  • The use of whole green gram or moong is very common in day-to-day Gujarati fare. Khatta moong is a lovely recipe that features cooked moong simmered with curds and spices.

Preparation Time: 5 mins  Cooking Time: 15 mins  Total Time: 20 mins Makes 4 servings

Ingredients
1 cup moong (whole green gram)
1 cup sour curds (khatta dahi) , whisked
3/4 tsp chilli powder
1/2 tsp turmeric powder (haldi)
1 tbsp besan (bengal gram flour)
2 tbsp oil
1 tsp mustard seeds ( rai / sarson)
3 to 4 curry leaves (kadi patta)
1/4 tsp asafoetida (hing)
1/2 tsp ginger-green chilli paste
salt to taste

For The Garnish
2 tbsp finely chopped coriander (dhania)

For Serving
rice /roti

Method
Wash and soak the whole moong in enough water for 2 to 3 hours. Drain.Add 1½ cups of water and pressure cook for 2 whistles.Allow the steam to escape before opening the lid. Keep aside.Combine the sour curds, chilli powder, turmeric powder and besan in a bowl and mix well. Keep aside.Heat the oil in a deep non-stick kadhai and add the mustard seeds, curry leaves, asafoetida and ginger-green chilli paste and sauté on a medium flame for a few seconds.Add the cooked moong, mix well and cook on a medium flame for 1 minute.Add the curds-besan mixture, salt and 1 cup of water, mix well and simmer for 3 to 4 minutes, while stirring occasionally. Garnish with coriander and serve immediately with rice or roti.

  • Here’s an innovative twist to one of South India’s most traditional recipes! In this unique Sweet Idli recipe, the idli batter is layered with a pooran of moong dal, coconut and jaggery flavoured mildly with cardamom powder.

Preparation Time: 10 mins  Cooking Time: 20 mins  Total Time: 30 mins Makes 12 idlis

Ingredients
2 cups idli batter
oil for greasing

For The (moong Dal Jaggery) Stuffing
1/4 cup yellow moong dal (split yellow gram) , washed and drained
2 tbsp grated jaggery (gur)
1/4 tsp cardamom (elaichi) powder
1/4 cup grated coconut

For Serving
ghee

Method
Heat a small non-stick pan, add the yellow moong dal and dry roast on a medium flame for 5 to 7 minutes, while stirring continuously.Allow the mixture to cool completely. Once cooled, add the jaggery, cardamom powder, coconut and mix very well with your hands. Keep aside.Grease the idli moulds using a little oil, put 1 tbsp of the idli batter on it, put 1 tsp of the moong dal jaggery stuffing in the centre and finally cover the stuffing with ½ tbsp of the idli batter.Steam in a steamer for 10 to 12 minutes or till the idlis are cooked.Allow the idlis to cool slightly and demould them.Serve immediately topped with ghee.

  • I love making SALADS' ! For me Salad eating or making is an experience in itself; Sometimes just assortment of the ingredients lying in my pantry or on some  days I plan with what Element I should majorly focus on.As for today's Salad my focus Element is Potato' .The potato was boiled with skin on as I didn't wanted to loose out on the fibre benefits of the Potato skin.Few potato slices were grilled and paired with Moong Sprouts and apple slices.This Salad has many Fresh Greens which I just had to pluck from my windowsill garden -Ice Lettuce+Lemon balm leaves+mint leaves+beautiful beetroot chards.And were paired with the fermented red cabbage+carrots coleslaw with mustard spread on the bed of ice lettuce.The Salad platter is heaven with multitude of flavour and texture with drizzle of Honey+lemon+red wine Vinaigrette,sesame seeds and of course Sourdough Slice.Wholesome isn't it 🙏🏻😌 gratitude always

We appreciate its taste, color and texture. 😋💙🍴 The best part was that it was not too sweet, also it was juicy and soft. But we were really disappointed by the portion size and their slow service. They served everything so slow that it became cold by the time it reached our table... Also sides like extra sambar, chutneys and buttermilk was served after we were done with our lunch. 😡😤 First they took a lot of time to get our orders on table and then took more time to get cutlery... Really disappointed by the service @upsouth_india @upsouthindia .
