Starting this BEAUTIFUL Tuesday with my favorite breakfast before I go give a presentation about my course redesign to other faculty (plus the dean 😅😬) at the college. Little nervous but also excited to share how much work I’ve put into my course and how it has evolved. Pathology is my favorite class to teach and I’m excited about the changes I’ve made that will make the content more meaningful for my nursing students. 🦠

INGREDIENTS⠀
1 rack baby back ribs, membrane removed (this is essential for de-boning)⠀
DRY RUB⠀
2 tablespoons  paprika⠀
1 tablespoon  pepper⠀
2 tablespoons  brown sugar⠀
2 teaspoons  salt⠀
1 teaspoon  garlic powder⠀
1 teaspoon  onion powder⠀
1 teaspoon  cumin⠀
1 teaspoon  chili powder⠀
GLAZE⠀
1 cup  barbecue sauce⠀
¼ cup  honey⠀
1 loaf bread, large loaf⠀
¼ cup  butter, melted⠀
1 tablespoon  sesame seed⠀
2 large onions, sliced and caramelized⠀
2 tablespoons  fresh parsley, chopped⠀
DIRECTIONS⠀
Preheat the oven to 300°F (150°C).⠀
Lay the ribs on a long sheet of aluminum foil. Combine the paprika, pepper, brown sugar, salt, garlic powder, onion powder, cumin, and chili powder in a small bowl, then cover the ribs evenly on both sides, pressing the rub into any cracks and smoothing out any large lumps. Wrap the foil around the ribs, making sure they’re completely sealed. It’s important that the juices of the ribs stay inside the foil to keep the ribs moist during cooking. Use more sheets of foil if necessary.⠀
Bake the ribs for 3-3½ hours, until tender. Unwrap the ribs carefully, then wiggle the bones out slowly. If you’re having trouble removing the bones, use a knife to make small cuts in the meat to aid their removal. Preheat the broiler on your oven.⠀
Combine the barbecue sauce and honey in a small bowl and brush both sides of the deboned slab of ribs generously, being sure to carefully handle the ribs since the meat will be super tender.⠀
Broil the ribs for about 5 minutes until the glaze is bubbling and starting to brown.⠀
Slice the bread loaf in half lengthwise, then butter both sides of the bread. Sprinkle sesame seeds on the outside of the bread, then toast under the broiler for a few minutes. Keep a careful eye on it as they will burn extremely quickly.⠀

Started by adding a little EVO to the shrimp and mixing well. Covered the shrimp in @lanesbbq Qnami (magic in a bottle) and grilled raised direct on my @biggreenegg XL at 400°. If you don’t have the new BGE perforated half moon pan you need one. This thing make grilling shrimp, veggies, etc. so easy. The best way to capture that @fogocharcoal wood fired taste.

  • Direction le Sénégal avec cette délicieuse recette de pastels au thon ! Il s’agit de beignets farcis au thon, à la tomate, aux herbes aromatiques et au piment. Idéale pour l’apéritif, cette recette est facile à réaliser et surprendra vos invités !

INGRÉDIENTS 
Pâte: 325 g de farine
1 pincée de sel
50 g de beurre
2 oeufs
1/2 verre de lait
1 sachet de levure boulangère
 ___________________________________________________
Farce: 3 boites de thon
2 oignons
3 gousse d'ail 
poivre 
Piment en poudre
1 cube maggi 
1 bouquet de persil
2 cuillerées à soupe de tomates concentrée
 ___________________________________________________
Sauce tomate:
2 tomates
1 oignon
1 gousse d'ail
1 cuillère à soupe de concentré de tomates
Sel
Poivre
___________________________________________________
Préparation de la farce :
Mettre dans l'huile dans une poêle et ajouter l'oignon coupé en morceau, laisser cuire quelque minute. Ensuite ajouter le thon, le poivre, le piment, l'ail, le cube maggi émietté, le persil et la tomate 
Préparer la pâte :
Dans un grand plat mettre la farine, la levure, le beurre, le sel et mélanger bien. Battre les œufs, y ajouter le lait, puis l'ajouter dans le mélange de farine. Pétrir le tout ensemble (au besoin, rajouter de la farine), laisser reposer la pâte 1 h. Après repos de la pâte l'étendre au rouleau à pâtisserie à 3MM et avec l'emporte-pièce faire des ronds, la remplir de farce. Refermer avec les dents d'une fourchette. Cuire les pastels dans une huile chaude jusqu'à coloration comme la photo
Préparation de la sauce tomate:
Faire revenir l'oignon coupé en petit morceau dans l'huile, ajouter les tomates râpé avec la gousse d'ail émincé, une cuillère de concentré de 
tomate, du sel et poivre. Laisser mijoter 20 à 30 minutes.
Servez chaud, accompagné de la  sauce tomate.
