  • BUBBLE TEA (homemade from scratch!) It had been a dream since many years now to make my own bubble tea and I DID ITTT. I cried when I tasted the finished product because it was very close to the original so YAAAAY. The process is fairly simple it just takes a little while to make! 
Steps - heat 70 ml water and 50 gms brown sugar. When the sugar just melts, add 100 gms tapioca starch and stir constantly with a wooden spoon for 1 min on a low flame. • take it off heat and mix well till a sticky rough dough forms. Transfer to a work surface and knead it into a smooth dough (you might require a little bit more flour or water depending) • cut the dough into equal portions and roll each portion out into a thin rope. Cut the rope into tiny 1/4 inch pieces and roll each it into tiny balls. Dust with more starch to prevent sticking to each other. • Get water to a rolling boil, add the bubbles and stir constantly for 2 mins. Once they start floating, boil for 20 more minutes, stirring occasionally. • meanwhile prepare your tea - milk + sugar + black tea - and keep it in the fridge. • once the bubbles are cooked, transfer them to ice water to cool down and become less sticky. • heat 1 cup water and half cup sugar, once it comes to a boil, lower the heat and add the bubbles. Let it simmer for 20 minutes. This will be the braising syrup. • once done, enjoy with ice and milk tea! 🥰🥰
