  • Haven’t posted in awhile but this was too good to not share....
Buffalo chicken spaghetti squash bowl
▪️shredded Rotisserie chicken, 1 carrot, 2 celery sticks, 1 onion, 1/3 cup Frank’s red hot buffalo, handful cheddar cheese, 2 spaghetti squash ends chopped, halved and seeds spooned out
▪️line sheet pan with parchment paper, place spaghetti squash cut side face down, bake 40-60 min (or until soft enough), fork out spaghetti squash and put in bowl
▪️sauté onions, celery carrots and season with s+p while squash is baking
▪️add celery, onion, carrots, shredded chicken to spaghetti squash and mix in buffalo sauce
▪️put back into spaghetti squash shells, sprinkle cheddar cheese on top and bake for 10-15 or until hot
▪️optional: top with green onions and ranch / blue cheese

Lentil Shepard’s Pie
🌱 POTATO deets
• 3 russet potatoes or 7 c of Yukon potatoes (cut in half)
• 4 tablespoon ghee or plant based butter
• s&p to taste

1. Boil potatoes until soft (30 mins)
2. Drain. Peel and use fork, pastry cutter or masher to mash until smooth.
3. Add butter & s&p. Set aside.

🌱 LENTIL deets
• 1 1/2 c green lentils (uncooked)
• 4 c vegetable stock
• 1 c mixed vegetables (frozen)
• 1 c diced mushrooms (baby bellas)
• 1 onion (diced)
• 4 cloves garlic (minced)
• 2 sprigs of thyme (more to garnish)
• 2 tablespoon oil
• s&p to taste
——
1. Heat oil in pot, cook onions & garlic until fragrant.
2. Add mushrooms, lentils, stock & thyme.
3. Cook covered on low for 40 mins or until lentils are soft.
4. Preheat oven to 400. Add mixed vegetables into pot & let cook for 5 mins (if you find it too mushy & want to make it thicker, add 1 -2 tablespoons of cornstarch).
5. S&P to taste. Oil a 2 quart baking dish & add lentil mix evenly. Add potatoes evenly on top of lentils. Bake for 15 mins or until potatoes are golden brown.
I bet you can’t just have one serving- they are so satisfying!

  • I haven't made a waffle in forever! lets just say ive had a lot of messed up waffles trying to make my own with this thing here😂 I decided to pull it back out yesterday and give it a try & it turned out so good! all I did was follow the package for the strawberry chocolate chip mix that I used and then topped it off with @siggisdairy mixed berries yogurt, blueberries, hemp seeds & a little maple syrup😋I love adding @siggisdairy to these for a creamy topping, plus it adds a bit of protein to the breakfast and still being lower in sugar. a go-to around here forsure. hope you have a great day💛#dailysiggis #sponsored

Express Yellow Curry 30 minutes:
·  1/2 cauliflower
·  1/2 red peppers ·  1/2 can of chickpeas
·  1/4 baked pumpkin ·  2 small spoons of Yellow Curry paste
.  1 spoon of turmeric powder
·  1 can of coconut milk
·  Olive oil to spray the pan
·  Fresh corriander and lime
Sprinkle cauliflower with turmeric. Put cauliflower and the whole pumpkin to the oven and bake it for 20-25 minutes (180 Celsius degrees). Heat  the pan, spray it and add Curry Paste. Once you smell the paste add coconut milk and bring it to boil. Add peppers and cook with lid on for 15 min. Add cauliflower, pumpkin and chickpeas for 1 minute. Enjoy!!!

.  1 lyzka kurkumy
·  1 puszka mleka kokosowego
·  Oliwa z oliwek (spray na patelnie)
·  Swieza kolendra i limonka 
Posyp kalafiora kurkuma. Wstaw kalafiora i dyne w calosci do piekarnika na 20-25 minut (180 stopni Celcjusza). Rozgrzej patelnie i spryskaj oliwa z oliwek, dodaj zolta paste chilli. Jak poczujesz piekny zapach pasty to dodaj mleko kokosowe i doprowadz je do wrzenia. Dodaj papryke czerwona i gotuj pod przykryciem 15 minut. Dodaj kalafior, dynie I cieciorke - gotuj przez 1 minute. Smacznego!!!

  • Easy breakfast courtesy of clearing out the fridge this weekend. Upgraded the recipe with chorizo + cumin + coriander seeds adding flavour to pimp the veg.

Cooked in one cooking pan in under 15 mins. You could fry instead of scrambled if you prefer. Use any vegetables you have to use up such as carrots, leeks, cabbage, sprouts etc.

• handful white mushrooms
• large handful curly kale
• 1 small onion
• Chorizo, 25 grams - finely diced
• 1/2 tbsp EV Olive Oil
• 1/2 tbsp coriander seeds / cumin seeds

1. Heat pan on medium high. Add the onion and chorizo. Cook down for 3 minutes until onions soft and chorizo is crisped.
2. Reduce to medium. Add the spices + Add the mushrooms. Cook for 2 mins.
3. Add the kale, cook for 2 mins.
4. Remove the veggies.
5. In a bowl, beat the eggs.
6. Add the EV Olive oil to the pan on medium heat.
7. Add the eggs, allow to set then fold in the edges allowing the uncooked egg to flow into the empty space and repeat clockwise.
7. Turn heat off when 80% cooked through as it will contribute to cook through the next few minutes.
8. Add the eggs to the hash and serve.

Great way to add some additional veggies in to your breakfast whilst keeping it low carb with ample protein and fat.
