  • Pasta w/ Cherry Tomatoes, Kale & Artichokes in a white wine caper sauce

INGREDIENTS:
1/2 lb. pasta of your choice
1 T oil
1/4 red onion finely chopped
2-3 cloves minced garlic
1 pint cherry or grape tomatoes sliced
3/4 cup white wine or veggie broth
1 T dried basil
3/4 tsp kosher salt
1/2 tsp pepper
1/2 medium bunch kale removed from stem and chopped in 1 inch pieces and gently massaged for a few seconds with touch of oil
1 cup marinated artichokes, drained
3 T capers (optional)
Juice of 1/2 lemon
Garnish: Red chili flakes (optional)

So two days ago when I was hanging out with some friends, I got caught up in a pair of avo-toast patterned socks at a gift shop (I should’ve bought that 😩), and my friend commented “you are so from California” 🤷🏻‍♀️

EXACTLY!! 😂 You have no idea how much I miss a good avo toast from @eatzumapoke at the @davis.farmers.market 😢 So I HAVE to make myself even though the avocados here are twice the price... but it’s definitely worth it 🤤

To make:
1 slice whole wheat toast + 1 TJ’s teeny tiny 🥑 + hemp seeds + TJ’s EBTB seasoning + 1 sunny side up egg

Что я могу сказать - баклажаны действительно спасли меня от грусти в этот дождливый летний день😄⛈️☔🌦️👍✨

Особого рецепта нет: лук, чеснок и баклажаны (в такой последовательности) по отдельности обжариваются на оливковом масле.

‼️Баклажаны предварительно нужно нарезать, посыпать солью на полчаса, затем промыть и высушить‼️
⠀
Жарить маленькими партиями, переворачивая каждый кусочек отдельно. Тогда будут обжаренные баклажаны, а не жареная каша из баклажанов😂
Я добавляла ещё зерна горчицы, они так миленько хрустят😉

🍓breakfast:. I made a strawberry/rasp compote with the pink latte mix, a blue/blackberry mix for the blue majik mix and a tropical papaya + mango blend for the turmeric mix! and of course layered it all with my fave unsweetened coconut yogurt . !✨⠀

🥗lunch: Rotating two of my all time faves this week! With everything coming in season, I want to eat all the veggies! I made my dragon salad  with some epic dressing to go along with it (find the recipe on my feed!) and some baked tofu for extra protein! Along with some colourful fiesta salads to use up the rest of the amazing Blissed Out Black Bean Burgers I made last prep!  Y-U-M!⠀

🥙dinner:  The first is a garlicky-gluten free tahini-asparagus pasta dish using asparagus! 👇🏻⠀

I also made some rainbow veggies rolls that are easy to stored and bring on the go! Park days are back + all I want to do it be outside! ☀️ Finally my freezable for next week is jackfruit BBQ pulled pork. I'm going to freeze + reheat to make tacos, sandwiches or even use as a salad topper!⠀

🍫snack attack:  Created some sunrise orange-raspberry date muffins! No added sweetener and they are gluten and dairy free too!  My new chocolate-chip matcha tahini energy balls using white dragon matcha are the most satisfying treat for the warmer months! Finally, I needed a savoury snack! I've wanted to make @ohsheglows endurance crackers for so long and it was finally time! Packed with all the best seeds + topped with some hummus and avocado... another amazing meal prep recipe! ⠀

10 minute meal: Shrimp, Avo, & Greens tossed in a lemony-garlicky tahini sauce .

This is super easy to whip together. Today I used some Josie’s arugula, fresh watercress, sliced cucumber (they are in there somewhere), diced avocado, fresh jalapeño peppers, added some shrimp and tossed it in the tahini sauce. A nice light + refreshing summer salad that keeps the mind + muscles happy.

Here is how I made it:
.
1.Start with some wild deveined shrimp and toss with some olive oil, sea salt, fresh pepper, garlic powder, a little paprika. Experiment & have fun with what you like though. Mix everything well & let sit.
.
2.Take a large pan and add 1 or 2 tablespoons olive oil + 1 tbsp minced garlic. After a few seconds, add the shrimp and cook for about 1-1.5 minutes on each side. Don’t overcook as it turns rubbery. Set aside.
.
3.In a large bowl, add your greens + veggies. I used a big base of arugula and added fresh watercress, 🥑, sliced jalapeños (deseed these if you dont like it super spicy), some cucumbers. You can add anything you have on hand.
.
4.Next is the dressing. I used 2 tablespoons high quality velvety tahini, 1 tablespoon olive oil, juice from 1/2 large lemon, sea salt, 1 tsp freshly minced garlic, and about 1 tablespoon of finely chipped fresh cilantro. Mix everything together, then taste.  You’ll have to add more tahini/oil/lemon/salt/herbs based on your preference if you’d like. Everyone is a bit different.

5.Add the shrimp, add your desired amount of dressing, and mix everything well. I then topped with some sesame seeds.  You can also use hemp seeds or anything else you fancy.

Don’t just take my word for it though. In this feb 2019 randomized controlled trial, ultra-processed diets caused excess calorie intake which in turn led to weight gain unlike the unprocessed food diet.

Another feb 2019 study published in the journal of the American medical association linked an increase in consumption of ultraprocessed foods w with a higher risk of all-cause mortality. (About a 14% high risk of all-cause mortality for every 10% increase in processed foods).
.⠀
A 2014 study by Public Health Nutrition found that people who cook at home 6-7 nights a week compared to those who eat out often, save on average 150 calories per day - that’s 1,050 calories a week! Not to mention the hydrogenated oils, fillers & added sodium you avoid by cooking your own food.

♥️ It’s not about being perfect!
If most of your diet comes from whole foods and trusted brands that have minimally processed ingredients, there will still be room for fun foods when the occasion strikes or if you want a tasty treat.

👉👉👉 If you’re not sure how to get started, here are some of my tips to start switching to a more unprocessed diet:
(1) stop drinking your calories (aside from low sugar kombuchas & high quality protein shakes)
(2) make a habit of grocery shopping every week
(3) start a meal prep routine
(4) cook more dinners at home
(5) try remaking some of you favorite desserts from scratch in the kitchen with healthier ingredients
(6) read food labels and make sure you can understand what’s even in the minimally processed foods you choose.

    (2) make a habit of grocery shopping every week
    (3) start a meal prep routine
    (4) cook more dinners at home
    (5) try remaking some of you favorite desserts from scratch in the kitchen with healthier ingredients
    (6) read food labels and make sure you can understand what’s even in the minimally processed foods you choose.

Tea, like matcha tea, can also really help you calm you down! 🍵⠀

  • Happy Saturday! Kicked off the weekend today with this loaded PB BANANA CHOCOLATE CHIP TOAST 🍌🥜🍫🍞that well, was everything!🙌🏼 #dairyfree #refinedsugarfree .
used really crunchy Bavarian rye bread, all-natural PB, bananas & dairy-free miniature chocolate chips. I was craving this the moment I woke up and went straight for the goods. Part of this health journey I am on includes a constant reminder to be kinder to myself. Feel good favorites. No remorse or regrets.
