  • MINI MAPLE-SWEETENED BANANA OAT MUFFINS by @cookieandkate 🍁

While the recipe is for 11 regular-sized muffins, I decided to make them in mini form because everything is more fun (and easy) to eat when it's bite-sized! If you know me, I'm pretty mini myself so I'm naturally inclined toward mini versions. 😁🙋‍♀️

@cookieandkate says these muffins are as healthy as muffins can get and I agree!  They are made with 100% whole grains and naturally sweetened with maple syrup. Also you can mix all ingredients in one bowl! Again, another quick, easy and delicious recipe! You definitely can't have just one - I think I've already had 4? Not sure how much longer they will last...

  • Happy hump day! I hope everyone is doing good 🥰 We’re not sure about a lot of things these days, but I am sure that we all deserve a soft, cinnamony goodness in our lives. These muffins are vegan, refined sugar free and make a great snack. Save this one for your next baking session

LIGHT & HEALTHY APPLE MUFFINS
.
Dry ingredient👇🏼
1 cup oat flour
1/4 cup almond flour
1/4 cup vanilla protein powder 
1 tsp baking powder
1 tsp cinnamon 
1/8 tsp salt
.
Wet ingredients👇🏼
2 flax eggs
1/2 cup applesauce 
1/4 cup plant based milk
1 tbsp date syrup(you can sub with maple syrup or honey)
1 tbsp lemon juice 
1/2 shredded apple
.
Mix dry and wet ingredients separately. Pour wet into dry and mix just until combined. Don’t over mix, that’s how these muffins stay light. Add shredded apple and fold into the mixture. Optional: sprinkle a little bit of brown sugar on top. Bake on 350 for about 20-25 minutes

✨Preheat oven to 180C and line a 12-cup muffin tray with paper muffin cups.
✨ Mix 2 cups almond meal, 2 tbsp chia seeds, 1 tbsp cinnamon and 2 tsp baking powder in a large bowl.
✨ In a blender or food processor, mix 3 ripe bananas, 3 eggs, 1/4 cup melted coconut oil and 2 tbsp raw honey, until well combined.

Powdered sugar - 1 cup 
Vegetable oil - 1/3 cup 
Milk - 1/2 cup 
Cocoa powder - 1/4 cup 
Baking powder - 1/2 tsp
Baking soda - 1/2 tsp
Vanilla essence - 1 tsp 
Vinegar - 1 tbsp 
Instant coffee powder - 1 tsp
Water - 1.5 tbsp
Chocolate chips - (as much as you want) .

▪Method - Make mixture of milk, vegetable oil, vanilla essence, powdered sugar whisk it well. - Then add all purpose flour,baking powder, baking soda, cocoa powder sift the dry ingredients whisk it until it's all combined. - water and add coffee powder. heat the coffee mixture at least 30 second on slow flame. Then add warm coffee in mixture of muffins. - Mix with the help of a spatula to avoid over mixing. - Then add vinegar & stir well. - Grease the muffin tray. - Fill the muffin tray 3/4 way. - Tap the tray. - Add chocolate chip on the top (optional) - Bake for 25 - 30 min at 180 degree Celsius / 350F. - Let them cool for 15 minutes. .

  • Banana Oat Muffins
We had lots of bananas and no flour...these were perfect! Delicious and healthy...very kid approved too!

Ingredients
Nonstick cooking spray
2 large eggs, lightly beaten
1 tsp. pure vanilla extract
2 large bananas, mashed
1 Tbsp. honey
2½ cups dry old-fashioned rolled oats
1 Tbsp. ground cinnamon
1½ tsp. baking powder
1½ cups unsweetened almond milk
2 cups fresh blueberries, (or raspberries)
.
Instructions
Preheat oven to 350° F.
Prepare twelve muffin cups by coating with spray. Set aside.
Combine eggs, extract, bananas, and honey in a large bowl; mix well. Set aside.
Combine oats, cinnamon, and baking powder in a medium bowl; mix well.
Add oat mixture to egg mixture; mix well.
Add almond milk; mix well.
Divide oat mixture evenly between prepared muffin cups.
Top evenly with blueberries.
Bake 26 to 30 minutes, or until golden brown and toothpick inserted into the center comes out clean.

  • Banana Strawberry Oat Muffins 
These bad boys are so delicous & very filling. These could be taken out in the paddock or put in the kids lunch boxes for school. 
INGREDIENTS ~ 1 cup buckwheat flour ~ 1/2 cup oats ~ 1/4 cup sweetner (I used monk fruit)
~ 1 tsp baking powder ~ 1/2 tsp cinnamon ~ 2 ripe bananas ~ 2 eggs ~ 1 tsp vanilla essence ~ 1/4 cup yoghurt ~ 6 strawberries 
INSTRUCTIONS 
1. Put all dry ingredients into a bowl, stir together.
2.  Mash banana, add rest of the wet ingredients, stir together. 
3. Add wet to dry & fold through till well combined. 
4. Chop strawberries & gently fold through. 
5. Scoop mixture into muffin tins.
6. Place in a preheated oven @ 180°c
7. Cook for 20 mins or until lightly golden brown.

    2. Mash banana, add rest of the wet ingredients, stir together.
    3. Add wet to dry & fold through till well combined.
    4. Chop strawberries & gently fold through.
    5. Scoop mixture into muffin tins.
    6. Place in a preheated oven @ 180°c
    7. Cook for 20 mins or until lightly golden brown.

Sabem o que é que começámos a fazer ontem para facilitar a vida?! A almoçar na cozinha 👩‍🍳 Assim não andamos com os pratos de um lado para o outro... que seriam pelo menos, três vezes ao dia 🤦‍♀️ Deixo-vos esta receita que é super simples de fazer e que acho que vão gostar ✌ Ainda por cima dá para todos aí em casa 🏠 Caso achem que estes muffins já não estão fofinhos no dia seguinte,  a minha dica é que aqueçam no microondas 🤗 
Aqui fica a receita 👇 ✔3 ovos inteiros ✔250ml claras em castelo ✔200 g de farinha de aveia ✔ Raspas de laranja + sumo de laranja ✔1 colher de sopa de sementes de chia ✔ 100g de nozes trituradas + Nozes q.b (para topping)
✔Fermento q.b ✔ Pré-aquecer o forno a 180⁰
✔Juntar todos os ingredientes numa tigela até ficar bem envolvido e colocar em forma a de silicone. ✔ Por cima, colocar as nozes.
✔ Levar ao forno cerca de 20 a 25 minutos a 180⁰ até ficar pronto. 
Vamos lá a mais um dia!

Отдавна исках да пробвам една по-здравословна вариация на обикновените мъфини, които всички ние много обичаме. И въпреки отсъствието на захарта и обикновеното брашно, мъфините, които днес ще ви покажа, станаха страшно вкусни и сочни! По-долу ви споделям необходимите продукти и начина на приготвяне. 😏

Какви продукти да използваме за 12 бр. мъфини?
100 гр сусамов тахан⠀
1 банан и половина⠀
една шепа фурми⠀
2 яйца⠀
2 с.л. брашно от лимец⠀
ванилия⠀
50 гр какао⠀
сода за хляб⠀
бакпулвер⠀
щипка сол⠀
⠀
Как да ги направим? 🥣
Загряваме предварително фурната на 180 гр. Намазваме с масло формичките за мъфини. Смесваме брашното от лимец, заедно с какао, сода за хляб и бакпулвер. В друга купа разбиваме бананите със сусамовия тахан, предварително пасирани фурми и ванилия. Разбъркваме двете смеси в една обща купа и я разпределяме в общо 12 форми за мъфини. Печем за 20-25 минути и накрая за декорация поръсваме кокосови стърготини или друго по желание. *За улеснение може да си запаметите рецептата за вашия следващ кулинарен експеримент. 😏⠀

  • Healthy muffins coco myrtilles et crumble

Je vous ai bassiné avec ces muffins en story et pour cause c'est l'une des meilleurs recettes que j'ai pu creer, et valider au premier essai en plus.
D'ailleurs j'ai pas pu m'empêcher d'en refaire ce week end 🤤🤤

Sans plus attendre la recette pour  7 muffins :
- 2 œufs
- 100g de yaourt coco @alpro
- 20g de sirop d'agave
- 10g d'huile de coco fondue
- 20g de coco râpée
- 80g de farine t65
- 1 cac de levure chimique
- 1 poignée de myrtilles

On mélange tout et on passe à la deuxième préparation ;

Le crumble :
- 10g de sucre
- 10g d'huile de coco
- 20g de farine
- 1cac d'eau
- 1 pincée de fleur de sel

On mélange du bout des doigts et on émiette au dessus des muffins

C'est parti pour 20min de cuisson dans un four préchauffé à 160°C. 👀 Swipe-up pour voir le moelleux des muffins en  vidéo

PS : les caissettes en papiers d'Action accrochent, c'était pas un bon plan mdr
PPS : Si vous les mettez au frigo le crumble va se ramollir c'est très bon mais ça croustille plus 😅

  • For breakfast the kids and I made beef, bacon, egg and cheese muffins. Our version of mighty muffins. The effort was well worth the reward! Takes a while and ended up being quite a late breakfast but if you make the muffins in advance you'll tell maccas to take a hike. I love teaching the kids how you cook, and how you can make great food, better than takeaway, cheaper and at home

Green tea is not a drink before bedtime if the caffeine can disturb your sleep. It contains the amino acid of L-Theanine which makes you awake and concentrate better. The best time to drink is two hours before bedtime or after a meal because this is the lowest metabolism moment and the green tea can increase it. You can drink 2-3 cups in a day.

I have been using buckwheat flour for my gluten free baking lately and I love it!

I started to using it as a substitution for brown rice flour that I've used up. 
It can be tricky to use buckwheat flour as it works differently as rice flour and also it has distinct flavor.
But if you choose the right ingredients, they will create very pleasant harmony with this amazing flour.

And I recently discovered that the flavor of orange and buckwheat goes really well!
These are "typical" combination of orange and cranberry muffins but oh man, buckwheat did really good job!

  • 🐰🥕Morning Glory Muffins - Easter edition ft. @cadburydairymilkca & @only.oats 🐰🥕 You can’t get healthier than this! They are made with all natural, whole food ingredients. The base is a mix of oat flour and whole oats. Naturally (refined sugar free) sweetened, walnuts for protein and vegetables (zucchini + carrot) for nutrients. ⬇️for recipe!

Ingredients
* 2 flax eggs (6 tablespoons water + 2 tablespoons ground flaxseed OR 2 eggs * 21/2 cups oat flour * 1/2 cup old fashioned oats * 1/4 cup walnuts, chipped
* 1/2 cup raisins
* 1 tablespoon ground cinnamon
* 2 teaspoons baking powder
* 1/2 teaspoon salt
* 1 cup grated zucchini
* 1 cup grated carrot
* 1 cup mashed banana, from 2 large or 3 medium super ripe bananas
* 1/2 cup unsweetened apple sauce
* 3 tablespoons maple syrup
* 1 teaspoon vanilla

Instructions
* Preheat your oven to 350 degrees and spray 12 muffin cups with cooking spray.
* Prepare your flax eggs by mixing together 2 tablespoons of ground flaxseed and 6 tablespoons of water. Set aside to thicken.
* Pour 2 cups of oat flour into a bowl.
* To the oat flour, add in the remaining dry ingredients, from the 1/2 cup remaining old-fashioned oats to the salt. Stir to combine.
* Grate your zucchini and carrot. Place the zucchini into a paper towel or dish towel and squeeze out some of the excess water. Then add the zucchini and carrot into the mixing bowl with the dry ingredients.
* Add the remaining wet ingredients into the bowl with the dry ingredients and shredded vegetables and stir everything until just combined.
* Divide the batter evenly among the prepared muffin cups. Add your desired toppings ( I used mini eggs and oats) Bake the muffins for about 26 minutes!

  • 🍓Bright, easy, and delish for breakfast or snack, these Healthy Strawberry Muffins are on my weekend baking list! (Real talk: I was so delighted to find strawberries on sale for $1.98 a quart when I went to the store yesterday...and then I got them home and realized that they were all really soft and on the verge of spoiling🤦‍♀️. Muffins for everyone! And the rest are heading into the freezer for future smoothies or freezer pops🙌🏻.)

  • CHERRY CHOCOLATE CHIP MUFFINS!🍒🍫🍪😍
Baking project with the kids was successful today :) slightly messy too, but it’s okay as long as we have yummy muffins for you all!
INGREDIENTS:
2 cups spelt flour
1/2 cup @kerrygoldusa unsalted butter (1 stick)  melted
2 eggs, room temperature
1 cup almond milk
1 teaspoon vanilla extract
2/3 cup coconut sugar
1/2 teaspoon salt
1 tablespoon baking powder
1 cup chopped cherries (I used frozen)
1/2 cup chocolate chips (I used @lilys_sweets milk style chocolate chips) 
INSTRUCTIONS:

Preheat oven to 425F. Spray the muffin pan with avocado oil.
Melt the butter in a large, microwave secure bowl for 30 seconds. Let it cool and then add in the milk, eggs, coconut sugar and vanilla. Mix well. Stir in the flour, salt, and baking powder and then add the chocolate chips to the batter. 
Fill the muffin pan 3/4 full, add one cherry on top of each muffin. Bake for 18-20 minutes. ENJOY🤍

BLUEBERRY BANANA CASHEW BUTTER BLENDER MUFFINS 
1 cup creamy cashew butter 
2 large, super spotty ripe bananas
2 eggs 
2 tablespoons honey (or maple syrup)
1/2 teaspoon vanilla 
1/2 teaspoon baking powder
3/4 cup fresh blueberries -
1. Preheat oven to 400 F. Grease a muffin tin with butter or coconut oil; set aside. 
2. Combine all ingredients in a blender, except blueberries (or food processor); blend until smooth, approximately 1 minute. Gently fold in blueberries. Pour batter into prepared muffin tin and top with additional blueberries, if desired. Bake for 15 minute, or until set.

    BLUEBERRY BANANA CASHEW BUTTER BLENDER MUFFINS
    1 cup creamy cashew butter
    2 large, super spotty ripe bananas
    2 eggs
    2 tablespoons honey (or maple syrup)
    1/2 teaspoon vanilla
    1/2 teaspoon baking powder
    3/4 cup fresh blueberries -
    1. Preheat oven to 400 F. Grease a muffin tin with butter or coconut oil; set aside.
    2. Combine all ingredients in a blender, except blueberries (or food processor); blend until smooth, approximately 1 minute. Gently fold in blueberries. Pour batter into prepared muffin tin and top with additional blueberries, if desired. Bake for 15 minute, or until set.

  • say helloooo to these CHOCOLATE CARROT MUFFINS!! 🍫🥕🧁 i have a problem and it’s adding veggies to dessert recipes 🤷🏼‍♀️😬 you can’t even taste them, and who doesn’t love a fluffy chocolate muffin with extra goodness?! i reckon one bite could turn a veggie hater into a VEGGIE LOVER within seconds. so without further ado.. i present you the recipe 👇🏻

in a bowl, mix:
300g (about 2 large) grated carrot
2 eggs
1/2 cup dark cocoa powder
1/4 cup honey (i used @egmont_honey) 
pinch of sea salt
3 tbsp melted coconut oil
2 cups oat flour
1 tsp vanilla extract 
2 tsp baking powder —
spoon into the mixture into 10 lightly oiled muffin liners and bake at 160°C/320°F (fan-forced) for 40-45 minutes. —

◾️Ingredientes Crosta◾️⁣
1 batata doce média ralada⁣
1 colher de sopa de óleo de coco derretido⁣
1/4 de colher de chá de alho em pó⁣
1/4 de colher de chá de páprica defumada ⁣
1/4 de sal do rosa⁣
⁣
◾️Ingredientes Recheio◾️⁣
6 colheres de sopa de manteiga ghee derretida⁣
1 colher de chá de Eritritol pulverizado⁣
1 xic farinha de amêndoas⁣
3 colheres de sopa de farinha de coco⁣
3/4 de colher de chá sal rosa⁣
1/4 de colher de chá de alho em pó ⁣
2 colheres de chá de fermento em pó⁣
1/4 de colher de goma xantana ⁣
2 ovos em temperatura ambiente ⁣
1/3 de xic de leite de coco⁣
1/2 xic de queijo coalho ralado ( pode ser⁣
Mozarela) ⁣
1/2 xic de alho poró ralado ⁣
⁣
◾️Modo de Preparo Crosta◾️ ⁣
Prepare uma forma de cupcakes de 12 espaços. Unte com óleo de coco. Misture todos os ingredientes da crosta, e forte o fundo dos espaços de cada cupcake, como se fosse uma massinha de torta. Leve para assar em forno 180 graus por 5 minutos e retire do forno.⁣

◾️Modo de Preparo Recheio◾️ ⁣
Misture todos os ingredientes, deixando um pouco de queijo e um pouco de alho poró para colocar por cima na finalização. Preencha as forminhas, salpique algumas rodelinhas de alho poró  e finalize com um pouquinho de queijo coalho. Leve para assar por 22/25 minutos. Retire do forno, deixe esfriar por 5 minutos e desenforme! ⁣
