ALMOST WAGON WHEEL SLICE
BASE:
- @macr0mike Choc Chip cookie mix (300g)
- almond milk (100ml) @sogoodau
BERRY LAYER:
- frozen raspberries (100g)
- frozen blueberries (100g)
- chia seeds (20g)
CREAMY LAYER:
- cannellini beans or chickpeas (240g)
- @macr0mike salted vanilla protein powder (60g)
- coconut yoghurt @purecocobella (200g)
- coconut flour (50g)
CHOC LAYER:
- dairy free chocolate (80g) @loving_earth
- almond milk (30ml) @sogoodau

DIRECTIONS
Preheat oven to 200 degrees Celsius, prepare a square cake tin by lining with baking paper and set aside.  Prepare the cookie base by combining the dry mix and the almond milk in a medium bowl, then spread mixture out on the base of the prepared tin. Bake in the oven for 20mins. To prepare the berry filling mash the berries in a small bowl and microwave for 30secs until warm (or longer if you need to defrost the berries). Add the chia seeds to the berries, combine together well and set aside. Add the beans and coconut yoghurt to a food processor and blend until smooth. Add the coconut flour and protein powder and blend again until a thick paste has formed. Once the cookie base has cooled slightly, spread out the berry layer on top. Carefully spread out the filling on top of the berry layer, to do this you may need to divide the mixture into scoops and place them evenly on top before spreading so you don’t mix the berry through the filling mixture. Add the chocolate and almond milk to a small bowl or cup and melt in the microwave for 30-40 secs. Mix together until smooth and then carefully spread out on top of the filling. Place in the freezer to set for 1-2hrs before slicing into 16 squares. Store in the fridge for up to 5 days.

  • After eating some good tasting but carb-filled food out of town yesterday I had to eat something cleaner today! So I stopped by @pokepokebowls (Hancock) on my way back home. I had the Aloha bowl with some kale, cucumbers, furikake, & ginger. It was the PERFECT meal.

The Aloha tasted so good & authentic. And I love that they use Aloha Shoyu. That stuff stayed in our house when I lived in Hawai'i (many years ago). I wish they were in SA but at least Poke-Poke has more than one location I can visit in Austin. ❤

Ingredients:
⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
Walnuts: 4.5oz
Dates: 7oz
Rolled oats: 5.5oz
Coconut oil: 1.7oz
Lukewarm water: 1.7oz
Cocoa powder: 1.2oz
⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
1. Put walnuts in a blender and grind them.
2. Cut the dates into small pieces, mix with the oatmeal - put the mixture in the blender and grind until everything is blended together. 
3. Put walnuts, oatmeal,- and dates ground into a bowl - add cocoa and mix it up with a spoon.
4. Now add coconut oil & water, knead with your hands to a mass and form small balls ➡️ rest for one hour in the fridge and enjoy your healthy snack.

1. Die Walnüsse mit einem Standmixer zu einer mehligen Konsistenz zerkleinern.
2. Die Datteln schneiden und in einer separaten Schüssel mit den Haferflocken vermengen. Diese Masse erneut in den Mixer geben und zu einer mehligen Konsistenz verarbeiten.
3. Anschließend alles zusammen vermengen, und den Kakao mit einem Löffel unterheben.
4. Kokosöl & Wasser hinzugeben, mit den Händen zu einer Masse verkneten und kleine Kugeln daraus formen ➡️ ab in den Kühlschrank und fertig sind deine gesunden Protein-Bällchen.

1/2 cup whole spelt flour (from @thesourcemitcham )
1/2 cup almond meal 
1 serve vanilla @happywayau 
2 tsp baking powder + a pinch of salt
2 tbsp raw or coconut sugar
1 tsp cinnamon + vanilla
Nut milk of choice added until you reach your desired batter consistency 💁🏼‍♀️🥞 I also added in some additional stevia for a bit more sweetness! 
Cook them up in a pan over medium heat and serve with your favourite toppings ✨
