  • Plate fit for a king, happy fathers day to all the fathers, shout out to all the good fathers who don't get the light shined on them, most times mothers get all the love, but let's not forget fathers need to be appreciated as well, unfortunately I never got the opportunity to reap the benefits or witness how it feels to have a father due to the fact my father died when I was 4. So if you do have a father let him know he's appreciated, because I had to teach myself all the things a father would usually teach his son.

  • Pimientos del piquillo rellenos de merluza y gambas con bisqué de mariscos. Más sencillo imposible.

Ésta es otra de esas recetas que se hace casi corriendo, en 5 minutos la tenemos lista. Bueno la salsa quizá tarde un poquito más.

Ingredientes para 4 personas

1/2 merluza pequeña fresca sin espinas ni piel
12 gambas peladas
1/2 puerro
1 cebolla mediana
1 chorro de nata líquida para cocinar
1 lata de pimientos del piquillo de buena calidad

Para la salsa de mariscos:
300 gramos de cabezas variadas de mariscos (gambas, cigalas, gambones, carabineros o lo que tengamos o podamos conseguir)
1 puerro
1 cebolla
1 zanahoria
2 vasos de caldo de pescado
1 cucharadita de maizena
1 buen chorro de brandy

Elaboración

Sofreímos la cebolla y el puerro, sin que tome excesivo color. Añadimos las gambas y la merluza desmenuzada. Añadimos un chorrito de nata líquida y dejamos reducir hasta que espese la mezcla. Rectificamos de sal y reservamos.

Para la salsa sofreímos el puerro, la cebolla y la zanahoria. Incorporamos las cabezas de marisco, rehogamos bien y flambeamos con el brandy. Añadimos el caldo de pescado y dejamos cocer unos 25 minutos. Rectificamos de sal y trituramos con un robot. Colamos la salsa con ayuda de un chino y con el brazo robot vamos triturando para aprovechar hasta la última gota. La pasamos a un cazo, añadimos un chorro de nata y reducimos. Si no obtenemos la textura deseada podemos espesar la salsa con una cuharadita de maizena disuelta en agua fría, la añadimos y dejamos reducir un poco.

Rellenamos los pimientos con la mezcla de la merluza y las gambas y salseamos. Receta muy sencilla y exquisita.

  • Bacalao al pil pil.

Ingredientes

1 lomo de bacalao desalado a punto de sal (pregunta en tu supermercado de confianza cuál es el mejor para preparar esta elaboración porque hay muchas calidades)
2 dientes de ajo
1 guindilla
1/2 vaso de aceite de oliva virgen extra (si nos resulta muy fuerte el aceite virgen extra, lo podemos rebajar con un chorrito de aceite de baja acidez)

Elaboración

Para preparar el pil pil incorporamos el aceite, los ajos y la guindilla en la sartén. Ponemos el bacalao con la piel para arriba, sin tocar el aceite. El plato consiste en emulsionar el aceite con la gelatina del bacalao para lo que el aceite tendrá que estar a una temperatura de unos 60 º c. 
Lo dejamos unos 5 minutos a fuego suave. Cuando veamos que está cocinado, lo dejamos reposar. Lo sacamos con cuidado y con la ayuda de un colador vamos ligando la salsa. He subido un vídeo para que veáis cómo se liga. Para ayudar a que ligue podemos echarle unas gotitas de agua fría. Y voilá, la magia se hizo con este plato.
