  • [ESP] Como saben en Canada estamos en otoño, y con estos días fríos la sopas son lo mas! Yo pongo cebolla, ajo, apio y zanahoria todo picado con una cucharadita de aceite, sal, curcuma, pimienta, oregano y perejil en una olla, mezclo todo y tapo hasta q este todo bien cocido, agrego agua (bastante mas de lo que vamos a hacer la sopa). Luego agrego 1/4 taza de lentejas partidas y 2 papas en cubos. Subo la te temp hasta q hierva. Agrego los fideos deseados y cocino hasta q este blanditos. Y si quieres al final podes agregar arvejas congeladas y tapas por unos minutos para asegurarse que hayan descongeladas y a comer!

I put onion, garlic, celery and carrot all chopped with a teaspoon of oil, salt, curcuma, pepper, oregano and parsley in a pot, mix everything and cover until everything is well cooked, add water (much more than to make the soup). Then I add 1/4 cup of split lentils and 2 diced potatoes.  Raise the temp until it boils.  Add the desired noodles and cook until this soft.  And if you want in the end you can add frozen peas and cover for a few minutes to make sure they have thawed and then is ready to eat!

  • Vegan Mac and Cheese by @schoolnightvegan 🧡

(Serves 5)

Ingredients
For the Pasta
350 g macaroni (or your fave pasta!)
pinch sea salt
For the Sauce
65 g cashews (raw unsalted)
70 g carrot (about 1 medium carrot, diced)
3 tbsp nutritional yeast
1½ tsp flaky sea salt
½ tsp onion powder
½ tsp garlic powder
2 tbsp potato starch (1 tbsp corn starch also works well as a replacement)
1 tbsp tapioca starch
300 ml water
300 ml plant milk
1 tsp white miso
1 tsp rice vinegar (white wine or cider vinegar works too)
1/2 tsp agave syrup
2 tbsp rapeseed oil (cold pressed)
Instructions
To Make the Pasta
Fill a large saucepan with water. Add the salt and bring to a boil.
Add the pasta and cook until al-dente, stirring occasionally.
Once cooked, drain the pasta and drizzle with a little oil to stop it form sticking together. Set aside.
For the Sauce
Soak the cashews in just boiled water for a minimum of 2 hours. The longer you soak, the smoother the mac and cheese will be.
Fill a small saucepan with boiling water and place over medium heat. Add the carrots and boil for around 20 minutes or until soft and well cooked. Drain and discard the water. Place the carrots in the cup of a high speed blender.
To the cup, add the remaining sauce ingredients.
Drain the soaked cashews and give them a rinse under the tap. Add to the cup along with the other ingredients. Blend on high speed until very smooth.
Transfer the sauce to a medium saucepan and place over a medium/low heat. Stirring or whisking constantly, heat the sauce until it begins to bubble and becomes thick and glossy. If the sauce becomes lumpy, don't worry, just blitz it with a stick blender.
Stir the sauce through the cooked pasta and serve. I like to serve mine with a sprinkle of chipotle chilli powder or smoked paprika. [recipe as posted on schoolnightvegan.com, courtesy of @schoolnightvegan]. #bestofvegan

Ingredients:

25 uncooked jumbo pasta shells
1 (14 ounce) package of firm tofu
1 cup raw almonds
1/2 tsp salt
4 tbsp nutritional yeast
1/2 tbsp garlic powder
1/2 tbsp onion powder
1/4 tsp pepper
3 cups chopped spinach
1/2 cup unsweetened almond milk

CREAMY PUMPKIN SAUCE
1 small sugar pie pumpkin or butternut squash 
1/4 cup raw cashews
1 cup unsweetened almond milk
1/2 cup filtered watered
1 tsp salt
1/2 tsp pepper
1/4 cup nutritional yeast
1 1/2 tbsp tomato paste
1 tsp garlic powder

Method:

1.Preheat oven to 400 degrees F.
2. Cook the pasta according to the package directions, drain and set aside.
3.Cut the pumpkin in half, de-seed and carefully cut skin off. Cut into chunks, place the pumpkin on a baking sheet lined with parchment paper and bake for 25 minutes.
 RICOTTA:
1. Mean while bring a small pot of water to a boil. Place your raw almonds into the boiling water. Let boil for 2 minutes.
2. Drain the almonds immediately in a colander or strainer and rinse them with cold water to cool them. Blot the almonds dry with a paper towel.
3. Use your fingers to gently squeeze the almonds and loosen the skin from them. Set skinless almonds in a bowl and set aside.
4. Remove tofu from package and wrap in a clean kitchen towel or paper towel and squeeze for 20 seconds to allow for excess water to strain.
5. In a food processor or high speed blender combine tofu, blanched almonds, nutritional yeast, unsweetened almond milk, garlic powder, onion powder, salt & pepper. Blend for 1-2 minutes or until there is no chunks. Mixture will look lumpy and that is okay! Add more almond milk if needed. 6. In a small pan cook chopped spinach with 1 tbsp on water for 1 minute or until spinach is wilted down.
7.Once ricotta mixture is made and spinach is ready, combine the two in a medium size bowl and mix well. Taste mixture and add any extra salt or seasonings if needed.
