Tartar de Frijol Mungo, Snapper, curado en jugo de remolachas, azucar y sal. Yema de huevo confitada en olive por 1 hora a 62C  espuma de Hinojos, apple sugar y ensalada de cascaras de todos los vegetales utilizados con hierbas. .

La idea es utilizar todos los ingredients de mi cocina al maximo, asi de esa manera generamos “Zero waste”.
Creo que es algo en los que todos los chefs deberiamos estar enfocados y es nuestro deber enseñar a las personas en casa, asi generamos menos basura de comida a nivel mundial y aprendemos a cocinar con todas las partes de los ingredients.

Açmak İçin; 🔹 125 gr Yumuşak Tereyağ ▪️Tencerenin içerisine süt, sıvıyağ ve suyu koyup, ocakta ılıtıyoruz. (Serçe parmağı dolandırınca, parmak yanmıyorsa tamamdır.)
▪️Yoğurma kabımıza alıyoruz. İçine 2 tam yumurta ve 2 yumurta akını ekliyoruz. 1 Paket yaş maya ve 6 tatlı kaşığı şeker ve 2 tatlı kaşığı tuzu ekliyoruz. Tüm malzemeleri maya eriyinceye kadar güzelce karıştırıyoruz.
▪️Unun bir kısmını ekleyerek tahta kaşıkla yoğurma kıvamına kadar karıştırıyoruz. Sonra el ile yoğurmaya başla. Az az un eklemeyi unutma. Sonra tezgaha biraz un ekleyerek hamuru tezgaha alalım.
▪️Ellerini yıkamayı unutma. Temiz ellerle hamuru biraz tezgahta yoğurup, kaba alıp örtü ile sarıyoruz. 45 dk ılık fırında mayalanmaya bırakıyoruz.
▪️Mayalanan hamurun havasınu aldıktan sonra tezgaha alarak bezelere ayırıyoruz. Bezelerin üzerini örtüp 5 dk bekliyoruz.
▪️Tereyağınj bütün bezelerin üstüne pay ediyoruz. Yağı elimizle bastırarak güzelce açıyoruz. Rulo yapıp kenera alıyoruz. 10 dk tezgahta dinlendiriyoruz rulolarımızı.
▪️Dinlenen rulolarımızı 40-50 cm yapıp  örgü yapıyoruz. Açma şekline getiriyoruz.
▪️Yağlı kağıtlı tepsiye yerleştiriyoruz. Tepsi mayasıniçin 5 dk daha bekliyoruz. İsterseniz yine fırın içine koyabilirsiniz. 2 kat kabarması lazım.
▪️Yumurta sarısı içine 1 kaşık süt ekleyerek zarifçe açmaların üzerine sürüyoruz. Çok bastırırsanız kabarıklığı iner. İsteğe bağlı susam, çörek otu eklenebilir. Önceden ısıtılmış 200 derece fırında üzeri kızarana kadar pişirin.

Obtuvo su primera experiencia Park Hyatt Mendoza, donde trabajó durante 7 años. Luego se mudó a Punta del Este Uruguay donde formó parte del Hotel Fasano Las Piedras Relais Chateaux durante 5 años. Cuando terminó su trabajo en Uruguay, tomó 6 meses para viajar y trabajar alrededor del mundo (Londres, Noruega y Asia). En 2015 volvió a la familia Hyatt con el desafío de la apertura de Grand Hyatt Rio de Janeiro y formar parte Hyatt Regency Cartagena Colombia. 
Años después viajó a Las Bahamas y se unió al equipo culinario de Grand Hyatt Baha Mar, trabajé allí durante 2 años en esta gran propiedad con más de 20 restaurantes y operaciones de grandes eventos. Ahora esta en Auckland, trabajando en la apertura de Park Hyatt Auckland en Nueva Zelanda.

  • marmita solidária não é um projeto de distribuição alimentar, ela semeia a fraternidade com o voluntariado, a doação da matéria prima, da mão de obra e do amor que envolve todo o processo. As pessoas se tornam mais amáveis quando se sentem úteis e isso transforma o mundo, o futuro de nossos filhos. Este projeto distribui amor em cada marmita. Quando duas mãos se estendem para receber o alimento, seja um pai de família ou um morador de rua alcoolizado ou drogrado, uma alma é tocada pela gratidão e outra pela bondade de ser útil. E assim Deus está presente. 
Não somos capazes de julgar (não deveríamos ao menos) a vida de cada pessoa que está na rua ou em alojamentos precários (barracas de plástico ao lado dos lixões por exemplo). Mas somos capazes de amar e distribuir o que é o mínimo necessário para a vida: alimento e o amor. 
Seja você também voluntário, seja na mão de obra ou na matéria prima. Com fraternidade somos mais úteis e menos fúteis. Ajudar o próximo é ajudar a si mesmo. 
Pense nisso!!!

Been seeing posts on the "Home Chopped Challenge" for the past month from @foodnetwork @conantnyc @geoffreyzakarian and others so my family has challenged me. Be sure to watch until the end to see the judges table ❤️. Here are the rules:
1- Have a family member or friend to pick 4 must have ingredients from your pantry.  Do not cheat, make it a surprise!!!
2- Cook your best dish within 24 hours and share it using #choppedchallenge
3- Nominate and tag 3 other people. .

I nominate three legends from my former Culinary Team: Javier Crespo, Rachel Baylon and Carlos Jurado.  No cheating!! .

I am kicking up the challenge cooking tandem with my boy Mr. Piggles!! So now I need to break the rules and nominate my fourth @bologna_hawk 🐶. .

Happy Sunday! Well we made it another week in this crazy whacked time we’re all living in. I hope everyone is safe and not going insane chilling at home! I will say, the silver lining in this for me is I’m enjoying the family time! Taking walks and getting creative with exercise has also been enjoyable. The weather is amazing right now here in Arizona so I’m just gonna stay positive and keep my mind straight. Just so everyone knows I’m a hugger, so I’m looking forward to hugging all my peeps when this ends 🤗.
