  • lately my go-to lunch has been this loaded veggie stir fry 🙌🏻🥦🥕 it’s quick, satisfies my hanger and helps clean out your fridge! 👏🏻😍 this could be made ahead for the week to take to work, and can be made with any veggies you have or like 😊 plus it is so flavorful and delicious, like you had to guess 😏 I think the key is a squeeze of lime juice 🙆🏻‍♀️ enjoy friends!

I start by getting all of my veggies together, whether they’re roasted and leftover, or frozen. today I had roasted carrots and broccoli, red pepper, tempeh and frozen cauliflower rice. I put it all in a pan at once and cooked until warm. I squeezed 1/4 lime juice over the top, pushed to one side and scrambled an egg (optional). tossed it all together and topped with red pepper flakes, green onion and coconut aminos! 😋

  • So, I'm a 5 (and also an 8) which explains why I had the need to research the living daylights out of the Enneagram and its different types. 
I got in the same research kick a few years ago with Meyers Briggs. I spent months learning all I could about the different types. Now I can nail most types within minutes of talking to people. #nerd 
I got made fun of a lot by various people during my obsession with personalities. I know that more than half my friends and family were tired of talking about it. Lol but I couldn't help it. I felt like I had just found this gem that would be just what we (my family) needed to thrive.

So much of what I read made sense, made me feel normal and also helped my husband see that I wasn't "crazy" but that there are other people like me. <---- That just shows you how opposite we are!! It put what we didn't understand about ourselves into words. It gave us a map, in a sense, of how we function. It was like being given a book all about my husband, in a way that even he could never explain it to me. 
We hardly fight anymore. Our communication is so much better. We actually know what to do for each other now and are better because of it! 
Have any of you ever researched your personality type? Are you a Meyer Briggs fan or an Enneagram fan? How has knowing your type affected your life?

Oh yea, and because I'm all about facts and stuff...if you're curious, I'm an INTP and both a 5 and 8. What are you??

  • #facetofacefriday a lot has changed in just 2 short years. The biggest change is that I have lost 35 pounds and have kept it off!! That is the time difference in these 2 pictures. The first is now, well, it was taken the other day but it is current. The other one was at a Tom Perry concert in Nashville 2 years ago. We had stopped there for an overnight stay on our way to New Orleans for an anesthesia conference and to attend Jazz Fest (Maroon 5 and Usher were there!). It is hard sometimes to stay on my healthy journey. You do get obstacles along the way but you deal with it the best you can and get on with it. Don’t dwell on it, just know that tomorrow is another day and life goes on.

For me, it's waking up in the morning FILLED with energy and appreciation, pumped to take on the day ahead. It's living a balanced life, with an 80/20 approach to living. That way we can fuel ourselves with clean choices, while also fully enjoying our glasses of 🍷 and bites of 🍫⠀⠀⠀⠀⠀⠀⠀⠀⠀

Because here's the thing. The most important thing to me is that we make this whole health journey FUN. ⠀⠀⠀⠀⠀⠀⠀⠀⠀

I come from a past of restrictive diets, exhaustive workout routines, and regimented days, and so have many of my clients. The thing is... these methods may work for a hot minute, but as soon as you get bored, fed up, or hungry again, they come to a screeching halt, and you lose any progress you may have had. ⠀⠀⠀⠀⠀⠀⠀⠀⠀

What I've found over and over again with myself and clients is that f you don't love what you're doing, you probably won't stick to it. ⠀⠀⠀⠀⠀⠀⠀⠀⠀

  • Orange you glad kumquats exist? 🍊 These lil citrus beauts might be my new favorite fruit, especially because a serving of 5 kumquats (100 g) gives you 73% of your vitamin C for the day! The edible orange-like peel is sweet, while the center is a juicy pop of tartness (with the potential seed as well). The season of springtime citrus is HERE 🌼😍🍋

Creating a strong support system is part of the foundation to your happiness. Take the time to find those people or thank the ones that you do have now.

  • Paleo chicken fingers is how I roll😎💥✌🏼honestly just looking at this picture is making me hungry - crispy + coconut crusted just the way I like it👅 Chicken fingers and fries are one of my fave “pub meals”, so you know I had to make a healthier version (minus the fries this time). I paired it with a side salad + avocado instead🍃 Also still have some @traderjoes traderjoes everything but the bagel spice so that just took this to a whole new level😍

Here’s the #recipe:
2 pasture-raised chicken breasts, 3/4 cup almond flour, 1/2 cup shredded coconut, 2 eggs, nut milk, salt + pepper to taste.

Heat a pan on med-high with a generous amount of olive oil and also preheat the oven to 375. Whisk eggs, s&p in a bowl, add flour and coconut to separate plates. Cut the chicken into strips. Dip each strip into the eggs, then flour, then coconut. You can also redip into the eggs if not sticking. Add to pan and fry on each side for a few mins or until crispy. Then add the chicken strips to the oven for 20 minutes or fully cooked through. The end! #thechickpeablondie
