There are many benefits to lentils. I know this because I have come across this information many times when reading up on nutritious eating. From what I understand, lentils has the potential to aid in many ailments such as heart health, low iron, and poor digestion, but I also understand that it can also boost metabolism and help with muscle degeneration and weight control. NICE! So as part of a training program that I am doing with the lovely @tammybalfour red lentils are on my eating plan and honestly not as bad as I thought as I am really enjoying my different takes on lentils. Lentil soup is one of my easiest and most used lentil soup recipes I use as part of my program. It really is a quick and easy recipe. I hope you enjoy this one. It’s low in calories and fat.

2 cups red lentils washed and drained
4 cloves garlic minced 
Β½ medium brown onion sliced 
Β½ medium red onion chopped 
Β½ tsp mustard seeds 
2 dried chillies ripped in half (optional) 
1 sprig curry leaves 
ΒΌ tsp turmeric powder
ΒΌ tsp fenugreek seeds 
Β½ tsp garam masala 
Olive oil 
Salt and pepper to taste

1. In a pot fry brown onions, garlic, dried chillies mustard seeds and curry leaves on medium heat in a dash of olive oil. 
2. Once fragrant and onions are golden add washed lentils, turmeric powder, garam masala and fenugreek seeds to pot. Top with 4-5 cups of water and allow to boil for 20 mins or until lentils appear to be creamy in appearance. 
3. Once lentils are creamy, season with salt and pepper to taste and chopped red onions. Additionally you can also add half a cup more water if the soup is too thick. 
4. Serve in a bowl topped with more chopped red onions, roasted garlic and/or capsicums.
