Initially I had very little desire to go—I had hoped to be headed to Russia instead. However, the people and the food won me over quickly, and I have some really fond memories of my time there.

I've always been a little ashamed when people ask me where the best Mexican food is in Portland. I feel like this is something I should know and yet absolutely don't. There weren't very many food trucks or Mexican restaurants when I first came back, so I remember feeling like I needed to try and make the food myself vs. being able to find something in the area.

So, it's with great joy I'm embarking on TACO QUEST to find my favorite tacos in Portland. Although there's a dozen different dishes I'm excited to find for Mexican food, tacos are the staple that should be first—the basic lego building block that everything else is built off of.

  • ⁣Gyoza with cabbage & edamame fillings - who wants to share with me?⁣😋
Happy Monday, friends🤗, hope you had a great weekend. Gyoza - usually smaller than dumpling, it's pan fried & serve with dipping sauce. I did a comparison on both gyoza and dumpling wrapper side by side at the store. Gyoza wrapper is a little thinner & a tad smaller.😀

Recipe⁣
Ingredients:⁣
~ 1 package gyoza wrapper (used Myojo brand)⁣
~ 3-4 cups chopped cabbage⁣
~ Finely diced: 1 small carrot, 1 cup boiled edamame beans, 1/2 cup dry roasted walnut⁣
~ 1/4 cup chopped scallions, 2 tablespoons tapioca/corn starch, 1 tablespoon grated ginger⁣
~ sesame oil, soy sauce, oil and salt to taste, hot water⁣
⁣✔️In a heated non-stick pan with 2 teaspoons oil, sauté cabbage for 2 minutes until fully cook through & season with 2 teaspoons of soy sauce. Drain all excess liquid, if any. Place sautéd cabbage, carrot, edamame, walnut, ginger in a big bowl. Mix well & season with 1/2 teaspoons salt, & few drizzle of sesame oil. Taste test, then fold in the starch.⁣
As usual, set up the wrapping station. ➡️👀🎥 for pleating or IGTV for slower pace💗
✔️In a heated non-stick pan (12 inch) with 1 teaspoon oil, place gyoza, flat side down & pan fry for 1 minute. Check to see the bottom is browned, then, slowly pour in 3/4 cup of hot water. Cover lid, turn heat to low-med & simmer until all water is absorbed, a brownish lacey layer will form as well. Turn off heat & let gyoza sit in the pan for few seconds before serving.⁣
⁣🍃Sauce: Mix together 3 tablespoons of dumpling sauce, 2 tablespoons hot water until well combined. ⁣
• Few tips to wrap dumplings to prevent brea, just from my experience: ✨Let wrapper comes to room temperature
✨When pleating on one, cover the rest with slightly damp paper towel⁣
✨Filling ingredients should not be too saucy
✨Remove as much air pockets as possible when wrapping (most important)⁣ & seal all openings properly by pressing wrapper firmly

It's been too long since I threw out a variation of my banana bread - I had some brown bananas to use up so I had to smash it! And I went for oreo theme because I found those packet of tiny oreos! And man, it was worth it. Smashed some last night and damn, I forgot how good this is... Eating it right out of the fridge is like eating a dense brownie. Stick it in the oven for like 5-6 minutes and it's like eating cake. And grill it with some butter on top and it's like toast! Can't beat it!👌🏼

As always in this, I used @phdnutritionuk smart protein ("adam15" saves you 15% on every PhD!) and for the chocolate throughout and on top I used 50g @dannyschocolatesuk milk chocolate because Danny's chocolate is magical!🤤🍫

Honestly, this might be the best variation yet! Save this post and get to making this. I've had a load of people tag me in them trying this so if you try this one - get at me! Oh, and have a good Monday!🙂👍🏼

Curry Twice Baked Potatoes (Oil Free Option)🥔🥔🥔I was originally going to make this dish using sweet potatoes, but my kids just loathe them 😒so here they are in all their russet glory. I’ll save the sweet potato version for my packed lunches I guess. Anyway, a whole lot of goodness inside these spuds, with a chickpea & spinach curry folded into a potato mash, topped with peanuts, fresh cilantro, sour cream, & a squeeze of lime.What you need: 3 medium russet potatoes or 3 medium sweet potatoes, 2 tsp mustard seeds, 2 tsp cumin seeds, 1/2 medium onion finely chopped, 1 clove garlic minced, 1/2 in peeled & grated ginger, 1/2 tsp turmeric powder, 1 tsp chili powder, 1 can chickpeas drained & rinsed, 2 handfuls of baby spinach, 1/4- 1/3 cup coconut milk, sea salt/ pepper to taste, juice of 1/2 lime 
1️⃣ Bake russet potatoes 375 F 45-55min or sweet potatoes 400 F 60min ( pierce with fork on top and bottom prior to baking) Let cool
2️⃣ In a large non stick pan add 1 tbl olive oil or 1 tbl water (for oil free version: keep adding 1 tbl at a time throughout sautéing, to cook/ brown ingredients, stirring often to prevent burning) medium heat, add mustard & cumin seeds. Cook until seeds begin to brown and pop about 1 min. Stir in onion, add a pinch of salt, cook 3-4 min until translucent 
3️⃣ Add ginger, turmeric, chili powder, stir, cook 1 min
4️⃣Add chickpeas & spinach, cook until spinach wilts
5️⃣ After potatoes have cooled, cut potatoes in half, scoop out insides of potatoes (leaving skin & 1/4 in filling intact) place in large mixing bowl, mash with back of fork/potato masher, add coconut milk, season with salt/pepper, then fold in chickpea mixture,mix well 
6️⃣ Add mixture back to potatoes halves, mold halves back together to form whole potatoes, place on parchment lined baking sheet, bake 10-15 min at 375 F 
7️⃣ Enjoy! I topped my potatoes with peanuts, a squeeze of lime, cilantro, & sour cream. Happy Thursday friends 💚💚💚

    3️⃣ Add ginger, turmeric, chili powder, stir, cook 1 min
    4️⃣Add chickpeas & spinach, cook until spinach wilts
    5️⃣ After potatoes have cooled, cut potatoes in half, scoop out insides of potatoes (leaving skin & 1/4 in filling intact) place in large mixing bowl, mash with back of fork/potato masher, add coconut milk, season with salt/pepper, then fold in chickpea mixture,mix well
    6️⃣ Add mixture back to potatoes halves, mold halves back together to form whole potatoes, place on parchment lined baking sheet, bake 10-15 min at 375 F
    7️⃣ Enjoy! I topped my potatoes with peanuts, a squeeze of lime, cilantro, & sour cream. Happy Thursday friends 💚💚💚
