  • This weekend I went grocery shopping at @krogerco (which I typically don’t do) but one of my favorite things about their produce section is the ability to get meat or fish, and request to have it dressed from several different options. Makes dinner time easy peasy lemon squeezy! This week I bought a salmon with lemonpepper and garlic seasoning. I tossed a few orange slices and a little EVOO underneath, wrapped that puppy in some foil and baked it at 400 degrees for 25 mins. The red potates and broccoli are leftover from last week, and allowed me to have dinner ready in 30 mins. Thankful for the day and thank you for reading! 🍴🥦🥔

  • I decided tiday that i would like wonton soup for dinner this week. So the prep has begun. This is a 3 day process in the pick is the makings of my stock, lots of goodness, water,chicken,dried shitake mushrooms, celery, peppercorns,ginger,garlic,lemongrass,chilli, carrots,onion, parsley and coriander. It is now bubbling away and will do for a few hours to get all that flavor.
It will then be strained put in the fridge for a day or 2 to cool and let the fat solidify so i can remove it. Then make the wontons and enjoy.
All of this will be worth it for the final product. #homecooking #healthy #yummy #healthyfood #fresh #preparation

  • Made this for dinner tonight! A healthy, low carb and low calorie dish. Creamy parmesan chicken and shrimp, made with hearts of palm linguine. 
First time I've ever tried the hearts of palm and I gotta say, it's pretty delicious. Tastes extremely close to the real deal, honestly the best alternative I have had for pasta. 
Low carb, gluten free, AND delicious! I am a happy camper.

There are always healthier alternatives for the foods you love. You just gotta get out of your comfort zone and try something different. Keep an open mind because, no, the alternatives won't taste EXACTLY like the real deal, but if it's at least close or still delicious as is, it's a winner. 
If your goal is weight loss, put in the extra effort to finding alternatives. Trust me, it's worth it.
