cada día me sorprende más lo que una dieta basada en plantas te puede brindar. Yo era de las personas que creía que no era posible por el tema de las proteínas, pero créanme que una dieta basada en plantas puede ser hasta más beneficiosa que una dieta donde se incluyen productos animales. No, no soy vegana ni vegetariana, pero si busco uno o dos días a la semana alimentarme únicamente de plantas!
Esta vez hice una salsa de palta para mi pasta a base de lentejas (qué es alta en proteínas!) Para la “salsa” necesitas:
🥑1/2 palta
🥑1/2 taza de yogurt (yo usé yogurt de soja pero pueden usar griego)
🥑1/2 limón 🥑sal y pimienta al gusto
Lo único que tienen que hacer es poner todos estos ingredientes en un procesador y les va a salir una salsa cremosísima 🤩
Para darle un poco más de color y sabor, le agregué verduras como zucchini, champiñones, maíz (choclo), pimiento y tomates cherry.
Esta combinación de los fideos con la salsa es una bomba de energía, así que a cualquiera que les diga que los veganos/vegetarianos son unos débiles, el día que comí esto fue mi mejor día en el gym, me sentí súper bien 🌟

  • This beautiful girl. She made me a mommy. Changed my whole world! I’d move mountains for her I want to teach her and show her not only is mommy strong and committed to her health and fitness, but that working out is fun. That dancing around is fun. That it’s part of our routine. That she can do big things!!. That reaching for the stars and setting big goals is worth it!!! And that sometimes, you just gotta enjoy the cupcake ❤️

  • This vegan Caesar dressing is my absolute FAVORITE salad dressing right now. (That's a bold statement to make, but it's true!) I make this dressing at least a couple of times a month. It's creamy and garlicky and I could eat it straight off of a spoon. 😍

INGREDIENTS

¼ cup extra virgin olive oil
1 ½ tablespoons lemon juice

¼ teaspoon garlic powder
½ teaspoon salt
1/4 cup water

INSTRUCTIONS
In a blender or food processor, combine the cashews, olive oil, lemon juice, balsamic vinegar, garlic powder, salt, and water.
Blend for 30 seconds then scrape down the sides and continue to blend.
Add more water if needed. Add salt to taste.

Dear gawd, I hope you said YES!

A couple months after Derek and I moved in together, my acne was flaring HARD. It was a combination of stress, living in a new city, poor sleep, emotional eating (hello chocolate), and a job I hated.
.
I knew I needed to refocus my eating on the 21-Day Sugar Detox  guidelines but wasn't sure how to make that work for both of us.
.
💣Turns out it was really effing easy.
.
I didn't have time to make separate meals (who does?). I discovered by making slight adjustments or additions to my meals (rice, extra potatoes, cheese, different veggie option, etc.) would make them suitable for Derek too! I could stay on track with my goals and keep him satisfied too.
.
Take this cottage pie for example. Recipe is from the 21DSD Cookbook and I love it! So that Detek enjoys it too, I do mashed potatoes and lots of cheese on his half.😆😉
.
❓Back to my question: is your partner on board with your healthy eating style/supportive of your health goals? Do they truly, deeply love you? The answer is the same.
It doesn't mean they need to eat the same way you do or do the same workouts, ect. The journey (and responsibility) is your own. However, you partner should be on board to be your cheer leader, keep you accountable, help with meal prep, and hide the chocolate.
Refusing to eat what you've cooked, bringing home temptation snacks, talking you out of a workout, or sabotaging your efforts in any other way is just plain mean.

I used @eatbanza rice for this recipe so each serving has 11g protein & 5g fiber! I also added some diced salami but could easily make vegetarian by leaving out!⁣⁣

Do it!⁣
Cook rice / orzo according to package. Let cool & drizzle with a little olive oil to keep from sticking together. In a large bowl, add 1/2 cup diced red onion, 1 diced cucumber, 2 diced bell peppers, 1/4 cup black olives and 1/4 cup @primalkitchenfoods Greek avocado oil dressing. Add banza rice and mix all together. Refrigerate for at least an hour and enjoy!!

BLUEBERRY CINNAMON ROLL BAKED OATS (superfood edition)
↠ 1/2 cup old fashioned rolled oats
↠ 1/2 spotty banana mashed + slices for topping
↠ 1/2 cup blueberries (fresh or frozen)
↠ 1/2 cup almond milk
↠ 1 heaping tsp cinnamon
↠ 1 tsp baking powder
↠ splash of vanilla extract
↠ plantbased yogurt for frosting (coco, cashew, or almond)
↠ optional add-ins: flax meal, maca, matcha powder, spirulina, scoop of plant-based protein powder, whatever your heart desires.
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Method
1. Preheat oven to 350F and line a baking dish so parchment paper or spray with nonstick spray.
2. Mix all ingredients in a separate bowl.
3. Add half blueberries and mix into bowl. 
4. Pour mixture into baking dish then add the rest of blueberries on top spreading evenly.
5. Bake for about 25 minutes or until top is dry and golden brown.
6. Let cool for a few minutes, top with plant yogurt for icing and some nut butter!

I call this my ✧ SUPERFOOD ✧ baked oats because I topped with allll my fav “superfood” toppings: chia seeds, hemp seeds, crushed roasted almonds, loads of peanut butter, banana slices, sprinkle of cacao nibs, and a drizzle of maple syrup. The blueberries turn out amazing baked in the oven, melted, warm, and sweet. There you have it. My blueberry cinnamon roll baked oats. Tastes absolutely delicious. Try it out for yourself! Děda nás přinesl 10kg jablek, tak teď čekejte samé #ApplePie recepty - budu si s tímto základním dost pohrávat 🤫🍎 !! Ingredience :
• 250g tvaroh ( nejlépe měkký, nebo polotučný )
• 20ml slun. olej
• 80g hladká mouka ( nemáme momentálně špaldovou, takže já dala #classic )
• 40g kokosová mouka @grizly.cz 🤤🥥 ( pro lepší chuť těstíčka !! )
• 2ks 🍎🍏 #applelover ( dnes budu dělat se skořicí & rozinkami, tak Vám to rozepíšu k zítřejšímu postu ;))
Postup :
Jako první jsem dala předehřát troubu. Do misky jsem nasypala mouky, přidala olej, tvaroh a rukama vypracovala v těsto 🖐🏻. Nakrájela jsem jablka a na 3/4 těsta jsem naházela / některé zamáčkla 😄!! Zbylou čtvrtinu těsta jsem po kouskách uválela na “nudle” ( 😂 na nudličky jsou moc tlustý ) a dala přes jablka. Pekla jsem na 180 stupňů cca hodinku a čtvrt 💛. How this is healthy I will never know it is soooo good!!!
Recipe for 2 below:
INGREDIENTS 
Low cal cooking spray
3 bay leaves
1 cinnamon stick
1 tsp crushed cardamom seeds, ¼ tsp crushed cloves and 2 tsp cumin seeds
1 onion, peeled and finely grated
1 tbsp each of ground coriander and ground cumin and 2 tsp mild curry powder
3 tsp peeled and finely grated ginger and 3 tsp peeled and finely crushed garlic
200g can chopped tomatoes
300g chicken breasts, cut into bite-sized pieces
200ml chicken stock
Salt and freshly ground black pepper
5 tbsp fat free natural yoghurt
Parsley to garnish
METHOD 
Spray a large frying pan with low calorie cooking spray and place over a high heat. Add the bay leaves, cinnamon stick, cardamom seeds, cloves, cumin seeds and onion and stir-fry for 5-6 minutes.
Add the ground coriander and cumin, curry powder, ginger, garlic and tomatoes and stir-fry for another 3-4 minutes
Put the chicken into the pan and pour over the stock. Bring to the boil, season well, cover tightly, reduce the heat to low and allow to simmer gently for 20-25 minutes, stirring occasionally.
Remove the pan from the heat and stir in the fromage frais. Serve immediately garnished with parsley with rice on the side.
Enjoy!!

😋Recette inspirée de @healthyfood_creation ~.~.~.~.~.~.~.~
~3 poires mûres 🍐~2 œufs~Le jus d'un citron🍋~150g de chocolat noir🍫~2 cuillères à soupe de lait végétal (pour ma part j'ai pris à la noisette)~20g de purée d'amande~70g de farine complète~2 cuillères à soupe de sirop d'agave~1 cuillère à café de bicarbonate de soude alimentaire~Quelques noix de pécan, concassées
Pour le glaçage :
x 50g de chocolat noir🍫
x 3 cuillères à soupe de lait végétal.
~.~.~.~.~.~.~.~
1. Dans un premier temps, pocher les poires : porter à ébullition une grande casserole d'eau. Éplucher vos poires. Une fois l'eau bouillante, ajouter le jus d'un citron (pour éviter que les poires noircissent) et plonger les poires pendant 20 minutes.
2. Pendant ce temps, faire fondre le chocolat noir dans une casserole avec les 2 cs de lait végétal
3. Mélanger ensemble les œufs, le sirop d'agave, la farine complète et la purée d'amande
4. Ajouter ensuite le chocolat fondu et le bicarbonate de soude alimentaire. Bien mélanger
5. Préchauffer le four à 180°
6. Mettre un peu de pâte au fond d'un moule à cake et disposer les poires debout. Mettre le reste de pâte autour des poires afin qu'elles tiennent debout.
7. Enfourner pour 45 minutes
8. Quand le cake est cuit, attendre un peu avant de le démouler
9. Préparer votre glaçage : Faire fondre le chocolat noir avec les 3 cs de lait végétal
10. Verser le glaçage sur le cake et parsemer de noix de pécan concassées.

  • Thankful for healthy options when I’m on a liquid diet for the next couple of weeks. 😭

I haven’t been posting about my health journey for awhile. I developed some allergies and had to do some major changes in my food intake. After major stomach issues and several doctor visits, I found out I can’t have soy, grains, non-organic meat and non-organic vegetables and fruits. Soy was the biggest culprit, then the hormones in meat tore me up. The pesticides make my throat swell up. 
So after major adjustments, I’m back on track and it just looks a little different than before. I found soy free options and organic options that don’t mess with my body! 
Unfortunately I gained 7 lbs during this change up, but I want to be honest and move forward on track. Being public helps me stay on track. 
I’m definitely thankful for liquid options right now while my jaw and incisions heal!

  • we did a thing on my stories today and that was make S’MORES COOKIES because i don’t live around a campfire and the oven is the best i got. these are next level and you’re going to love! (p.s. got all my ingredients off @thrivemarket so if you’re looking for a dope way to get your groceries to your door hit up my stories) recipe below!!! ⚡️ #dadaeatssmorescookies

You will need:
1 1/4 cup almond flour 
3 tbsp coconut flour 
1/3 cup almond butter 
1/3 cup maple syrup 
1/4 cup coconut oil 
1 tsp baking soda
1 egg (can sub 2 flax eggs for vegan option)
1 tsp vanilla 
1/4 tsp salt 
1/3 cup mini chocolate chips
handful dark chocolate chunks 
1/2 cup mini vegan marshmallows (3-4 marshmallows per cookie)

Directions:
Preheat oven 350 degrees. Cream together egg, melted and cooled coconut oil, maple syrup, almond butter, and vanilla until smooth. Mix dry ingredients together. Combine wet and dry ingredients. Fold in mini chocolate chips. Bake for 15 minutes. Pull the cookies out of the oven and press a few dark chocolate chunks on top while the cookies are still warm. As the chocolate melts, add a few vegan marshmallows on top (i like Dandies which i found on @thrivemarket). Pop back in the oven until marshmallows are golden (make sure to keep an eye on them so they don’t burn) and edges of cookies are crisp and delicious. Enjoy!!

  • Creamy zoodles + crispy cauliflower gnocchi made a dream team duo on tonight’s dinner plate 😍. Paired them with a pan-seared garlic & herb chicken breast for a simple + satisfying meal that totally hit the spot 💯🥰.

#whatsonmyplate: sautéed zucchini noodles tossed with with creamy garlic cheese sauce (recipe: in a blender, combine 1/2 cup @kitehillfoods regular cream cheese (can sub kite hill chive cream cheese or regular cream cheese) + 1/4 cup goat cheese crumbles (optional) 1/4 cup almond milk + 1/2 teaspoon garlic powder + salt & pepper to taste; blend until smooth 🌪) •• pan-seared lemon, garlic & herb chicken breast 🍋🍗 (recipe: season chicken breast with dried basil, garlic powder, sea salt & black pepper; in a pan, heat 1 teaspoon garlic ghee; pan-grill for 4-6 minutes on each side, or until cooked through; squeeze lemon over chicken and serve. (I like to meal prep 3-4 of these on Sunday or Monday to have on hand during the week) •• crispy cauliflower gnocchi (there’s a tutorial for this in my story highlights).

  • NEW ON THE BLOG! Traditional Baked Vegan Mac n Cheese. 
I was shocked when I realized I didn’t have a straight up Mac n Cheese recipe on my blog and with the holidays coming up, it needed to be done. 
It’s cheezy, delicious and is the perfect comfort food. I really love how this came out! Also, the breadcrumb topping is everything 🤤🤤🤤
