  • It’s been a minute since I’ve made anything this spicy and this delicious. I was starting to think I was off my game. 😔 Tonight’s redeeming dinner is Mexican Street Corn Chowder and it is the answer to what to do with all your summer corn! Corn, potatoes, bacon, chipotle and red bell peppers, onion, spices, chicken broth, and then I finished it off with half and half and some cotija cheese. Spicy, thick, rich, and I’m so glad it makes a monster sized batch because I’m going to tear through this stuff! 😈 #foodporn #chowda #soup #mexicanstreetcorn #healthyeats

  • Here to make #mondaymugcake a thing if it isn’t already 🤗 super simple 1 minute recipe I just made up on the spot that it turned into a beautiful, somewhat healthy dessert creation:
••••••• mix 1/2 cup of @kodiakcake mix with 1tbsp of coconut sugar (or regular if you’d prefer), 1/4 cup almond milk & a generous handful of chocolate chips. microwave for 60-75 seconds and that’s it! something that I guarantee to make your Monday feel like.... less of a Monday.

such an important medicinal plant found throughout the world!! 10x stronger than Echinacea, this plant is common to treat toothache, dry-mouth, + gum and throat infections 😲 no wonder why it gets its name "toothache plant" lol

  • ZUCCHINI LASAGNA ROLL-UPS💥
We were supposed to have chicken parm tonight, but if you’ve been following along in my stories, you know why I haven’t been craving much animal protein (or anything besides bread tbh but here we are). What could I make that would provide similar flavors after promising 👨🏻his favorite meal?  These little guys are completely #plantbased using almond milk mozzarella, but you could make them using any cheese you please!🧀👇🏼 •slice 3 zucchini length wise into thin, even slices a little under 1/4 inch each!
•lightly brown zucchini slices in pan or oven with a little oil of choice, until tender enough to fold/roll
•while zucchini cools, line bottom of baking pan with marinara of choice @raoshomemade Recommended!
•place 1 tbsp of cheese of choice at the base of the zucchini slice, + optional leaves of spinach, then roll up
•place into pan, seams down to help stay together •repeat with each slice, then top all the rollups with more sauce & cheese!
•cover and bake at 375 for about 20 min or until cheese is melty🤤

Brown 1 lb of ground turkey, chicken or beef. Then mix in 16oz of diced tomatoes and season with Italian spices, garlic and onion. Let simmer while you slice 2-3 zucchini’s about 1/8th inch thick. 
Layer the zucchini slices, ricotta cheese, then the meat sauce and repeat until gone

Cover with foil and bake at 375 for 40-50 minutes. Top with additional cheese if desired. Personally, I eat mine with some boathouse farms ranch dressing drizzled on top ☺️ .

THATS IT!!! .
DIRECTIONS 
1. chop up potatoes into wedges and boil in hot water for 5 minutes 
2. pour out water and put potatoes onto baking sheet lined with parchment 
3. add salt and chili powder 
4. bake at 425F for 25 minutes 💥BOOM delicious fries free of oil and fats .

  • *NEW RECIPE* Blackened Swordfish Steak with Honey Lime Mango Jalapeño Cabbage Salad! How’s that for a recipe name?! Haha I had no idea what to name it but holy moly this combo turned out fabulous! I have to admit I’m pretty proud of this recipe! Bonus, it only took less than 20 minutes to put together! This was also my first time eating swordfish and I was v impressed! For those who haven’t tried it, it is a very mild tasting white fish. I found these steaks in the frozen section at Trader Joe’s and decided to give them a try - so glad I did! Recipe below! .

Blackened Swordfish Steak with Honey Lime Mango Jalapeño Cabbage Salad!

Because the swordfish steaks were frozen (There were two in the package), I removed from package and thawed in a ziplock in cold water. Apparently you can cook from frozen too per cooking instructions on package. Once thawed I rinsed fish under cold water and dried with paper towel. I then seasoned both sides with garlic powder, salt, and blackening seasoning (I buy mine from Whole Foods). I chose to cook mine on the stovetop, however you could also bake or grill. I heated about a Tablespoon of EVOO in pan over High heat, then added fish. Cooked on high for 3 minutes on each side. 
For the “salad” I cubed one ripe mango, cut 2 cups worth of red cabbage into strips, diced half of a jalapeño and combined in bowl. In separate bowl I whisked together the juice of 2 limes and a tablespoons of honey then added to salad and tossed together. Add to top of cooked swordfish steak and serve! This makes enough for two! Hope you try and enjoy!

While my intentions were harmless, only using MyFitnessPal as a way to GAIN WEIGHT (you read that right), it was still mainly about one thing: control.
I have a Type A personality.
I enjoyed seeing the numbers.
but my life became so entangled in numbers and calculations that it was taking away my intuition.
Heck, I would feel like I failed if I didn’t eat enough for the day. 
When I am building my plate, I make sure that there is a good source of protein, a nice portion of carbohydrate, and a few sources of healthy fats.
Food should not be overcomplicated.
It is OKAY if you do not follow a meal plan or the MyPlate guidelines.
It is OKAY if you eat more that the serving “suggestion”.
It is OKAY if you eat more than someone else.
As you scroll through many images of food, remember that you can eat food in a way that works best for you without labels or plugging it into an app AND STILL BE HEALTHY.

  • Do yourself a favor and save this recipe because this is the CRUNCHIEST granola ever! Only requires a few ingredients, easy to make + it adds the perfect caramelized crunchy taste to your yogurt or oatmeal bowl 🤤

BANANA GRANOLA 🍌

1 ripe banana
4dl rolled oats
6tbsp pumpkin seeds
4tbsp sunflower seeds
handful of nuts (i use cashew/almond)
1tbsp honey/maple syrup
1tsp cinnamon
1/2tsp cardamom
~
mash the banana & honey/maple with a hand mixer or blender until it gets a consistency similar to smoothie. add all ingredients to a bowl with the banana-mixture and blend well. spread evenly on a baking sheet covered with parchment paper and bake in oven for 30-40 minutes on 185C. open to check and give the granola a stir once in a while to avoid burning. + for extra crunchiness you can leave it in the oven after turning it off, and take it out after 20-30 minutes ✨ #granola #bananagranola

If not, I just wanted to reiterate that this is the why behind every post whether it’s fashion, fitness, food, or home decor.  Sounds like a lot of different aspects of life, and it is, but what I’ve found is that being healthy and happy is MORE than just fashion, fitness, or food... its a balance of all.👠🍌🏠

👇But today let’s talk about the food... ten years ago if you told me I’d be eating cheese and chocolate, I’d be laughing right back at you.  I grew up during the low-fat diet trend, meaning that I thought that eating healthy meant only salads, egg whites, and fat-free cheese. 👉I never would have thought to have been able to eat some of the foods I’m eating today and being able to balance them, let alone feel mentally okay.

👉👉But looking just at this salad bowl with organic spring mix, organic chicken, pomegranate seeds, CHEESE, and some homemade dressing with EVOO today, I can see that a lot has changed.  It may take a while to improve nutrition, but if I’m able to do it, you can too! Everything can fit onto your plate and/or bowl.❤️

  • Sometimes I’m really insecure and it shows. Exhibit A,👆🏽. For sometime now I’ve been using my wings as a🛡. They’ve protected me from my fears which has kept me grounded. Call me cliché but “what good are wings without the courage to fly?” The more fears I face + the more confidence I gain, and the more ready I feel to spread my 🦋s. I’m not afraid of heights. I have the strength to pick myself up from fall. I’m at the point where I’m more afraid for my life not to change, and it’s that fear that motivates me to fly ✌🏼 #kalemesam

salt and pepper to taste

Instructions:
Preheat oven to 400 degrees.
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Add the cooked bacon to a blender or food processor. Blend for 30 seconds. Add the almond flour and shredded parmesan cheese to the blender. Blend for 30-40 seconds to create a crusted topping. Place the crust mixture in a medium-sized bowl.

Add the Italian Seasoning, chicken seasoning, salt, and pepper to the bowl with the bacon and almond flour. Stir well.

Dip the chicken cubes in the egg first and then the crust mixture.  Place the chicken pieces on the pan with the parchment paper.

Spray the top of the chicken with cooking oil. Bake for 20-22 minutes until the nuggets are crisp.
