feelings’ starts to build up & cause other problems. This is what makes the couple drift apart & can even end the relationship!!
    Indeed, silent thoughts can be powerful! Instead of breaking each other down, why not uplift & heal with your mind? A great awareness to have is:
    “What you think about your partner, they become.”
    Consciously choosing to say sweet loving words about them to yourself; appreciating their smallest effort; giving them reminders of how you feel; & most importantly, when you’re upset, asking yourself, ‘what do I wish to manifest in this relationship?’ are all potent ways to foster states of unconditional love!
    Remember love birds, what you think internally, you see externally! With this in mind, lets make the intentions to let Love power our relationships this week! Happy Monday FAM!

  • Lately I’ve been educating lots and lots of CHF💔 patients during my clinical rotations. While the message to reduce 🧂sodium🧂intake for congestive heart failure💔 is always the same, each education always turns out a bit different🌟
.
One high sodium food patients continually not know is bread! Truthfully I hadn’t focused on bread all that much myself either.. who thinks of bread when there’s chips, soup + frozen meals ?!
.
Lightly salted chips or low sodium soup are fairly to easy to find on grocery store shelves. But when I saw reduced sodium bread, of course I had to try !! While lightly salted chips taste different, happy to say low sodium bread does not👏

  • Seasonal Ingredient Spotlight: Asparagus!

I love this time of year when tender asparagus shoots become available from the local farms and in the grocery stores! Asparagus is one of the most popular vegetable crops in the world, and for good reason -- it’s delicious and nutritious!
.
Asparagus contains a hearty dose of B vitamins, especially B9, or folate. Folate has a range of important functions in the body, including:
🌟 Aiding of in the conversion of homocysteine to methionine -- this protects heart health, as a build-up of homocysteine is associated with cardiovascular events like heart attack and stroke [1]
🌟 Prevention of neural tube defects, a birth defect that can occur without enough folate [2]
🌟 May reduce risk of depression [3]
.
Asparagus also is a diuretic due to high levels of the amino acid asparagine [4]. Frequent urination helps to prevent urinary tract infections, and rid the body of excess salt.
.
While green is the most common variety available in stores, white and purple asparagus shoots may offer different benefits (eat the rainbow if you can!). Keep stored loosely wrapped in a plastic bag in the crisper section of the fridge, with a damp paper towel wrapped around the base of the stems.
.
I love asparagus chopped and tossed into spring curries, pasta dishes and salads! Or sauteed with lemon and a sprinkle of parmesan as an easy dinner side. What’s your favorite spring asparagus dish? 👇

  • A bunch of over-ripe bananas turned into a healthy, naturally sweetened, Coconut Almond Banana Bread!

This banana bread is so dense and moist (!!) with pockets of warm and melty chocolate and a bit of coconut crunch. YUM
.
Sweetened with honey, and @lilys_sweets no-sugar added semi-sweet chocolate chips, this bread is low-carb, paleo and gluten free! And to make it even more delicious, drizzle some almond butter on top!

Coconut Almond Banana Bread
.

10 servings

INGREDIENTS:
2 bananas
3 eggs
1/4 cup almond butter
3 tablespoons honey
2 cups blanched almond flour
1/2 cup unsweetened shredded coconut 
3 teaspoon baking powder
1/2 teaspoon sea salt
1 cup chocolate chips or chunks of choice
.
INSTRUCTIONS
.
Preheat oven to 350F.
Mash the bananas in a large bowl. Add the eggs, almond butter, and honey. (If needed, microwave the almond butter for 15-30 seconds to loosen it up so everything can be mixed together).
.
In a separate bowl, combine the almond flour, unsweetened coconut, baking powder, and sea salt.
.
Whisk the dry ingredients into the wet ingredients. Fold in the chocolate chips into the batter, reserving some for the top.
.
Line a loaf/bread pan with parchment paper, tucking the paper around the sides to keep it in place.
.
Pour the batter into the lined pan, spreading it out evenly.
.
Sprinkle the remaining chocolate chips on top.
.
Bake for about 30-35 or until the top is golden brown.
.
Remove the banana bread from the oven and pull on the edges of the parchment paper to remove it from the pan.
.
Place the banana bread (and parchment paper) on a cooling rack for at least 10 minutes before cutting into slices.
.
Per serving: Calories 366; Fat 26.6g (Sat 8.8g); Protein 9.8g; Carb 31.6g (net carbs 25.7g); Fiber 5.9g; Sodium 197mg

Here I have a batch of super simple oat pancakes. These are a wonderful way to add lots of fibre and plant based protein to your morning, keeping you full for hours! ⁣
⁣
Oats are a great grain to include in your diet. They are naturally gluten free, but can sometimes be cross contaminated with gluten by being farmed in the same fields as glutinous grains. So if you are avoiding gluten, always make sure to purchase oats that say Gluten Free on them to ensure they’re safe. ⁣
⁣
Oats also contain a molecule called Beta Glucan. This is part of the fibre in oats and is awesome for cardiovascular health, in fact some people take it isolated as a supplement to improve their heart health. This is just one of the many, many benefits of oats 🌾⁣

Recipe: ⁣
1/2 cup oats blended into a flour ⁣
1/2 tsp baking powder ⁣
1/8 tsp cinnamon ⁣
1.5 tbsp flax + 2.5 tbsp water ⁣
1/3 - 1/2 cup nondairy milk ⁣
1/2 tsp vanilla ⁣
—> mix all ingredients together and cook in vegan butter or coconut oil 🥥 ⁣
⁣
Served here with hemp hearts, banana, peanut butter and maple syrup. Always make sure to measure out your syrup before adding it to your food, it’s super easy to over do it. I try to stick to 1 tbsp maximum on my pancakes 🥞 ⁣
