1/4 cup of tahini
1/4 cup lemon juice
2-3 mashed garlic cloves (up to your taste)
1/4 teaspoon of ground cumin
A handful of chopped fresh Parsley
1 teaspoon Olive oil
1 teaspoon of salt *
1) Heat oven at 190c. Place your aubergines onto the tray covered with foil. Poke holes in your aubergine with a fork. Roast aubergines for 25-30 mins or till completely soft.
2) Meanwhile, combine tahini, lemon juice, garlic, cumin, salt and olive oil in a medium bowl. Set aside.
