She’s a genius... doesn’t it just bring it to life?

In case you’re interested in the vegan aioli... @jskot @suzitros made this with aquafaba - the viscous water that chickpeas have cooked in. It’s similar properties to egg white mean it’s often used as a replacement in meringues and marshmallows for plant based recipes.

Ingredients⠀⠀⠀⠀⠀⠀⠀⠀⠀
400g Cherry Tomatoes⠀⠀⠀⠀⠀⠀⠀⠀⠀
2 tbs olive oil⠀⠀⠀⠀⠀⠀⠀⠀⠀
350g Spaghetti⠀⠀⠀⠀⠀⠀⠀⠀⠀
55g pitted Black Olives⠀⠀⠀⠀⠀⠀⠀⠀⠀
100g Baby Spinach⠀⠀⠀⠀⠀⠀⠀⠀⠀
Lucy’s Pesto Dressing⠀⠀⠀⠀⠀⠀⠀⠀⠀
Pecorino cheese⠀⠀⠀⠀⠀⠀⠀⠀⠀
Salt and Black pepper⠀⠀⠀⠀⠀⠀⠀⠀⠀
Method⠀⠀⠀⠀⠀⠀⠀⠀⠀
1.	Preheat the oven to 200c. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
2.	Place the tomatoes on a baking tray and drizzle with olive oil . Season with salt and pepper. Place in oven and roast for 20 minutes until the tomatoes begin to blister. Add the olives and roast for a further 10 minutes.⠀⠀⠀⠀⠀⠀⠀⠀⠀
3.	Meanwhile bring a large pan of salted water to the boil. Add the spaghetti and cook for 10 -12, until al dente. Stir in the spinach and then drain the pasta. Return the pasta to the pan and stir in the pesto dressing. Divide between bowls and top with the roasted tomatoes and olives. Shave over the Pecorino and serve immediately.⠀⠀⠀⠀⠀⠀⠀⠀⠀

  • These Vietnamese Fresh Spring rolls are heavenly. I made these for dinner guests this weekend and they were polished off quickly! They are so easy to make, full of a medley of beautiful fresh and light produce and prawns, and the homemade dipping sauce is simply outstanding (I could sip it alone off a spoon!). I don’t often give away the full recipe from dishes in @reddotmeltingpotcookbook. This one happens to be the very first recipe in the entire book!

To make, remove the heads, tails and shells and devein 500 g (18 oz) prawns. Boil for 1 min water until pink and cooked through. Remove with a slotted spoon, let cool, then slice in half (so each half is symmetric swirl shapes). Cook 150 g (5 oz) dried Vietnamese rice noodles following the package instruction (usually this means boiling in water 5 mins). For a small head of crispy lettuce, wash and separate the leaves, and break into 10 cm (4 in) sections. Wash and keep in bowls a large handful of mint leaves, a large handful of coriander leaves, and a handful of Asian chives (or chives), cut to be 10 cm (4 in) long. Julienne 1/2 cucumber. To make, one by one, dip 1 Vietnamese round rice paper sheet into water (do not soak). Lay on a flat surface. At the bottom 1/3rd of the sheet closest to you, add in a little bit of all the ingredients (can add edible flowers first if desired, 2 prawn halves, a bit of noodles, some of the prepared cucumber, chives, mint and coriander leaves and some lettuce). Leave the far right with no ingredients on it. Be careful not to overfill. Take the right 1/3 of the rice paper and fold it over back onto itself (fold left), sealing the right side close. Use the “tuck and roll” method to seal. Use your fingers to push in the ingredients to tuck into the rice paper and start rolling, away from you, until it closes itself. The rice paper, as it has been softened, will be self adhesive and with seal up when the ends touch. Continue with all. Makes approximately 10 rolls..

  • #ad | i love a sparkling soft drink, but i don’t have them often because of the high sugar content, so i’m really excited about the new light range from @fentimansltd, which offers lower sugar versions of their iconic rose lemonade, sparkling raspberry, and gently sparkling elderflower soft drinks! ✨  they’re made using the same botanical brewing method that #Fentimans have been using for over 100 years, and have the same fruity and floral flavour of the originals, but they’re sweetened with stevia, making them less than 60 calories per bottle with no artificial sweeteners. they’re delightful all on their own, but for that extra pizazz try adding fresh fruit or herbs as garnish! i used lemon wedges, raspberries, cucumber, and fresh mint to make mine garden party ready. 🌱🍋🍓 yes yes, i know it’s only january, but if i close my eyes i can just imagine it’s a warm summer’s day while sipping away at my gorgeously garnished sparkling soda! ☀️🌴🍹 you can find the new @fentimansltd light range in selected @sainsburys. 🛒  #BotanicallyLight

Delving into this glorious cherry, açaí and avocado smoothie bowl 🍒 
Here’s how to make it…
1 small avocado
1/2 cup frozen cherries
1/2 cup of sliced frozen banana
2 large tbsp fulls of coconut yoghurt
2 cm slice fresh ginger
1/4 cup for scoop-able frozen açaí 
Blend until whipped and creamy. Top with peanut butter, cherries, more yog, granola, dark choc chunks and pomegranate. Enjoy! x

A creamy smoothie blend with a toasted coconut chip crunch. 
To make-
1 frozen banana
1/2 avocado 
1 date 
2cm fresh ginger (optional) 
1&1/2 tbsp cacao powder
1 tbsp crunch dark roasted peanut butter
1 small handful of toasted coconut chips 
3 heaped tbsp of coconut yoghurt
Also added 4 tbsp of coconut milk to help the mix blend.
Spoon into bowl and top with more coconut chips, banana, peanut butter, dark choc chunks and melted dark choc (both 85%).
